maybe you've answered this before (sorry if so) or maybe you don't want to answer at all (understandable if so) but what type of job do you have that you travel so much
i think i’ve answered this before but i am happy to answer it again! i work in higher education, and part of my responsibilities is to recruit international students. so i travel to wherever my boss and university sends me. since september 2022 that has included: india 3x, italy, turkey, ghana, nigeria, south africa, kenya, ethiopia, south korea, taiwan, nepal, bangladesh, and indonesia. some of these places i’ve gone to specifically recruit graduate engineering students, since that’s the specific school i work for, but sometimes i’ve been sent places to recruit grad students for the entire university. on this most recent trip i was recruiting for the whole university in korea, taiwan, and indonesia but i was only recruiting for engineering in nepal and bangladesh.
i’ve worked in higher ed, and specifically international graduate admissions, for a literal decade now, but i only started traveling internationally last year. (i was supposed to start traveling in april 2020 but uhhhhh obviously that didn’t work out). before i started traveling, my expertise was more in international credential evaluation (ie. determining the degree and gpa equivalency between int’l records and the us system) and immigration services (working with students to collect the necessary documents to issue their immigration docs to apply for their student visa). there are soooo many jobs in higher ed that have nothing to do with traveling, and i really love my job (hence why i’ve stayed in this career for a decade).
funnily enough, my first boss who hired me in higher ed was on the trip with me in nepal and bangladesh and she told me how proud she was that basically everyone she hired is still in international admissions even if none of us are at our original university.

Answers below cut for those who prefer to scroll past.
1. Are you named after anyone?  I am. My middle name is my father’s first name, and my first name is a play on my mother’s middle name.
2.  When was the last time you cried? Within the last week sometime, probably. I cry when watching sad things sometimes, when I’m extremely frustrated, when I’m having an anxiety attack... you know, the usual.
3. Do you have any kids? Yes. Just one. Y’all have benefited from the tools he makes me to help me with my Sims 3 game.
4.  Do you use sarcasm a lot? Not really. When I do use sarcasm, I’m very careful with it, only using it with a small audience of people that I’m 100% sure will know that it’s sarcasm, or in an overly exaggerated way that I feel fairly certain cannot be misunderstood. I feel like sarcasm is an easy habit to fall into that often creates misunderstanding. My partner says I used to not use it at all, but nowadays I use it carefully.
5.  What sports do you play/have you played? The only sports I’ve ever played were the ones I was required to play in school. Then the asthma got bad, and I got a doctor’s note to be excused from PE class my last two years of high school, so no more sports for me. I do enjoy playing with a frisbee, ping pong, or badminton from time to time, but not as a sport, just as playing around. If you want to get serious about scoring, I’m out. That’s stress I don’t need.
6.  What's the first thing you notice about other people? I’m honestly unsure about this. The first thing I LOOK for is how they’re behaving towards the people around them. Polite, respectful? Helpful? Or if they’re not interacting with anyone, does their behavior seem normal and can I make a good guess as to what they’re doing or does it seem abnormal and possibly suspicious? Yes. I actually go through that sort of process with every person I encounter. Aside from simply being female, I also have an anxiety disorder, and I’m fairly asocial as a person, and due to life experiences, I think the scariest thing in the world is other people.
7.  Scary movies or happy endings? Happy Endings. I state this conditionally though, some movies are considered scary by some that I don’t really think are very scary? I mean, I watched Supernatural, and the original Firestarter is one of my favorite movies... so... but they do have good endings. Good endings are required. I will absolutely skip ahead to the end sometimes to make sure it has a good ending if I’m getting nebulous vibes about a show or book.
8.  Any special talents? I would say that I’m good at organization, but I’ve come to know some people in the simblr community that are WAAAAY more organized than I am. I’m great with sorting out a physical space though, and have sometimes been asked by friends who aren’t good at it to help them out.
9.  Where were you born? Long ago and far away... in the not so grand ol’ USA.
10.  What are your hobbies? Sims, Reading, watching various shows (sci-fi, fantasy, occult, and mystery themes), Pokémon games, occasional other RPG console or PC games, and sometimes DDO or LOTRO.
11.  Do you have any pets? Nope. I sometimes moonlight as a pet caretaker for people on vacation though, because I’m very good with animals. One of my friends dubbed me the ‘cat whisperer’.
