Today’s exploration - @hanchic in #koreatown which bills itself as a “not so Korean restaurant”. Much of the ingredients and dishes are Korean(ish) but with no fear of mash-ups with Italian, French, or Lebanese elements. Bulgogi risotto? Doenjang hummus? Why not? Being a warm day, I opted for the temple bibimbap, where different vegetables were cooked each in a different technique - soy-braised lotus root, sautéed namool (greens), barely softened baby romesco, kimchi (pickled cabbage) over umami rice, with an over-easy egg, and a sweet hot sauce for a beautiful presentation before you mix it all up. (The separately cooked veggies is an elevated touch, reminding me of Chef Tony Esnault’s légumes de saison.) At another table, the galbi jjim looked fantastic, while the woman next to me really enjoyed her pork loin with doenjang hummus. The Hanchic folks must have appreciated my interest, cause they sent me out a taste of the hummus with a little squash crudité. The umami of the fermented soy beans processed to be a bit more creamy like hummus - it’s brilliant. For dessert I enjoyed the ube mattang - a riff on Korean candied yams but using ube, the wonderfully purple Filipino sweet potato, and cheffed up with ube foam, tuile, lemon zest, and pine nuts. Being LA, this amazing food is found in a humble strip mall, and being the pandemic, I dined in the parking lot, but they’d set up a few more planters and had some nice tunes playing, and they made me feel very welcome.
