Coconut aminos- Where have I been?
My prep routine has been changed forever!
So, each week, I marinate pounds and pounds of meat in a variety of different flavors. My number one go to is the Grill Mates line. I use their Wine, Garlic & Herb, Bourbon Brown Sugar, Mojito Lime, Baja Citrus, and Mesquite marinades a few times a month. It’s helpful to have the meat marinated beforehand so that I can pull the meat and the put it right on the heat. 
Inflation
Currently, the marinade packets are $0.99 at my closest grocer- they were $2+ a few months back. The store I shop at the most doesn’t sell these packets for under $3. The stores I frequent for pickups don’t carry these items at all. One day while checking out it hit me, I should begin making my own marinades. The packets aren’t necessarily fresh, I have no control over the ingredients, the cost of EACH packet adds additional costs to EACH meal but didn’t know where to start.
Coconut Aminos to the rescue!
Typically, MOST things require soy as an ingredient, and I cannot have soy. So, I needed to research for a replacement ingredient and was able to find a product that is used as a soy substitute called Coconut Aminos. For some reason the name sounds familiar, but I’d thought I came across it in a hair conditioning recipe- or maybe I’m just thinking about silk aminos LOL. So away with the packets and onto these coconut aminos! 
My marinade faves
I usually like a wine marinade, being from the South I love a smoky marinade, and herby/zesty flavors as well. After researching what I needed for marinades: Acids- I usually use Balsamic, white, and apple cider vinegars. Oil which is basically the fat- I always use Olive oil, and the herbs or spices I’d settled on. For the mesquite I used my dry rub recipe and added it to water and oil since I didn’t need acid for that flavor. Some individuals do add an acid to their BBQ marinades- I didn’t for this particular batch.
The results!
I made the 4 following marinades:
1. An everyday marinade- to be used as my quick go to as I have ALL of these ingredients 100% of the time.
2. Zesty herb marinade- to be used on meats to top salads.
3. Citrus marinade- to be used on meat for “bowl” night.
4. Teriyaki marinade- to be used in stir-fry since I hadn’t been able to have it in so long in an attempt to avoid soy. 
I discovered I needed a larger capacity food processor. I had to do quite a bit of chopping and working my ingredients in multiple batches because my mini food processor (Wal-Mart black 2013 Friday special) was too small to hold all of the ingredients at the same time. Check out this video for the ingredients and any bloopers I had while mixing the marinades.  The teriyaki was my favorite! It browned nicely and was slightly sweet. The second pheasant is still stored away.

Despite traditional huli-huli chicken being made with brown sugar, you’ll get the same results with a replacement, like allulose. The addition of soy sauce, sugar-free ketchup, and apple cider vinegar makes it incredibly addictive, and there’s even a slight kick from the red pepper flakes.
While you can certainly serve the chicken as is or even alongside a simple side salad, there’s something so perfect about dishing it up on a bed of cauliflower rice. Apart from being low-carb and high in fiber, cauliflower rice has a delicate flavor that can easily absorb all the sauces from the chicken. Don’t forget to garnish with some spring onion for additional color.
Yields 4 servings of Keto Hawaiian Grilled Huli Huli Chicken
The Preparation
Huli Huli Chicken:
24 ounce boneless, skinless chicken thighs
1/4 cup brown sugar replacement
1/4 cup soy sauce, or coconut aminos
1/4 cup sugar-free ketchup
2 tablespoon apple cider vinegar
1 tablespoon avocado oil
2 teaspoon freshly ginger, grated
2 teaspoon garlic, minced
1/4 teaspoon red pepper flakes
Cauliflower Rice:
400 gram cauliflower rice, frozen
3 1/2 tablespoon avocado oil
1 teaspoon sesame oil
2 tablespoon soy sauce, or coconut aminos
3 stalks green onion, sliced thin
The Execution
1. Gather and prep all ingredients for the Huli Huli Chicken.
2. Mix together the brown sugar replacement, soy sauce, sugar-free ketchup, vinegar, oil, ginger, garlic, and red pepper flakes.
3. Add chicken into the marinade and cover with plastic wrap. This can be marinated for a minimum of 2 hours but ideally overnight.
4. To prepare the cauliflower rice, add both oils to a pan over medium-high heat. Once hot, add in the spring onion stalks (reserving some of the green parts for garnish) and cook until fragrant, about 1 minute.
5. Add in the cauliflower and toss to coat in the oil. Continue to cook for a few minutes until the cauliflower is tender. Add soy sauce and mix into the rice thoroughly. Continue cooking the rice, stirring frequently, until most moisture is out of the rice. Set aside.
6. Prepare the grill to medium heat (350-400F). Once ready, add chicken onto the grill and cook for 8-12 minutes or until cooked through. Baste chicken liberally as it cooks with the leftover marinade.
7. Re-heat the cauliflower rice if needed and serve with the Huli Huli chicken. Enjoy!

