Hi everyone,
In this post, I wanted to share a recipe of simple kimchi dish that is Kimchi rice with cheese and seaweed. It is very similar as kimchi fried rice, but in a different way to cook. Sis dropped by Feng Food (台湾味 “丰”) at Northpoint City to pack home lunches for us. As per the usual, mum went for the Guan Miao Mian with Specially Marinated Pork Chop (猪排关庙面) while I took the Shrimp & Kimchi Fried Rice (虾仁泡菜炒饭). The fried rice might look very spicy to you due to the orangey colour but trust me, it is not. Overall, it is only mildly spicy with a sweetish note coupled fresh crunchy prawns and an over easy egg.

Okay I need you all to do me a favor: heat two cups of chicken broth in a pot and melt in a tablespoon of butter. Then add a couple cloves of minced garlic, some finely chopped mint, black pepper, cumin, coriander, and just a pinch of cinnamon, allspice, and dill. Then stir in a cup of basmati rice, simmer for about 20 minutes until it juuuust starts to brown on the bottom, stir it up so it's nice and fluffy, then enjoy your new perfect rice base with whatever protein or vegetables or whatever you see fit

If you eat from your bed most of the time (like me!) a tray can be really helpful. It is nice for transporting items from the kitchen, and to catch any spills from getting on your bed.
You can find really cool vintage ones from thrift stores for relatively cheap. Or just grab whatever is available at your local shop.
