CHEF ILONA: Summery Salads!

Breathe in the warm sea salt-scented air, imagine the robust fragrances of fruity olive oil, sun drenched herbs, citrus and fruits. These simple ingredients, made perfect simply from the Mediterranean climate, makes for welcome accompaniments to your backyard meals.
As we slowly begin to come together once again this summer, it’ll be important to spend as much time with the people we adore as possible. The salads of the Mediterranean are simple to prepare and are versatile to pair well with a myriad of eats coming off of the grill.
Feta and watermelon work well as the salinity of the feta cuts into the juicy sweetness of the watermelon. This is one of my favourite summer salads. During the hottest weeks of the summer, I almost exclusively eat watermelon. Sometimes, I like to squeeze a little bit of fresh lime juice and a sprinkling of sea salt over a bowl of cubed watermelon; it is one of the easiest salads you can make with such a rewarding flavour payoff. 
For the uninitiated into the cuisine of the Mediterranean, lentils are a popular staple that is utilized in various preparations. Lentils are a legume boasting high levels of iron, polyphenols, magnesium and folic acid.

While the nutritional boons of lentils are inviting, lentils are also very affordable, especially when you purchase them dried. This lentil salad is best made the day before you plan to eat; let those flavours intertwine for ultimate gastronomic pleasure. I especially love pairing this salad with grilled seafood like salmon, halibut or any shellfish, but shrimp would be my top pick.
Feta & Watermelon Salad Created by: Chef Ilona Daniel
Serves 4
1 cup crumbled feta cheese
3 tbsp extra virgin olive oil
3 tbsp chopped fresh basil
1/2 cup black oil cured olives, pitted and chopped
4 cups of watermelon sliced thinly
1 bunch of mint, chiffonade
1 Boston bib lettuce, roughly torn
2 green onions, sliced thinly
Juice of a lime
Salt & pepper to taste
Additional 1/4 cup olive oil
Marinate the feta with the basil oil and chopped basil for an hour.
Meanwhile, prepare the other ingredients. Toss the lettuce, watermelon, mint, green onions, lime juice, olive oil, and olives gently, and scatter across a platter. Place cheese atop of salad and serve immediately

Greek Lentil Salad Created by: Chef Ilona Daniel
400g brown lentils, picked and rinsed (14 oz.)
1 bay leaf
2-3 peppers (red, orange, yellow), roasted and sliced
250g feta cheese, crumbled (9 oz.)
10 cherry tomatoes, cut in half or 1 juicy tomato, cut in cubes
1 red onion, chopped
a handful fresh parsley (or dill), chopped
a handful fresh mint, chopped
10 kalamata olives, pitted and sliced
salt and freshly ground pepper
For the dressing
6 tbsps extra virgin olive oil
6 tbsps red wine vinegar
1 clove of garlic, minced
Pinch of sweet paprika
To prepare this Greek-style lentil salad recipe with feta cheese, start by cooking the lentils. Place the lentils in a colander and rinse them thoroughly under running water. Drain and place them in a large pot. Cover the lentils with a 5-6 centimetres of cold water, season with salt, add the bay leaf and bring to the boil. Reduce the heat to a gentle simmer and cook for about 20-25 minutes. The lentils should be cooked, but still retain a firm texture.
In the meantime, prepare the vegetables. You could use the peppers raw, cut into little cubes or roasted.
To prepare the dressing, add all the ingredients in a bowl and whisk to combine.
When the lentils are cooked, drain them in a colander and place under cold running water to stop the cooking process. Once cooled, place lentils in a large serving bowl and toss with dressing. Add the chopped onion, cherry tomatoes, feta cheese, olives and roasted peppers (sliced) and blend. Wait to add the fresh herbs just before serving.