  Howdy folks - guest poster here. Allow me to introduce myself. I'm Daniel Scurlock Jr, and grew up out on Scurlock Farms. I recently moved back to the farm with my wife, Sherry, after spending over 30 years in the Dallas/Plano area.
Funny how when you're growing up you want to move away, and after you've moved away you want to get back home. Good to be back!
Oklahoma Joe's Highland Smoker
One of the first things we did when we moved back was to pick up a wood smoker so we could smoke up chicken, pork, brisket and the like. We've had the smoker for a few months now, and it typically gets used at LEAST once a week. We picked up an Oklahoma Joe's Highland smoker from Lowe's for just under $300. It won't break the bank, and it does a fantastic job of cooking low and slow.
Today we smoked up a couple of chickens, and they turned out delicious!
Getting coals ready for the smoke
For these chickens we used a marinade (marinade recipe at bottom of post) that infused a flavor of citrus, garlic and ginger with a slight bit of heat.
We recently discovered the joys of spatchcocked chicken. This works wonderfully for smoking/grilling/baking chickens. Try it! The cooks are quicker, and the meat soaks up the flavor from marinades and rubs much more evenly.
First thing is to get your smoker up to temperature. Our favorite wood for chicken is pecan
We use a full chimney of lump mesquite charcoal to begin with, and add two logs and allow those two logs to burn for a few minutes before closing the box and heating up the chamber.
Spatchcocked chicken, marinaded overnight and ready to smoke!
A great tool to use when smoking meat is a dual wireless meat thermometer. This will allow you to monitor both the temperature of your cooker at grate level and the internal temperature of your meat. We use a ThermoPro TP20 unit and it's done a fantastic job for us.
You want to keep the meat moist while cooking. We use small foil pans located nearest the firebox and fill them with water. Keep an eye on them throughout the cook. When they get low put more water in. Once you've got your smoker up to 225 it's time to load it up!
I cook chickens at a temperature between 225 and 250 until the internal temperature in the middle of a breast reaches 160. The cook today took just under 5 hours for two 6 pound birds.
Let the smoking begin!
When the temperature drops below 225 add another log. Keep the firebox open for a couple of minutes until the log is burning well. You want to keep the fire burning, not smoldering. If you see a bunch of white billowing smoke coming out of your smokestack you want to open up the air intake on your firebox to allow the fire to burn clean. White billowing smoke is bad  - the meat will take on an acrid flavor and the meat will take on a black, charred look.
"If you're looking, it ain't cooking"
You'll have a temptation to open up the smoker and take a peek at the delicious meat you're cooking up. Don't do it! Every time you open up the lid you allow heat to escape and you'll be adding time to your cook, along with not keeping a consistent temperature inside the smoker.
After the first hour, and every half hour after that I'll spritz the chicken with apple cider vinegar using a spray bottle, and if cooking two birds will swap out their locations so both birds are cooking evenly. There is a bit of a temperature difference inside the smoker based on the distance from the firebox and I've found this helps the birds to both be done at the same time.
1 Hour into smoke
I added a baffle plate to this smoker to help with the temperature difference between the firebox side of the smoker and the opposite side. Prior to the firebox there was nearly a 75 degree difference between the mid part of the grill and the side opposite the firebox. With the baffle installed it's much better, but still have a 25 degree or so range between mid part of the smoker and the side furthest from the firebox.
At this point sit back, relax and enjoy a tasty beverage or two while you wait for the internal temperature of the breast to reach 160. Keep an eye out on the fire and keep the temperature at the grate between 225 and 250. Before you know it you'll be done and ready to pull the birds out of the smoker.
Finished product - and they were delicious
Let it rest, let it rest, let it rest
You'll be tempted to cut into the chicken as soon as you bring it inside. Don't do it! The chicken is still cooking, and will rise another 5 degrees or so. If you cut into it as soon as you pull it you'll see lots of juices, and there goes your tender, moist chicken. You want those juices to flow back into the meat, making for a tender, juicy feast.
Use foil and loosely tent the birds for a half hour. Now it's time to cut into your chicken and enjoy the fruits of your labor.

In the centuries that have followed, barbecue has become a staple in American cooking, and now, styles within our own country are as diverse as the regions that further developed them. Between the Carolinas alone, you’ll need two hands to count the different barbecue varieties.
To help, we’ve broken down the different Southern regions that have defined barbecue in the United States, and what makes them each distinct. Whether you cook on a pit or use a smoker, baste with a sauce or dry rub with spices, we can all agree that barbecue, especially Southern barbecue, is delicious—no matter what way you slice or smother it.
North Carolina

If you’re not from this area of the U.S., it’s probably confusing enough that both North and South Carolina have their own distinct barbecue styles. To make matters even more complex, North Carolina has two different approaches of its own: Eastern style and Lexington style (aka Piedmont style).
The sauces: Eastern-style North Carolina barbecue is often considered to be one of the original approaches to barbecue. It involves basting the meat in a vinegar-based sauce enhanced with a little sugar and red pepper. This thin sauce is also served on the side of your barbecue meal for dipping purposes.
But Western North Carolinians love their Lexington or Piedmont style barbecue sauce, which adds a bit of tomato or ketchup into the mix.

