Used half the shallots
Found the white cooking wine a bit overwhelming, so will half it next time
Would cook this in a large wide pan so that the water cooks off faster, ended up using a colander to drain out the water to accelerate the cooking of the risotto
Substituted chicken with ground turkey from Wegman's and it was ok
Meatballs had to go in the oven for longer then was specified because they were large. I used a 1/3 measuring cup to shape them evenly, and maybe next time I would do a 1/4 if I had more time.

Used Delallo gluten free pasta - orzo no. 65, would try to find one that is not yellow.
Used Wegman's white cooking wine.

Spicy Paccheri with Sausage & Greens This is basically @theoriginaldish’s recipe, but with a few substitutions since I didn’t have all of the ingredients! It’s a super easy lunch or dinner recipe and absolutely delicious. Plus it’s the perfect amount of spice so if you aren’t a person who likes spicy food this would be totally fine for you. olive oil, as needed ½ lb raw spicy Italian sausage ¾ lb paccheri (I used rigatoni) 1 large sprig rosemary 2 red finger peppers (or fresno), thinly sliced (I used jalapeño and it worked well!) 1 cup white wine ½ cup pasta water (from cooking) 1 bunch green chard, stemmed & roughly chopped (I used spinach) 2 tbsp butter ¾ cup grated pecorino cheese ½ cup roasted hazelnuts, roughly chopped Heat a large pot over medium heat. Add enough olive oil to coat the bottom. When the oil is hot, add the spicy Italian sausage. Use a wooden spoon to break apart the sausage into little pieces as it begins to brown. Continue to cook the sausage until golden brown and fully cooked. Meanwhile, add the pasta to a large pot of salted, boiling water and cook 3 minutes less than the package instructions. When the sausage is cooked through, transfer it to a plate. In the same pot, add the rosemary to the hot oil. Fry the rosemary for a minute or two until crispy. Remove and reserve. Add the peppers to the oil and sauté for a minute or two. Deglaze the pan with the white wine. Retrieve ½ cup of pasta water from the pasta pot and add it in with the wine. Let the liquid come to a boil, reduce the heat, and let simmer for 3-4 minutes until slightly thickened. When the pasta is done cooking, drain it and add it to the pot. Allow it to cook for a minute in the liquid, stirring often. Stir in the green chard and let wilt. Add the sausage back into the pot, along with the butter. Let the sausage heat back through as the butter melts. Gradually add in the grated pecorino cheese, stirring slowly until it melts into the sauce. Garnish with the roasted hazelnuts and enjoy!!