The pink tax has been a known issue and a reality for several decades now. But what is pink tax, you might ask. Pink tax refers to brands tending to charge different prices for the same products, depending on whether they are targeted to men or women, with the women’s ones always costing more for no real reason. Several studies found that on average products targeted at women are 7% more expensive than those for men. And the most infamous example of this is the Gillette vs the Venus razor. And you guessed it, the Venus is more expensive than the men’s Gillette despite being an essentially identical product, produced by the same company.
That is where Billie comes in. Noticing this unfair bias towards female consumers, the brand launched a razor for women that scraps the pink tax and its price stacks up against men’s razor’s on the market. But is the Billie razor any good and is it worth the investment? And who or what is this Billie anyway? The brand uses the Environmental Working Group (EWG) as a guide and only uses ingredients verified by the group or ones that receive a rating between 1 and 3/10. In a time, when most are moving away from makeup wipes as they are deemed inefficient and wasteful, which doesn’t align with the current move towards sustainability, it surprising for a brand to come out with new makeup wipes and such claims on top of that.

Billie: Editors Verdict
Billie is an innovative brand of razors that has found a gap in the market and decided to fill it and we command the founders for it. The fact that the brand is very conscious when it comes to affordability but doesn’t let that impact the quality of the product is again something we appreciate. However, the areas we feel the brand needs to work on is its customer service, the ways in which customers can get in touch with the team, as that is currently only via email, as well as the reliability of its shipping, being an online only brand that is something Billie should have mastered. But taking all of that (and more) into consideration, do we think that Billie is worth the investment? Overall, we believe that it is. Some products certainly more than others as we find that the razor is the one to go for and perhaps the wipes to give a miss.

Celebrate Friendship Day with Deep-Fried Oreos

It doesn't even matter if you do not have a deep-fryer. Use a saucepan and go ahead with your preparation. Just try to be extra careful while frying. Do not hurt yourself.

How to Deep-Fry Snacks at home?
#1 Pick your saucepan and pour 4 cups of vegetable oil or any other of your choice and keep it over medium heat to 350 degrees.
#2 Take a medium bowl, put 3 big spoons of Crumb's Oreos mix and water. Mix it well to make a smooth batter. Keep it aside for a couple of minutes.
#3 Now, it's turn to dip Oreos in the batter one-by-one. Use a tong or a fork for dipping and placing them straight to the saucepan.
#4 Check the temperature. Carefully place the dipped snacks into the hot oil. Make sure to fry both the sides evenly. Pull them out once turned golden brown straight to the paper towel to drain extra oil.

Things to Avoid While Making Deep-Fried Oreos
While preheating the oil, avoid the temperature below 300 degrees as it will make your snacks oily and greasy without any crisp.
The perfect temperature is between 350-375 degrees and temperature above 375 degrees can eventually burn the cookies.
Go minimal by picking Deep-Fried Oreos mix. For that, you’ll just need water and the mix to prepare the batter.
While preparing the batter using Oreos mix, make sure there are no lumps left and consistency should be thick enough to stay.

The soup challenge

Diets, how many kinds do you know? How many have you tried? If so, how many challenges have you faced?
When it comes to diets, many, many questions come to our minds, but the reality is that that is not an absolute truth about it.
When choosing a diet, it is essential to think about some factors. What is your objective? What changes will you have to make in your routine? Can you keep those new eating habits?
I decided to adhere a diet called Soup Diet or Cabbage soup diet.
I heard about this diet years ago, back home, and recently I saw it again at a website I enjoy visiting from time to time - https://divascancook.com/
I decided then to give it a try.
It sounds challenging, and it is indeed.
This diet is very restrictive, but it claims to help you detox your system, also helping you to put some extra pounds off.
The challenge relies on the fact that you won't consume any gluten, eggs and added sugar.
The idea is not to change your eating habits, but give one week to your body to go enter on a cleansing mode.
The calorie ingestion is low, and the ingredients are restricted. You should eat cabbage soup every day, and well, it can be difficult.
I decided to give it a try and, as a chef, use my creativity to make this "sad" diet a little less boring.
The diet pattern is:

As you can see, the diet plan is very straightforward. My goal was to follow it accordingly, changing some details to make the meals more pleasant and appealing.
To start this diet, the first step is to make the Cabbage soup, also called the wonder soup.