12.  How tall are you? Short enough to be considered petite.
13.  Fave subject in school? Uh. I once took a class in business and psychology and I really enjoyed that. Otherwise... math and science maybe?
14.  Dream job? I have often thought over the years that being someone else’s personal assistant to keep them organized would be what I would excel the most at, but having looked at the job descriptions for some of those jobs, I’m less certain of that. For now, I’m just hoping to score a job I can do mostly from home.
15.  Eye color? I agree with @simstryingtheirbestok that these questionnaires sometimes tend to ask too much personally identifying information, or information that is commonly used in answering secret questions. However, in this case, having made a simself that’s been commonly shared here, my brown eye color isn’t a secret.

Island Hopper (Jimjeran Book 2)- Chapter 14 : Ache
Claire continues to work on the Field Ship and finds herself getting to know John better and missing Jamie...

At breakfast the next morning, I found myself at the same table as Dr. Saul.  We smiled at each other across the table as we attempted to fuel ourselves for the day with a breakfast of rice, fish, and breadfruit.  I found myself longing for a bowl of Jamie’s steel cut oatmeal—what he called ‘porridge’—chewy and satisfying especially when topped with brown sugar and powdered milk.  Thinking of him made me feel even emptier than I already did.
“It’s a shame that there’s not time for follow-ups,” the kindly doctor remarked, his brown eyes a contrast to his stark white hair.  “Some of the teeth I had to pull yesterday could actually have been saved if I had time to do a crown.  But with such a short time to visit, if a cavity goes deep enough and can’t be fixed with an amalgam filling the tooth has to go.”
“I feel the same way,” I replied, pushing the dry roasted breadfruit around my plate.  As much as I tried to tell myself it was just a starch like potatoes and that despite its name it wasn’t supposed to taste like either bread or fruit, I couldn’t bring myself to eat it if it wasn’t drenched in oil and salt.  “I guess Arno is lucky to have a nurse practitioner there, though we don’t have a dentist… speaking of which, Dr. Saul, do you think I might be able to observe an extraction?  A toothache is one of the things that makes people miserable, and I’d like to be able to at least help them if they’ve got a horribly abscessed tooth.  I don’t want to make it worse for them by cracking a tooth off in their jaws.”
Dr. Saul smiled.  “You’ve got to become a jack of all trades out on these islands, don’t you?”  He looked at me curiously.  “My wife was a nurse before we retired.  I’ve tended to come on these adventures without her, but I keep on wishing she would be willing, for a short time if not several months, to serve out on one of these islands.” He smiled.  “Then I’d finally have time to do dental work the way I’d like to, and she could be my assistant if she wasn’t otherwise occupied.”
All too soon it was time for us to take our dishes to the galley, call out “kommool tata” to the cook, and head to our respective stations.
We had docked on Jabor, the islet with the largest population on Jaluit.  I was surprised to see how westernized the little town was, like a miniature Majuro. Instead of palm trees radiating out from the dock, there were some paved roads and some coral gravel roads, houses, a couple of small stores, and a school.  It seemed like every spare inch of space was covered with either a building or road.
The ship still had a large delivery of boxes to offload and copra to pick up, but it was obvious that the residents had less need of the medical services we provided.  Dr. Saul, however was quite busy, so during my patient breaks he was able to coach me through several extractions.  He showed me how to grip the tooth and rock it back and forth in its socket to loosen the bone and detach the ligament before removing the tooth.   Preparation, he said, was extremely important and would prevent the tooth splintering on removal.
He also demonstrated what to do if a tooth cracked on its way out—how to flush the cavity and make sure to extract the other pieces, to close the opening with a few stitches, as well as giving the patient instructions to rinse their mouths with salt water until fully healed.  
John had a bit of a weak stomach, so he was quite grateful to relinquish the assistant spot to me, and instead manned the fort in the clinic to come get me if I had a patient and handed out toothbrushes and toothpaste to curious children peering into the dental operatory.
Because Jabor was so well-supplied and urbanized, the ship only spent half the day there.  At our lunch break, the boat left the dock and pressed north to another island in the atoll a 45-minute journey away.
After we’d filled our plates, John and I found a shady spot on the upper deck to eat, as far away as possible from the bags of copra piled high on the main deck so that the rancid odor no longer overpowered us.  It was getting worse as the trip progressed and the supply of smoked coconut increased, though if we ever got a breeze at night, it seemed to blow the smell away.  However, in the past few days the ocean had been remarkably still and currently the only disturbance on the water was the white “v” of our wake.
