Pimm's Cups

Ava and I are loving our new flat in Tāmaki Makaurau, so even if we're only here for a few days, we are taking the time to lounge in the sun on the balcony, with beautifully refreshing Pimm's Cups --a classic of Summer cocktails for almost two centuries!-- at arm's length! Cheers!
Ingredients (serves 2):
3 medium Garden Strawberries 
1/3 cucumber
1 orange
about 2 or 3 dozens small ice cubes
1/2 large lemon
120 millilitres/4 fluid ounces Pimm's No. 1
chilled Ginger Ale (like Bundaberg's), to top
2 sprigs fresh mint
Rinse the Strawberries, cucumber and orange under cold water. Then, pat them dry.
Halve two of the Strawberries, and cut six thin slices cucumber and two slices orange. Set aside.
Fill two Whisky or Collins glasses to three-quarters with ice cubes.
Thoroughly squeeze lemon juice, and divide between both glasses. Pour Pimm's No. 1 over the ice and lemon juice in each glass, and add an orange slice in each. Top with chilled ginger ale.
Garnish with reserved cucumber slices, Strawberries and mint sprigs.
Enjoy Pimm's Cups immediately, preferably in good company...

1.5 oz. gin
0.25 oz. simple syrup
0.25oz. orange Liqueur
0.25 oz. Campari
0.75 oz. lemon juice
Add all ingredients to a cocktail shaker with ice and shake hard for eight to 10 seconds. Strain off the ice into a coupe or cocktail glass, and garnish with an orange peel.

1 oz Sylvius Dutch Dry Gin
1 oz 1804 Grand Imperial Orange Liqueur
1/2 oz fresh squeezed orange juice
1/2 oz fresh squeezed lemon juice
Rim the glass with sugar
Shake over ice and strain

Hibiscus Gin Sour
1 egg white (optional)
3 oz. gin
¾ oz. fresh squeezed lemon juice
½ oz. hibiscus simple syrup, recipe below
1 tsp. raspberry liqueur 
Hibiscus Simple Syrup:
1 cup water
1 cup sugar
¾ cup dried hibiscus flowers
The egg white gives the cocktail a frothy layer, but if you want to leave it out you can.
Add all of the ingredients in a large cocktail shaker with ice.
Shake very hard for 30 seconds.
Strain into a small glass over a large ice cube.
Simple Syrup:
In a small sauce pan, simmer sugar and water until sugar has dissolved. Add in the hibiscus and simmer for another 15 minutes. Remove from heat and let it sit for another 20 minutes if you can!

Damson Gin

This year, the fruit harvest is producing as much tipple as Jams and Jellies! After this delicious Spiced Pear Liqueur, and a batch of Cider currently fementing, the glut of plums I picked on our tree allowed me to make this gorgeous Damson Gin. A delightful Autumnal night cap. Happy Wednesday!
Ingredients (makes about 500 millilitres/2 cups):
a dozen plump, ripe Damson plums
1/2 cup + 2 tablespoons caster sugar
500 millilitres/2 cups London Dry Gin
Thouroughly rinse Damson plums. Then, halve and pit them.
Place plum halves into a large sterelised jar. Sprinkle caster sugar over them. Top with London Dry Gin and close jar tightly. Shake the jar energetically.
Place the jar on a shelf in a draught-free place and not in direct sunshine, although not away from it either.
Shake the jar every day for a week, until the sugar is completely dissolved.
Then, keep it in a darker, cooler spot, and allow to infuse, a couple of months. 
After two months, the liqueur will have taken this gorgeous garnet hue.
Strain mixture through a fine mesh sieve fitted with coffee filters, and pour Damson Gin in a sterelised bottle, closing tightly.
You can return the plums to a a sterelised jar with sugar and Gin to make another bottle --although you will need to wait a bit longer at least three to four months for them to infuse as well.
Keep Damson Gin in you liqueur cabinet and serve after dinner, use it in desserts or offer as a gift to friends.

Dragon's Whisper !
Ingredients:
- 1 1/2 oz Gin
- 1 oz Midori Melon Liqueur
- 1/2 oz Fresh Lime Juice
- 2-3 slices of Jalapeño (depending on desired spiciness)
- 3 oz Sprite
- A pinch of Smoked Paprika
- Ice cubes
- Applewood chips (for smoking)
Garnish:
- Lime wheel -
Thin Jalapeño wheel
Glass: - Highball glass
Instructions:
1. Before mixing your cocktail, prepare your highball glass with smoke. Place a small pile of applewood chips on a heat-resistant surface. Using a kitchen torch, carefully light the chips until they smolder and produce smoke.
2. Invert the highball glass over the smoking chips to let it fill with smoke for about 30 seconds, then turn it right side up, trapping the smoke inside.
3. In a shaker, muddle the jalapeño slices with the fresh lime juice to release their spicy essence.
4. Add the gin and Midori to the shaker, along with a pinch of smoked paprika.
5. Fill the shaker with ice and shake vigorously until well-chilled.
6. Strain the mix into the prepared highball glass filled with fresh ice, allowing the smoke to swirl and mix with the drink.
7. Top with Sprite and gently stir to combine the flavors without dissipating the smoke too much.
8. Garnish with a lime wheel and a thin jalapeño wheel resting on the edge of the glass.
Serving:
Serve the Dragon's Whisper Spritz immediately, inviting the drinker to enjoy the aromatic smoke before it fades, much like the elusive presence of a mythical dragon.