Wonder Soup
Ingredients
1/2 head of Cabbage chopped
1 cup celery diced
1 cup white or yellow onion diced
1 cup carrots diced
1 green bell pepper diced
2-3 cloves garlic minced
4 cups chicken broth
14 oz can basil oregano, garlic diced tomatoes
1 teaspoon oregano
1 teaspoon basil
1/2 teaspoon red pepper flakes
few shakes of black pepper
1/2 teaspoon salt optional
Instructions
Heat 2 tablespoons of olive oil in a large pot over medium heat.
Add celery, onions, bell peppers, and carrots.
Saute until slightly tender.
Stir in garlic and cook until fragrant.
Pour in chicken broth.
Stir in tomatoes and Cabbage.
Bring to a boil and then reduce heat to a simmer.
Cook until Cabbage is tender.
Stir in oregano, basil, red pepper flakes, black pepper and salt (if using)
Taste broth and adjust seasoning if needed.
Serve and enjoy!
For my soup, I made some small but relevant modifications.
Starting by the cabbage, the star of the dish.
I decided to roast it with curry powder, cumin and smoked paprika. The intention os to add complexity and depth of flavour to a soup that would be my lunch and dinner for the next week
It worked very well. The Cabbage came out of the oven, releasing a smoky and delicious aroma, that aggregated a great flavour to the soup.

I also added cremini and king oyster mushrooms in order to add texture and umami flavour.
Once you have your soup ready, i’s time to start.
 Below is the resume of my first three days:
Day 1
During this day, we are supposed to have only fruits (except bananas) and soup.
I didn't include any prohibited ingredients, just changed the way they were presented.
Breakfast
I started my day with warmed apples and pears, seasoned with cinnamon and nutmeg.  
The fruit's warm temperature, soft texture, and spicy fragrance made this meal much more pleasant and comforting.
I also had a cup of freshly brewed coffee.

Lunch
For lunch I had a big bowl of soup.

Snack
My snack was a big bowl of fruit salad and topped with sugar-free rustic red berries  coulis.
The fruits I chose were:
Cantaloupe, orange, fresh strawberries and blueberries.

The sugar-free coulis is very easy to make and can work very well with yogurt, cakes, ice cream.
Here is the recipe:
Sugar- free red berries coulis 
1 cup of frozen red berries ( cherries, strawberries, raspberries and blueberries)
3 tbsps powdered stevia/erythritol
1/2 tsp vanilla extract
1 pinch of salt
Method
- In a pot add the powdered stevia/ erithritol and melt it in medium heat
- Once they are melted, add the fruits, vanilla and salt
-Let them cook for about 20 minutes in low heat
- If you want it to be rustic, let them cool down and use it as you please
- If you want it more fluid and smoothe, blend it once it is coll and strain it.
- Keep it in the fridge for 5-7 days.
Dinner
For dinner I had another big bowl of soup (same as lunch) and a bowl of mangoes with mint.Very simple but delicious and fresh.

Day 2
Breakfast
Day two is supposed to start with a baked potato. I decided to make a potato patty instead. I didn't add any cheese or other ingredients because it would modify a lot, however, it made my breakfast a bit fancier.

For the potato patties here is the recipe:
 Ingredients:
1 boiled potato
Half onion
Half red bell pepper
Olive oil
Salt and pepper
Method:
Start by boiled the potato until it is very soft
Sweat the onions and red bell pepper with a little olive oil. salt and pepper.
Once the potato is soft, smash it with a fork until it becomes a puree.
Add the onions and red bell pepper and season it with salt and pepper.
Use your hand to shape the potato mixture into small patties. The size is up to you.
On a pan, drizzle some olive oil and brown the patties in both sides. About 5 minutes, 2.5 minutes each side.
Lunch
For lunch I had a big bowl of soup
Snack
 Carrot chips.
I just sliced them really thin, put a  bit of salt and baked for 30 min (200 F).

