In 2018 one of the challenges I have taken up is to change the perception about food related myths : No. 1 is DIET . Whenever I have someone come to me for a diet to lose X many kgs, my answer is usually blank. Because I simply don't understand diet made for a particular kind of #weightloss I am against any #keto #paleo etcs of this world because it spoils your relationship with food, so does counting calories in every bite. Which app can we use to measure calories.... Let me say that on your face ?. N O N E ! Every person would a cook a dish with different calories so stop paralysis by analysis and love your food. . . If you eat mindfully enjoying the Nutrition from each and every bite you wouldn't need any diets.. . So, next time to visit a #nutritionist don't ask for a diet to lose kilos , ask for improvement in lifestyle and eating pattern the weight loss would be an automatic by-product of this kind act to your body. . "I don't like muffins" said no one ever! . So in these lovely winters, let's dig in some yummy vegetable and fruit muffins 😍😍 who said muffins can't be tasty!! . Ingredients: ➡1 cup – whole wheat flour ➡1 cup – oats flour ➡1 tsp. – baking soda ➡1/2 tsp. – salt ➡1/2 tsp. – cinnamon ➡1/2 cup – sugarfree ➡1 tsp.- oil ➡2 large – egg ➡1 tsp.– vanilla extract ➡1/2 cup – broccoli, florets ➡1 small – zucchini ➡1 1/2 medium – carrot ➡1/2 medium – apple ➡1 medium – banana ➡1 cup - pumpkin puree ➡1/4 cup – yogurt (made from skimmed milk) Directions: ▶Preheat oven to 350 degrees F. ▶In a medium size bowl, mix together flours, baking soda, salt and cinnamon. Set aside. ▶Soften butter.In a mixer or another bowl, mix the sugarfree, oil, eggs and vanilla. ▶Beat well.In a food processor, combine steamed broccoli, zucchini, apple, banana, pumpkin puree. ▶Pulse until thoroughly mixed. ▶Shred carrots.  If you don’t want the shreds in your muffin, combine your carrots with the rest of the fruits and veggies in the food processor. ▶Combine the fruit and veggie puree, carrots (unless you already added them with the puree), and yogurt, into the wet ingredient mixture (sugarfree /oil/eggs) and beat until mixed. ▶Finally, add the dry ingredients and mix just until combined and wet. ▶Spray muffin tin with cooking spray.Scoop the mixture into a prepared muffin pan.   ▶Fill each spot about 3/4 of the way full. ▶For mini muffins: Bake in a 350 oven for 15-20 minutes for mini-muffins.For regular size muffins: Bake in a 375 degree oven for about 20-25 minutes. ▶Bake until the tops are slightly brown and a toothpick comes out clean or they bounce back when you touch them with your finger. . ▶These freeze great! Put them in a freezer-safe bag and freeze for up to 3 months. Every one likes to indulge in something sweet now and then. 😍 . And since its winters too ⛄ who would day no to a yummy and a healthy nutty dish 😀 . Anjeer Burfi Ingredients: ▶Dates – 10 chopped ▶Figs – 30 ▶Chopped Nuts – 3 tbsp ▶Ghee -1 tsp ▶Poppy Seeds – 1 tbsp ▶Cardamom powder – 1/8 tsp . Method: ➡ Deseed dates.Chop them roughly.Soak figs in hot water for a while.In 1/2 tsp. ghee fry the chopped nuts and set aside. ➡Drain water and take soaked figs in a mixer and grind it to a paste, set aside. ➡Now add chopped dates and grind to a paste. ➡In a non stick pan add 1/2 tsp. ghee add the fig dates mixture and keep sauteing for 5mins, add a drop of ghee in between if needed .At one stage it will form a  mass and will come together without sticking. ➡At this stage add roasted nuts and give a quick mix, Switch off and set aside to cool. In another kadhai add poppy seeds and roast for 2-3mins till a nutty aroma comes.Switch off and set aside. ➡Make 2 logs from the mixture and roll over roasted poppy seeds to coat the outer layer. ➡Wrap it in a butter paper. Wrap it tightly and refrigerate it atleast for 2 hrs.Then slice and serve. . Do you ever wonder why ? One reason is off course we live in the age of abundance there is too much easily available tasty and cheap high carb high fat quick food. . But the most important reason is .... We seek happiness in Food 🙋🏻 raise your hands if you do ( people gain weight when sad right ) . Movies , people tv commercials all sell us the idea of happiness from food, if you breakup you need ice cream tub if you're happy you have cake,,,, have burgers thats where you buy happiness and worst date over a coffee ( which is 500 cals sometimes ) ...
