This is my go to recipe for the creamiest mashed potatoes around. I make them a few times a year and mostly on the holidays. Occasionally I’ll whip them up for dinner. Me: well, we're out of eggs, so I had to improvise. I have made a weird, horrible meat cake and some lovely potatoes. They should be ready in like 60-90min.

Wifey, looking utterly horrified: I need you to never use the words "meat cake" again

#i planned to make meatloaf #but we're out of eggs #and i don't know how many of you have ever tried to make meatloaf with gluten free breadcrumbs sans eggs but.#it's bad!#so I made a chickpea and onion mash with with almond milk to replace the eggs #i may have made slightly TOO MUCH chickpea mash in fact #so the meatloaf's pre-oven consistency is uhhhhhhhhhh *creamy*#it's laid over a bed of potatoes and I have to say the potatoes are probs gonna just be like #a weird pineapple upside cake style topping for the meatloaf #like they're FOR SURE gonna bake REAL DEEP into the meat cake #which honestly sounds pretty good?#but it's gonna look WILD #imma call it potato upside meatloaf with gochujang glaze and pretend i haven't just made an abombination