Dinner
Since it was the vegetable day, I had a big bowl of soup and I made a coulifower “rice”, together with baked heart of palms, arparagus and a tomato, mango and mint salad.

The couliflower “rice is a very good low-carb option for a light and guity free meal.
Here is the recipe:
Couliflowe “rice”
1 couliflower
1tbsp olive oil
2 cloves garlic
1/2 onion
1/2 yellow bell pepper
Smoked paprika
Lemon juice
1 1/2 cup chicken stock
Parsley
Salt and pepper to taste
Method:
Clean the couliflower and process it in a food processor or blender. The idea is to minced it so it looks like rice grains.
Cut the onions and yellow bell pepper bruinoise
Chop the parsley
In a pot drizzle the olive oil
Sweat the onion and add the garlic
Add the yellow bell pepper and cook it for about 2 min
Add the cauliflower and blend all the ingredients well and season them with salt and papper
Add the paprika and lemon juice, mix well
Pour the chicken stock and let it be all absorbed by the “rice”.
When there’s no more liquid, your couliflower rice is ready.
Garnish it with parsley and enjoy.
Day 3
Breakfast
A bowl of apples with a whey protein sauce and cinnamom.
I cheated a bit with this whey protein sauce, but I was missing some kind of protein.
It is a good way to complement your fruit salad or cut fruit of your preference. You just need blend together 1 scoop of whey vanilla whey protein, and 1/2 scoop of water. Mix them together and use it as a sauce.

For dinner I had a big bowl of soup and salad. My salad had mangoes and raspberries, since it was the veggie/ fruit day

Day 4, 5, 6 and 7 I followed the guide without any alterations. I wanted to see how challenging it would be.
My Experience
This was a tough week.
Although I love soup, fruits, vegetables and chicken, this diet is to restrict for me to say that I liked it.
The first day was really good, actually, because I felt lighter, and I really didn’t feel hungry or anything.
The second day was harder but manageable.
From the 3 day on, I felt much hungrier than usual and craving for something more substantial.
What I realized is that those strict diets shouldn’t last long.
If you want to lose some weight fast for a special occasion or feel the need to do a detox, go for it. But now, more than ever, I realize the importance of balance.
Having the same soup for lunch and dinner for 7 days is not ideal.
Balance is everything, and it needs to be the guide for any diet we want to try.
Advice
My advice for the ones who want to try the soup diet is: increment your fruits/ veggies.
Try different cooking methods, pay attention to the presentation and vary them as much as you can.
Since you are eating mostly fruits and veggies for 7 days, try to incorporate different flavours, textures and temperatures. It is really important if you want to keep on track.
Also, don’t follow this diet for more than 7 days.
After one week, try no to eat super heavy meals. Reincorporate grains, dairy and proteins gradually.
You will lose some weight, so keep eating healthy if you want to keep the results.
Don’t forget to drink lots of water.
I don’t recommend this diet to people who do lots of exercises or the ones who have a stressful routine; the reduced amount of calories ingested can be insufficient for this kind of people, leading them to feel super tired, so their performance can be affected.
Would I continue with my choice?
Since this diet is not supposed to be followed as a lifestyle, I definitely wouldn’t keep following it.
However, whenever I feel I need a little detox, I may recur to it again.
More than ever, I see the importance of good food in our lives. Eating well, with pleasure, it’s groundbreaking.
I’m sure I am in the right industry because providing people with good food is really special.

Lobster Bisque:

For my Soup blog assignment, I chose Lobster Bisque. I chose this soup because I am a huge fan first of bisque’s in general and more importantly of Lobster! The velvetty, creamy soup is delicious and packed with flavour. This was my first time making a Lobster Bisque so I based my recipe off of one I found online from SeriousEats.Com:(http://www.seriouseats.com/recipes/2017/05/lobster-bisque-recipe.html) I slightly altered the recipe as it calls for 4 live lobsters. Unfortunately, I am not a millionaire, so I chose to use 4 lobster tails that I found at my local grocery store which came out to about a quarter of the weight the recipe called for, so I used a 1/4 of all other ingredients in the recipe.
RECIPE
Ingredients: 
-4 Small Lobster Tails (550g -28g unsalted butter - 20ml EVOO - 85g diced Carrot - 115g diced white onion - 50g diced celery - 1 clove garlic - 1/2 tablespoon tomato paste - Splash of brandy - 1/4 cup of white wine - 1.25 cups chicken stock - 1 sprig of parsley - 1 sprig of tarragon - 1 bay leaf - Splash of heavy cream - Salt and pepper - Cayenne to taste - Minced parsley leaves for garnish

