Netflix's recent Iron Chef is the first time I've really gotten that Food Wars experience from an irl food show. The sheer levels of expertise in the competitors and the hosts and the judges and number of cameras going means that we get a lot of commentary on techniques and cultural background and chef intent during the cooking process. We understand just why what's happening is impressive, delicious, and has a lot of background narrative, in most minutes of this show (i.e. when Dante is not going the most slow-paced OOT). The timing of when this show happened also lends it a sheer level of globalisation that may not have been as present in the past. We're at a time when high end cooking is willing to take techniques from every location in the world and no longer has hangups over class connotations to any dish. Everything is elevated in every direction. The commentary has an intent on providing cultural background in a way that added so much educating value. (There's a tangent here to consider about how food-centered television necessarily has to be less pretentious and arguably less culturally discriminatory than the actual food critique industry doing the initial hard filter on which chefs even get competitor consideration, as they do have to be accessible to the layman audience. If viewers don't understand or agree with who wins on TV, they won't watch, whereas if the masses disagree with a particular Michelin Star or Beard Award, those restaurants can still survive on revenue from a far smaller pool of status-driven customers than the required number of TV viewers to ensure a show's continuation.) In Food Wars, characters like Erina or Eishi where their dishes won simply on "they just used the ingredients better :)" seemed like a total hand-wave to make whatever plot happen. But in this show, we understand how those kinds of people do actually exist in real life. At the same time, all of the commentary mentioned above helps us understand just what is impressive about the highest end of cooking beyond "just optimize ingredient usage :)". Food Wars was a story about the next generation of culinary prodigies. For several food shows, I believed that the Food Wars characters could change our world. With Iron Chef, we can see just how far they still have to go. I mean zero disrespect to Morisaki Yuki, who nailed the intersection of accessible and iconic dishes, which is precisely why through several of the food shows I watched, the Food Wars characters reigned plausibly innovative and supreme.