“Where are we going now?” I asked John.
“Imiej,” he replied.  “It was where the Japanese were based during World War II here.” John pointed ahead to the far end of the long green island parallel to our course.  “There are ruins of barracks and an old Shinto shrine there, as well as wrecks of boats and airplanes that divers come to see.”
“I knew that Guam was held by the Japanese during World War II,” I nodded. “I hadn’t realized that the Marshall Islands were, too.”
“It’s taken a while for us to travel toward independence,” John smiled. “In the 1880s during the imperialism rush, Germany claimed the Marshall Islands.  They put in a trading post here on Jaluit.  After World War I, Germany lost the territory and we were given to Japan.”
“As if your nation was something that could belong to anyone other than her people?”
John inspected his fish and selected the perfect bite to pair with his rice.  John was handsome, refined, and distinguished, and yet he looked just as at home eating coconut rice and barbecued fish with his fingers as if he was using utensils in a fine dining establishment.  
“Well, Claire,” he said, smiling patiently, “Though a small nation does not have much control of her destiny, what can be accomplished viewing history with bitterness?  Our histories make us who we are.  During that time, we gained Japanese immigrants, and although many were repatriated to Japan after the war, if they’d intermarried, they were allowed to stay here.”
“I was thinking Ogawa sounded very Asian,” I responded.  “Our general store out on Arno is owned by an Ogawa. And a few of Jamie’s students have a blend of Marshall and Japanese features.”
John nodded.  
“A lot of late World War II was fought in the Pacific, as I recall,” I said.  “The US liberated Guam from the Japanese before the war ended.”
“The Japanese base here on Jaluit was bombed during World War II. The US took the Marshalls in early 1944, and the war didn’t end until a year and a half later.  After the war we became part of the Trust Territories of the Pacific Islands.”
“Forgive my ignorance,” I said.  “But are the Marshall Islands still a territory of the US?  Guam is.”
“No, we gained our independence in 1986,” John said with a smile. “Thirty-two years ago.  We might still be considered a protectorate of the US—they provide defense for us, and the US postal system delivers mail here as if we were a territory or state.  Considering that we only have 55,000 people in the entire nation, we aren’t any sort of superpower.”
I set down my plate and leaned forward toward John. “I’m missing my husband,” I said.  “Tell me how you met.”
John’s face brightened.  “I think it was my first day of College Writing,” he said.  “I like to do well in school, so I was one of the few people sitting toward the front of the classroom.  The next thing I know a very large ri-palle with bright red hair sat down by me.  Sorry,” he said, “Ri-pālle means…”
“No need to translate,” I said.  “That’s Jamie’s name for me half the time.”
John looked amused. “He calls you Ri-pālle?”
“Aet,” I nodded.  “As in ‘itōk Ri-pālle.’”
He shook his head in amusement.  “That Jamie… always kakūtōtōik—teasing. Sometimes,” John said, “the teasing hides a deep hurt… He has mentioned his family, of course.”
I nodded.
“The loss of his father in particular,” said John. He started to ask me a question, then stopped himself. “Has he mentioned me?”
I shook my head slowly.  “But John,” I explained, “I have only known him a little over two months.”
John stared at the wake of the boat. “Jamie was just the opposite of everything I’d seen every day since I was a kid. Red hair instead of black; curly instead of straight.  Tall instead of short.  Big instead of petite. You can see I’m bigger than the average Marshallese because I’m half white.  And having never met my father, I was drawn to Jamie. It was like I was seeing the other half of myself, the other half of my identity.” He paused.  “And I was coming to grips with another part of my identity as well, deciding whether it was safe, whether I was ready to come out of the closet.”
“It’s a big decision,” I responded.  “My best friend Joe is gay.  Coming out to his mom was the hardest thing he’d ever done.  Of course, she gave him a big ol’ hug and said, ‘Honey, I’ve known forever.  I just wondered when you were going to figure it out.’” I remembered the glassy look of tears in Joe’s eyes when he’d told me that story, when he’d shared how freeing it was to be able to be real with his momma.
“Sometimes it’s hard to stay home and make that change,” I said. “Joe moved across the country for college, and he’s settled in Colorado.”