Method:
1. Place a steamer insert in the bottom of a large stock pot and add about an inch of water. Bring to a boil over high heat and add lobster tails. Cover and cook until lobster shells are bright red and meat is fork tender and remove tails from pot to cool. Reserve cooking liquid.

2. Once the lobster tails have cooled down, remove meat and set aside for later. There will be a lot of juice coming out of these guys so it is important that you do this over a bowl to save that delicious nectar.

3. In a large dutch oven or stockpot heat the butter and olive oil over medium high heat until everything has fully melted. Add the cooked lobster tail (shells, not meat) continuously stirring and scraping up brown bits forming at the bottom of the pot.
4. Add carrot, onion, celery and garlic. Cook, stirring frequently until vegetables begin to soften and a fond (brown bits) has formed at the bottom of the pot (this should take about 5 minutes). Stir in tomato paste and cook for 1 minute.

5. Add a splash of brandy being careful if you are working with a gas stove as not to cause a flame. Cook off until the raw alcohol smell has gone away and then add your white wine bringing the pot to a simmer, stirring continuously until again there is no more raw alcohol smell. 6. Add in reserved lobster steaming water and chicken stock, make sure that the liquid just barely covers the shells, if not, don’t sweat it, just add some water to barely cover. Add in parsley sprig, tarragon sprig and bay leaf. 7. Bring to a boil, then reduce heat and gently simmer, uncovered for about an hour. 8. Once the stock has reduced, strain with a fine mesh sieve pressing well on shells to extract all of the liquid and set solids aside. Add stock to a blender with about 1 tablespoon or 2 of the cooked aromatic vegetables reserved from stock solids. Add in a splash of cream and blend until soup is completely smooth. 9. Pass the blended soup through a fine mesh strainer into a clean pot to eliminate any shell remnants. 10. Reheat the soup on low heat and season with salt, pepper and a dash of cayenne. 11. In a skillet, heat up a small amount of butter over medium high heat and add reserved lobster meat, tossing and stirring until heated through. 12. Ladle broth into warmed bowls and add lobster meat. Garnish with parsley and its ready to serve!
Side note: I made some toasted baguette crisps for dipping that added a great crunchy element to the soup. (cut thin slices of baguette and broil until toasted, or just use a toaster!)
Sensory Evaluation:
Look, Smell, Taste and Feel!
The sensory evaluation helps identify all of the flavours that are present throughout the soup:
Without any of the garnishes the lobster bisque can look, well….boring! Once the beautiful chunks of lobster are added with some toasted crispy thin baguette slices and a sprinkle of parsley to add colour. The whole bowl is transformed from a boring bowl of creamy red liquid to a textural adventure that you just can’t wait to dive in to!
The smell of the bisque is quite rich, with notes of saltiness and fragrance from the tarragon and bay leaf. The sweetness of the lobster meat is carried with hints of acidity from the tomato paste and the overall smell is quite delicious albeit very decadent.
The general feel of the bisque is like velvet. Smooth and not to thick but can still coat the back of a spoon. The best possible bite texturally that you can get in the soup is with a bit of the toasted crips, some lobster meat, and all covered in the bisque it self.
Finally, the most important aspect of the dish is the taste! The bisque is rich but also a bit salty, the savoury flavours are carried through the sweet lobster meat and brought even further with the warmth of the cayenne. The texture of all components of this soup combine in your mouth and make you feel like you are sitting by the Atlantic ocean in a warm cozy sweater.
The soup covers 3 of the 5 taste profiles: It is sweet, salty, and umami (savoury).
The sweetness comes from the lobster meat itself, the saltiness also coming from the beautiful brininess of the lobster and the savoury flavours are developed from the cream, fat and aromatic vegetables and spices used to make the soup.
Peer Evaluation:
Food is always better with friends, even if they are brutally honest. For my peer evaluation I asked my friend Matt to give it a try and let me know what he thought:
“It was really delicious, who knew you could take frozen lobster tails and make them so good”
Discussion
Challenges
With this assignment I was first off challenged with costs, At first I wanted to make the recipe exactly like I had seen it online. But when I went to the grocery store and saw the cost of lobster I almost had a heart attack. Luckily there were some frozen lobster tails on special that worked out quite well. After speaking to a few other people I learned that you can actually buy just the shells of lobsters or crabs from certain fish mongers that cuts cost down incredibly. I think next time I make a lobster stock I will start there to save my wallet.
Success or……
SUCCESS! I would say without hesitation that this was definitely a success. I thought it was delicious and from the uncensored opinion of my friends, they did too. Definitely something I will experiment with down the road.
Reflection
This was overall a very fun cooking experience, I got to put into practice some of the techniques that we have been learning in school, I learned that it really helps to have a heavy bottomed stock pot that holds heat evenly throughout the pot when trying to brown vegetables or meat evenly. And for the future, now I know how to make a bisque! It really wasn’t as difficult as I had anticipated and now that the daunting first time is over I can make it happily again with some slight alterations.

