Kiwi Summer Pimm's Cup
Ava's dad suggested having cocktails on the sun deck --their house has several decks-- before dinner the other day and I said I knew just the thing, if you allow me, sir; which he generously did! I took the Pimm's No. 1 from my suitcase, a few of the fruit I'd bought at the shops, and mixed this Kiwi Summer Pimm's Cup, which I'm happy to say, went down a treat! Happy Saturday!
Ingredients (serves 4):
4 dozens small ice cubes
2 medium ripe peaches, rinsed
2 ripe feijoas, rinsed
1 small lime
1/2 cup Pimm's Cup No. 1
500 millilitres/2 cups chilled, good quality ginger ale(like Bundaberg's)
Place ice cubes into a large pitcher.
Halve, pit and slice peaches. Add peach slices to the pitcher.
Cut feijoas and lime into thin slices, and add them to the pitcher as well.
Drizzle generously with Pimm's Cup No. 1, give a good stir and allow to infuse, 5 minutes.
Top with chilled ginger ale; give a gentle stir, and serve Kiwi Summer Pimm's Cup immediately!

Pimm's Cups
Ava and I are loving our new flat in Tāmaki Makaurau, so even if we're only here for a few days, we are taking the time to lounge in the sun on the balcony, with beautifully refreshing Pimm's Cups --a classic of Summer cocktails for almost two centuries!-- at arm's length! Cheers!
Ingredients (serves 2):
3 medium Garden Strawberries
1/3 cucumber
1 orange
about 2 or 3 dozens small ice cubes
1/2 large lemon
120 millilitres/4 fluid ounces Pimm's No. 1
chilled Ginger Ale (like Bundaberg's), to top
2 sprigs fresh mint
Rinse the Strawberries, cucumber and orange under cold water. Then, pat them dry.
Halve two of the Strawberries, and cut six thin slices cucumber and two slices orange. Set aside.
Fill two Whisky or Collins glasses to three-quarters with ice cubes.
Thoroughly squeeze lemon juice, and divide between both glasses. Pour Pimm's No. 1 over the ice and lemon juice in each glass, and add an orange slice in each. Top with chilled ginger ale.
Garnish with reserved cucumber slices, Strawberries and mint sprigs.
Enjoy Pimm's Cups immediately, preferably in good company...
