for writer's group last week, i made lemon and orange blondies to bring as snacks. i used this recipe.
i followed the recipe as intended for the lemon batch. the only mistake i made was using the wrong size pan, so they came out flatter than intended. the lemon icing was too much for me personally, but everyone who likes lemon who tried them assured me that they were fantastic.
for the orange blondies, i replaced lemon juice with orange juice and the lemon zest with orange zest. i also used plant butter instead of regular butter. this didn't affect the taste at all.
the plant butter does melt easier though, which resulted in a slightly thinner, wetter batter. it took nearly twice as long to cook through, and they came out more cake-like than the intended fudge-like. the icing was also more subtle. they ended up being my favorite, and were still well liked by everyone who tried them.
