Mushroom cookies
Mushroom cookies are a type of cookie that is shaped like a mushroom. They are typically made with a shortbread cookie base and a chocolate ganache or frosting cap on top to resemble a mushroom.
To make mushroom cookies, you will need:
Ingredients:
1 cup unsalted butter, softened
1/2 cup granulated sugar
2 cups all-purpose flour
1/4 teaspoon salt
1 teaspoon vanilla extract
1/2 cup semisweet chocolate chips
1 tablespoon heavy cream
1/4 cup white chocolate chips
Red food coloring
Instructions:
Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.
In a mixing bowl, cream the softened butter and granulated sugar together until light and fluffy.
Add the flour, salt, and vanilla extract to the bowl and mix until a soft dough forms.
Roll the dough into small balls, about the size of a cherry tomato. Flatten the balls slightly and use a toothpick to make a small hole in the center of each cookie to create the mushroom stem.
Bake the cookies for 12-15 minutes or until the edges are golden brown. Allow the cookies to cool completely on a wire rack.
While the cookies are cooling, prepare the chocolate ganache by melting the semisweet chocolate chips and heavy cream in a small saucepan over low heat. Stir until the mixture is smooth.
Dip the tops of the cookies into the chocolate ganache and set them aside to cool and harden.
Melt the white chocolate chips in a small saucepan over low heat. Add a few drops of red food coloring to the melted white chocolate to create the mushroom caps.
Use a small spoon to add the red-tinted white chocolate to the tops of the cookies to create the mushroom caps.
Allow the cookies to cool and harden before serving.
