Following our SENSES Wake & Bake Brunch this past weekend, CAFE and The Nomad Cook presented our long-awaited SENSES Supper event – with Top Chef winner and contestants Chef Erica & Josh Karbelnik. We were so honoured to work with this amazingly talented culinary duo, and so were our guests. The nearly-sold out event was scheduled to start at 6pm, but guests began to arrive early in anticipation and were lining the lobby of the venue at least half an hour prior. The excitement and energy was palpable in the air, and we thanked guests for their patience as they began to enter the hall, eager for the events of the evening ahead.

Our dear friend @thelemonapron cooks up a quick masterpiece! I’m not sure about where you are, but it’s seriously hot here in the Berkshires! I’m kind of glad I’m not the one doing the cooking right now. 🤪 So to help out those of you who are doing the cooking, may I present my Harissa Bruschetta Pasta?! The ‘sauce’ is a kicky no-cook combo of finely diced tomatoes, onion, garlic, and parsley which is tossed in a Harissa olive oil blend (thanks to my trusty tube of @entube Harissa paste) and seasonings. It takes less time than the pasta water does! 😉 Once the pasta is done (use a pasta that can hold onto the ‘sauce’) put it in a baking dish and smother it with the sauce. Freshly grated cheese is sprinkled on top and it all goes into the broiler for a second or two. So really, not a lot of heat is required, and it’s a great veggie main. The best of summer tomatoes and basil in this breezy dish. And if it’s just too hot for the broiler, just toss it all together, make a bruschetta pasta salad, and close the kitchen! 🍃🍅 Jim inhaled this the first time I made it, so you know it passed the test! . Duck duck goose! Ok no goose (yet), but this duck breast with roasted veg and kale is definitely being added into the rotation! . . Duck is a high-fat variety of (red meat) poultry that offers a good amount of protein and is high in B vitamins, selenium, phosphorus, and iron. It is also high in omegas and glycine. . . While it is high in saturated fat and cholesterol, discarding the skin after cooking can help to minimize this, especially if you have been advised to keep your intake to a minimum. I also only ate half of this portion which was totally satisfying! . . The trick to cooking this lovely bird? Season with S&P and place skin side down in a cold cast iron skillet on medium heat. Flip when the skin is dark brown and crisp and cook for another 3-5 mins or until the internal temp reaches 135 degrees. . . It is very rich, so as always serve with a side salad with some fermented veg! I Make Wine Disappear. What’s Your Superpower?

As I approached the legal drinking age of 19 I started to enjoy wine more because of my parents. My mom drinks sauvignon blanc from New Zealand or Australia, preferably New Zealand though. My father loves a good cabernet sauvignon usually from California. ‘Sauv blanc’ and ‘Cab sauv’ were prominent words in my household.
Red wine was a little bit strong for my young pallet so I started my wine drinking journey as a white wine drinker. And like my mother, I ONLY drank Sauv blanc’s from New Zealand. I’m sure every waitress was slightly confused by my young age and my specific requests for Kim Crawford or Oyster Bay – but that was all I knew. Kim was our best friend…and we found out a few years ago she is actually a he. Anyways, my pallet has since widened over the last few years…

As promised, here is my day at Norman Hardie in Prince Edward County. I could have stayed the entire week drinking wine… and not only Sauv blanc. It was amazing! I picked up my two girlfriends, Michaela and Kristen, and we headed to Prince Edward County for the day. It rained the entire car ride, even though AccuWeather told us it was going to clear in Prince Edward County by the time we got there. They lied, it wasn’t clear, it was pouring rain. But that didn’t stop us, we headed up to the tasting bar to wait out the rain and wait for our table to enjoy the amazing pizza served at Norman Hardie.

My first bottle of Norman Hardie was at Branca, an Argentinian inspired restaurant in Toronto. This was the day I fell in love with their Pinot Noir and decided that I needed to visit their winery. I thought about this bottle of wine on a regular basis. Every time I would go to a restaurant I would scan the wine list for this bottle. I finally found it again at Rhubarb (read last blog post).
Norman Hardie was extremely busy when we arrived but we finally made it to the front of the tasting bar. I told Michaela and Kristen they had to try the Pinot Noir…I think they only agreed so that I would stop talking about it (I did not stop talking about it all day and still have not – they should hire me as their sales rep – FREE WINE FOR LIFE). The girls LOVED the wine…duh. I tried the Cabernet Franc Sans Soufre. It was delicious but not as good as the Pinot Noir. Then I decided to try some white other than sauv blanc (see widening my pallet). I tried the Chardonnay Sans Soufre and I have to say I thoroughly enjoyed it. I guess I am no longer a Sauv blanc gal.

After the wine started flowing I decided that a few bottles of my favourite Pinot Noir would not be enough. So the only smart thing to do was to buy a case. Norman Hardie Pinot Noir for all!
The girls and I took our glasses of wine outside and hid under the umbrella until the rain stopped. AND IT DID. The rain stopped and the skies cleared and it ended up being a beautiful sunny day. The host messaged us to let us know our table was ready and by this time we definitely needed some pizza to counteract the wine.

The pizzas are inspired by top chefs from Toronto restaurants: Pizzeria Libretto, Terroni, and Ortolan. We shared warm olives and three pizzas:

1)      Marinara – tomato, basil, garlic, oregano, and olive oil
2)      Salsiccia – sausage, for di latte, garlic, hot pepper, caramelized onions
3)      Artigiano – tomato, local mozzarella di bufala, local chorizo sausage, fennel seed
I highly recommend trying the Salsiccia – the caramelized onions were an amazing touch. OH and of course, pairing you meal with the Pinot Noir.

I think I need to revisit Prince Edward County for a weekend and would love some recommendations and insights of where else to go and where to stay! We stopped by the Drake Devonshire and it was absolutely stunning with great atmosphere. I also heard ‘Glamping’ is the new thing to do…I could be into ‘Glamping’. Leave me some comments; I have a mini vacay to plan for the end of August/ September!

At Pujukan, we tried the meat without marinating with a sweet and savory sauce as you can see in the photo. . . . The meats were served to us raw and for us to cook on the tabletop grill before we dig in👌😋! . . . They gave us lots of dippings and spices along with Banchan (Side dishes)!!! . . . You can eat those Banchan (side dishes) by themselves, mix them into rice, or use them as fillings in lettuce wraps—there’s no wrong way to do it!