John looked straight at me. “At times I feel certain that moving away is what I need to do to really be able to be myself.  But I’m tied to this place.  I just haven’t been able to leave.”
  The peaceful camaraderie of our boat journey quickly came to an end when we docked at Imiej and soon the staff of all the offices were back to work. By the end of our second work day, I had reached a level of efficiency that reminded me of my days in the ER, funneling patients through as quickly as possible, assessing their needs and providing care in a prompt manner.  I missed the relaxed, communal nature of my practice on Arno but it was also stimulating to rush again.  There was a part of me that recognized that sensation of stress and responded by shutting down the social part of my brain and triggering the professional part.
But after dinner, when the field ship was heading across the still sea toward our next destination, the atoll of Ailinglaplap; the part of my heart that longed for connection couldn’t help but ache.  I crept up to the top deck again and sat by the railing, gazing out toward the east, opposite the final rays of the setting sun.  Somewhere over those black, still waters lay the island of Majuro.  And beyond that was Arno and Jamie.  I hugged my knees to my chest and closed my eyes.  
I’d been homesick at camp before.  I’d had that baby ache when I longed to be a mother.  And I’d missed Frank when I first came out to Arno.  But missing Jamie hurt all over.  I pictured him coming home to me, his face beaming at the sight of me, imagined him after a morning jog, entering our apartment with a smile on his face, sweaty and hungry for breakfast and me, and the look on his face as he determined which to have first.  I thought of him getting dressed in the morning standing by the closet in boxer briefs—how just the sight of him: damp curls around his ears and neck, the lines of his back and visible tone of his muscles could draw me to him as if nothing else existed, unsatisfied until I had seduced him, until I had tasted him fresh with the scent of soap, until I had made him moan and say my name, gasp and blink his eyes in awe and then chuckle, speechless on our bed.
I thought of being held—in that bed, on the couch, in the hammock, standing in the kitchen doing the dishes with him hugging me from behind, his breath in my hair, his body a solid wall of security behind me.  I thought of talking in our bed in the darkness of night, the pleasure of telling stories of our childhoods and discussing things that mattered to us.  There was continued joy in the discovery of who Jamie was, and with each new revelation of his thoughtful character, I thanked providence for bringing us together.
Someone cleared his throat behind me, and I startled at the sound, at first concerned but then grateful to realize it was Dougal MacKenzie and not one of the deck hands who I occasionally found leering at me.
“Well, young lady,” he said, coming over by me and sitting down on a box. “Here you are, outside at night alone again.”  He chuckled, so I began to think I wasn’t in trouble with him. “We havena had many opportunities to get acquainted, but I thought I might take a moment to check with you and see how you are doing.”
I was grateful I hadn’t succumbed to the impulse I was feeling right before he arrived which was to start crying.  It was probably good to be distracted.
“I’m definitely keeping busy, Mr. MacKenzie,” I said.  “I’ve seen so many skin ailments and infections galore and given out at least a third of the boil prevention kits I brought along with me.”
“Indeed?  That’s good….”  We sat in silence for a moment before he began again.  “So you and Jamie have been married a month now?” he asked.  
“Yes, sir,” I responded.  “It was our anniversary when you radioed us.”
I could barely see his face with the sunset fading behind him, but I had a sense that he was smiling.
“Miss Beauchamp,” he started.  “I mean, Mrs. Fraser.  There are moments when I regret not speaking out against your marriage.  It was a sudden decision, and I have wondered whether by not forbidding it, I allowed the two of you to move forward with a life choice that will prove painful to both of you. I hope it wasn’t a mistake.”
“Oh, no, it wasn’t a mistake, Mr. MacKenzie,” I insisted. “As much as it seemed sudden, Jamie and I had a connection from our first meeting.”
“Truly?” Mr. MacKenzie asked.  
“I love him, sir,” I said.  “I was just sitting here thinking of him.  It may have been being reprimanded for my behavior and realizing what it would mean to lose him that was the catalyst, but I believe that we would have ended up dating and marrying if life had continued as it was.  I was falling in love with him, and he said he wanted me from the beginning.”
“So I don’t need to second guess my decision to let you be married? I often consider my sister Ellen when I think of the lad.  When she died and then Brian left, I knew I needed to provide for him.  He needed a man, an example, to get him back on the right path.  And though I think I’ve been firm with him and demanded much, I hope it has not worked for ill in his life.”