“At one time, you’d know what type of barbecue you’d be served just by knowing what part of the state you were in,” explained Gwen Fowler on South Carolina’s tourism website. “But these days, the lines have blurred.”

Smoked Pork Chops Ingredients: 4-8 pork chops 1 bottle Italian Dressing Cajun Seasoning (ingredients below) wood chips(what ever flavor you like, I like cherry, hickory, or mesquite) Put the pork chops in a container like a gallon zip lock bag and put in the italian dressing. Move them around to make sure they get a good coating and let them marinate for an hour or more in the refrigerator. (I like to let them sit overnight) Heat your smoker up to around 225-240 degrees. Remove from the frig and shake off excess marinade and pat dry. Next sprinkle the cajun seasoning of both sides and let sit for about 15 minutes to come up to temp a bit. Once the smoker is up to temp, add your chops and your wood chips. Cook your chops for an 1 to 2 hours depending on thickness. (1 1/2 thick cut took about 2 hours to reach 145 degrees.) Pork chops are safely done when cooked to medium, a temperature of 145 degrees Fahrenheit. At this temperature, the pork will be slightly pink and very moist. Once you pull the pork chops out let them sit for 5-10 minutes before serving. What do I know about cooking, recipes and organic ingredients?  Not a lot but I’m learning fast!  You see, up until last year I was much better known as an e-commerce industry specialist within the consumer electronics, automotive and sporting goods world.
Most recently I was working for Tesla and it was during this time that I met Jerry Tenenberg, cofounder of High Quality Organics.  Jerry has been developing the world of organic spices and herbs since the 1970s. Through Raju Boligala (HQO cofounder & CEO) I learned HQO was readying to launch HQO Express.  The vision to empower boutique food makers and artisan chef/restaurateurs to use globally grown organic spices made into safe and certified ingredients in the United States resonated with me.  Indeed, this has been a fascinating introductory journey and being surrounded by people who really care about our farmer families, know them personally and genuinely believe in HQO’s mission has nourished my soul.  I hope HQO Express conveys this meaning to you and makes your life and business better, as well.
In my digital travels to become a “spice guy”, I was reminded of a trip my wife and I took to Jamaica in the early 90’s, specifically eating at a roadside smokehouse in Montego Bay called The Pork Pit.  We loaded up on their Jerk chicken.  Two decades plus and I still remember how good it was!
So….I asked Jerry, “do you have a Jerk blend?”  He said, of course…but like all chefs…the recipe is secret.  Sure enough, a few days later, a stealthy blend of Jerk spice arrived in the mail.  My wife and I took a big sniff and instantly were knocked out by the pungent sweet and spicy aroma.  Well with great weather in hand for the weekend, I prepared my smoker with a fresh load of mesquite charcoal and got it to a consistent 250 degrees F and smoked/cooked it for over four hours.To which we made a marinade to cover about four pounds of chicken:
A 1inch piece of freshly peeled Ginger 3 Cloves of peeled Garlic A cup of rough chopped Scallions 3 Tablespoons of extra virgin Olive Oil 3 Tablespoons of Water 1/3 of a cup of Soy Sauce 1/8 of a cup of pickled Jalapenos peppers The juice of 1 whole Key Lime
3 Tablespoons of Jerk Spice. See below for a simple Jerk seasoning using HQOX spices:
2.5 Tbsp organic sugar
2 teaspoon sea salt
2 teaspoon organic pepper ground
1 teaspoon organic all spice ground
1 teaspoon organic cinnamon ground
1 teaspoon organic cumin seed ground
1.5 teaspoon organic garlic granules
1.5 teaspoon organic ginger ground
1.5 organic onion minced
1 teaspoon organic oregano
1.5 teaspoon organic paprika ground
1 teaspoon organic thyme leaves
1.5 organic chili ground
.5 organic cayenne ground (+/- cayenne to head desired)
This spice mix makes 1/2 cup or enough meat for 8 lbs
Recipe per Lb of meat:
1/8 teaspoon per lb - mustard 1/2 teaspoon per lb - orange juice 1/2 teaspoon per lb - lemon juice 1 Tbsp. per lb - Spice mix 1 Tbsp. per lb - Oil
Mix all ingredients in a bowl and use as a rub on meat, or as marinade.

Throw all of the above into a blender/food processor and let it go crazy for a minute….

Grab two freezer bags, divided and place your raw chicken into the bags.  Pour in the greenish marinade and let the chicken soak overnight or whatever time permits.  (If you can’t at least afford a couple of hours, shouldn’t you really be ordering pizza?)

When you chicken is properly marinated, put it on your smoker or grill and cook to a safe temperature (165 degrees F).