Testing a new recipe for a savoury sourdough olive oil brioche-ish bake matching bbq or similar strong flavour full dishes. That’s why I decided to infuse olive with with rosemary. Cinnamon Leaf Oil: Perks From a Spice Oil
Beyond its alluring fragrance and spicy-sweet flavor, cinnamon provides many benefits for your health, such as its insulin-like effects, which can be useful for diabetics.1 But did you know that you can also get many of cinnamon's health benefits by using cinnamon leaf oil? Here are facts worth knowing about this oil.
What Is Cinnamon Leaf Oil?
Cinnamon leaf oil comes from Cinnamomum verum (also called Laurus cinnamomum and formerly known as C. zeylanicum2) from the Laurel (Lauraceae) plant family. This small and bushy evergreen tree is native to Sri Lanka and Southern India,3 but now grows in many countries such as Brazil, Egypt, Vietnam and Indonesia.4
The cinnamon tree can be distinguished by its small, white flowers, dark green leaves and purple oval berries.5 Its bark is about 10 millimeters thick and is very aromatic. On young shoots, the bark is pale brown and smooth, but on mature branches and stems, it becomes a darker brown or brownish-gray color, and with a rough texture.6
Cinnamon is one of the oldest spices known to man. It was valued in ancient Egypt not only as a medicine and beverage flavoring, but also as an embalming agent and is also mentioned in the Bible. Cinnamon was so precious that it was considered more valuable than gold throughout some of its history.7
You've probably heard of cinnamon bark oil, but don't be confused — it's an entirely different product. Cinnamon bark oil is extracted from the outer bark of the tree,8 resulting in a potent essential oil that’s used for flavoring in foods, beverages and other pharmaceutical preparations. Cinnamon bark oil is extremely refined and therefore very expensive for everyday use, which is why many people settle for cinnamon leaf oil, as it's lighter, cheaper and ideal for regular use.9
Cinnamon leaf oil has a musky and spicy scent, and a light-yellow tinge that distinguishes it from the red-brown color of cinnamon bark oil.10
Uses of Cinnamon Leaf Oil
Cinnamon leaf oil can be used as an additive in soaps and a flavoring to seasonings.11 When used in aromatherapy — diffused, applied topically or added to your bath water — it can have health-promoting effects. Just remember that it can be a skin irritant, so it’s best to dilute with a mild essential oil or mix in your favorite cream, lotion or shampoo. Here are some ways to use cinnamon leaf oil for your health and around your home:
• Use it to clean your fruits and vegetables — Cinnamon leaf oil is known for its antibacterial and antioxidant properties. In a 2012 study published in Flavour and Fragrance Journal, applying an edible pectin film with cinnamon leaf oil not only reduced bacteria growth on fresh-cut peaches, but also increased their antioxidant status.12
A 2013 study also found that using cinnamon leaf oil as a vegetable wash may help eliminate salmonella from leafy greens, such as baby and mature spinach, and iceberg and romaine lettuces.13
• Use cinnamon leaf oil as an insect repellent — According to the "Green Pesticides Handbook," cinnamon leaf oil has good antitermitic (termite-repelling) properties, thanks mainly to its eugenol, cinnamaldehyde and a-terpineol content. It can help ward off rice weevils (S. oryzae), making it efficient as a stored paddy rice protectant. The book also notes that cinnamon essential oil may inhibit yellow fever-carrying Aedes aegypti mosquitoes.14
• Gargle as a mouthwash or use to ease toothaches — Cinnamon leaf oil may help keep your breath fresh and may serve as a first-aid treatment for toothaches.15 Add a drop or two to a glass of purified water, and gargle with it.
• Add it to your shampoo to kill head lice — Cinnamon leaf oil can help keep your hair healthy and, in children, may help kill stubborn head lice. A 1996 study found that this essential oil is efficient in eliminating Pediculus humanus, along with other oils like aniseed, nutmeg and peppermint.16
Composition of Cinnamon Leaf Oil
The oil extracted from cinnamon leaves contain phenols and beneficial components like eugenol, eugenol acetate, cinnamic aldehyde, linalool, and benzyl benzoate.17 It also has low levels of cinnamaldehyde, an excellent fragrance and flavoring agent,18 and the active component that can also help repel grain storage insects.19
Benefits of Cinnamon Leaf Oil

