Chipsi mayai - French fry omelette eaten with a bunch of tasty blended sauces, cabbage, tomatoes and onions. This is a really popular Tanzanian dish. I thought I wasn't going to like it much, but it's actually super tasty (the French fries stay nice and crispy inside the omelette, and to be fair they probably add a ton of MSG). USD 2.50

Urojo - a soup made of puréed raw mango and ginger, with potatoes, egg, bhajia (lentil fritters), salad, and coconut chutney. It's a really nice mix of flavors. USD 1.00

Koshary - it’s an Egyptian dish, but I'm obsessed with it, so I went to the Egyptian restaurant around the corner from my house when I saw they had it. Pasta, lentils, chickpeas and rice topped with fried onions, vinegar and various tomato-based sauces. USD 4.50 (but this was at a fancy place with a fancy view, and not local food)

Bhajia (lentil fritters) and viazi karai (fried potatoes stuffed with chili) with coconut chutney and tamarind sauce. These are from a famous street stall in Mombasa (two sisters), and they are phenomenally good. USD 0.25 for a small portion like this

Swahili breakfast of mahamri na mbaazi (triangle shaped donuts with beans in coconut sauce) plus fritters and chutneys. Hotel breakfast, but this would be pretty cheap on the street.

bought a wine from my grandma's region of italy as a treat for finishing nano today and it sounds corny as hell to say it but i poured myself a glass just now and it tastes like home. friendliest, most roundly drinkable dry red i've yet had. it would be talking it down to call it the sophisticated older sister to the classic red jug wine - paisano without the bite - but when i hesitate to use the word sophisticated, i don't mean it tastes cheap. i mean it is the quintessential table wine, enjoyed best with grandma's rich sauce and dense gnocchi, or her many-flavored meatballs, a slice of fluffy buttered bread in one hand and a passionate talking point in the other (although i've also just this second found it pairs surprisingly well with my perennial weeknight staple: rice noodles and yolky egg in chili crisp sauce)

. Marc and Layla got married in a fine Egyptian/Bedouin/Persian wedding ( I HC that Layla's maternal grandma is an Iranian immigrant btw and her mom is of Bedouin descent from Alexandria ) in Cairo and they ALL HAVE A BLAST
. Marc writes a fanfic called An American in Cairo, loosely based on how he and Layla meet and fell for each other and all, with changed names. He also credited Layla and her Egyptian friends and family for giving Marc and his US mercenary friends insight on Egyptian culture and all
. Layla and her Egyptian friends regularly tell Marc and his US mercenary friends about Egyptian folklore, myths and history 🤩🤩🤩🥺🥺🥺🥺🥺
. FYI Layla and her Egyptian friends are TOUCHED by the An American in Cairo fic, which became very popular online
. Marc is currently planning to write An American in Cairo II, loosely based on the events in Moon Knight series 🤩🤩🤩🥺🥺🥺
