Robin: Make a wish! Just not for another troll.
Robin, after Alice blows out the candle with obvious heart eyes: So, what did you wish for?
Alice: You know that's not how it works, but I've got a good feeling about this one.
Robin has been pulling fast ones on Alice all day, stumping her with modern items, lingos, and idioms. But this special moment is significant, as it's the first birthday in years since Alice got separated from her papa where she isn't alone as Robin's stuck by her side. Alice knows entirely how birthday wishes work, (plus or minus hers actually being magical) the traditional superstition of how telling someone your wish will make it not come true.
Alice is on the same page as Robin for once and won't fall for any accidental secret giving. She KNOWS what Robin is up to and cleverly evades the playfully innocent and teasing question. Alice isn't going to quickly profess her love or want of Robin to be in her life/herself to be part of Robin's life. So cute and cheeky, makes me want to go just tell her already!

Robin could probably live in the woods, on a farm, and hunt, but for love of life won't start a fire without her handy dandy lighter from Storybrooke.

Okay so I finally saw “The Eighth Witch” last night.
When Robin goes to Alice after receiving her letter (and then they kiss and it’s beautiful), the twist wasn’t ‘omg they’re gay!’ The twist was who exactly Alice and Robin were in love with. And it was each other.
Alice being gay wasn’t a surprise. Besides her mentioning she had an ex-girlfriend in the episode “Beauty,” Alice repeatedly says “her” when referring to her partner. She says she doesn’t want to lose “her” to the curse, and asks Hook to give “her” a letter for her. So her partner being revealed to be a girl isn’t the surprise.
It is mentioned by Zelena that Robin “has a case of young love,” but it’s left unknown who Robin is in love with, or what their gender is. So while it wasn’t obvious that she’s lgbt like Alice, because no name, gender, or pronouns of her partner are mentioned, it doesn’t lead us to believe she’s straight either. So her partner being revealed to be a girl isn’t a total surprise.
Some shows, such as The Loud House with Luna and Sam, purposefully lead us to believe that the girl has a crush on a guy, but then the twist is it’s a girl. Sam is a gender-neutral name, but is more commonly associated with guys. So Sam being a girl and Luna having a crush on a girl was meant to be the twist.
In both Alice’s and Robin’s scenes, we aren’t led to believe that they have a crush on a guy. Alice is blatantly lgbt, and the lack of both name and pronouns for Robin’s partner means we aren’t primed to believe she’s straight.
The twist was that they are dating each other, not that they are lgbt.
And I think that is beautiful.

Today I realized how much I miss Curious Archer. Alice and Robin will always be one of the best parts of s7 in OUAT. We really deserved to see their wedding.