This oil has a warm and antispasmodic effect on your body that helps ease muscular aches, sprains, rheumatism and arthritis. It's also a tonic that assists in reducing drowsiness and gives you an energy boost if you're physically and mentally exhausted.20
How to Make Cinnamon Leaf Oil
Cinnamon leaf oil, which is more delicate than cinnamon bark oil, is produced via steam or water distillation. The leathery green leaves are pruned from the trees and then left to dry for several days. Afterward, they go through a special water-steam distillation machine that extracts the oil.
Cinnamon leaf oil can also be distilled via traditional methods, where a huge wooden vessel is fitted with a copper head on top that holds as much as 200 kilograms (441 pounds) of dried cinnamon leaves. The vessel is then placed in a wood-fired boiler that produces the steam for distillation.21
How Does Cinnamon Leaf Oil Work?
The phenols in cinnamon leaves give cinnamon leaf oil its rejuvenating and health-promoting quality. Cinnamon leaf oil contains 70 to 96 percent phenols,22 mainly eugenol, which is responsible for its many beneficial properties. However, cinnamon leaf oil may irritate your skin, so make sure it’s diluted before using it topically.23
Is Cinnamon Leaf Oil Safe?
When applying cinnamon leaf oil topically, I advise blending it with safe carrier oils, such as coconut oil, olive oil or almond oil. It also blends well with other spice oils, citrus oils and herbal oils. Try using it with bergamot, thyme, eucalyptus and sweet orange oils.24
Check and make sure that you don't have any allergic reactions to cinnamon leaf oil before using it. You can do this by performing a skin patch test: Apply a small amount of diluted cinnamon leaf oil on your skin and see if any allergic reactions occur.
I also recommend pregnant women and nursing mothers to avoid using cinnamon leaf oil, as it has emmenagogue effects, meaning it may induce menstruation, which is dangerous for the unborn child.25 Avoid administering the oil on very young children, too.
Side Effects of Cinnamon Leaf Oil
Use cinnamon oil in moderation and properly diluted, as high dosages may lead to convulsions in some individuals.26 If this symptom occurs, stop using the oil and consult a health care practitioner immediately.