“Jamie is a very hard worker, sir,” I said.  “And yet gentle and kind too.”
“Well, I canna take any credit for the gentle and kind part,” Dougal laughed.  “Nor do I think that it was all Ellen’s doing, as sweet as she could sometimes be. I think it was his father, Brian. Though I don’t know what sort of tenderhearted person would leave his son and daughter when they were still grieving their mother and brother.”  He faded into silence.
“Jamie was lucky to have you, sir,” I responded quietly.  “And I’m grateful to you, too.”
He pushed himself up from the box.  “I promised Jamie I would keep you safe.  So you’d better come down with me and get settled in your stateroom for the night.  And in the future, if you wish to have time alone after dark, perhaps you could knock on my door and mention it to me.  I can stand guard at the stairs.”
Before the man could move away, I hugged him.  “You’re family now, Mr. MacKenzie,” I explained.  “Thanks for trying to take care of me.”
He patted me awkwardly on the back, and I followed him downstairs, smiling as I entered my room.  The hug hadn’t been from Jamie, but it would do.

Zach Geballe: From Seattle, Wash., I’m Zach Geballe and this is a “VinePair Podcast” “Next Round” conversation. We’re bringing you these episodes in between our regular podcasts so we can explore a broader range of issues and stories in the drinks world. Today, I’m speaking with Shiada Drysdale, who is the beverage manager at Virgin Atlantic. Shiada, thanks so much for your time.
Shiada Drysdale: Thank you. Nice to speak to you, Zach.
Z: Of course, you and I are both juggling work and kids, so it took a while to put this together, but I’m glad we did.
S: We’re here now.
Z: Yeah, exactly. Why don’t we start with just a little about you? How did you get into the beverage alcohol industry? Were you in the airline industry and came into this, or were you in drinks and then came to the airline industry?
S: I have been in the aviation industry for over 20 years. I started off in the cabin crew as a flight attendant many years ago. My interest in wine has always been in the periphery, but it was never my core job. I was a cabin crew, but then I moved into different areas of the airline. I used to work for a company called Airtours, which got changed to MyTravel, which then got changed to Thomas Cook. Then, about 14 or 15 years ago, I came across Virgin Atlantic as a crew manager, and then I worked in a couple of different departments. I’ve been working on in-flight services, which is an operational team, and we look after anything that goes on board, whether it’s food or equipment or drinks. And having that interest in wine is my passion. I’ve done a few qualifications, and I read a lot about the wine industry and the wine world. It just so happened a couple of years ago that a position and opportunity came around in working for the beverage team. I was lucky enough to get that position. It was a marriage of two of my passions in one. I’m very lucky to be in the role that I am in, working for an airline and having the ability to learn and deal with beverages and drinks.
Z: I want to ask this because you started out as a cabin crew, as you mentioned. Between when you got started in the airline industry and now, what are some of the biggest changes to the type of offerings there are in flight?
S: At Virgin Atlantic, we have a complimentary range, so all of the drinks that we offer onboard are complimentary. We also have our clubhouses globally, and there is a lot of regionality within the offerings that you see in the clubhouses overseas. Onboard, we try to appeal to the majority where possible, so we do load as many familiar brands as possible so customers are aware of the brands that we’re loading. It creates good partnerships with some of the brands that we work with as well. I think we’ve always tried to appeal to the masses rather than looking at small minutia opportunities because something that we have to really consider when choosing brands is we have extremely limited space onboard, and we have to be mindful of weight. There are two key things that we really need to consider when choosing partners, brands, and products because of the environment that we work in. We have to be very, very mindful that what we’re offering is appealing and it will be consumed and enjoyed. Yes, there is a lot of consideration and lots of “Tetris playing” sometimes with loading our beverage products on board.
Z: Yeah, so I want to ask a little more about that, especially very practical considerations of onboard service. You mentioned that desirability and the fact that ideally everything that goes on the plane is consumed so you’re not flying it around needlessly. What are some of the other considerations that people like me who just have been on airplanes and don’t think much about the operations might not know? You mentioned weight, but does that mean that you’re looking for things in different packaging than people might expect? What about opening bottles? Are you prioritizing non-cork closures? What about all that stuff?
S: Packaging is key. Ideally, the lighter the weight, the better. The size of the product and how it could be packaged into the small drawers, small carts, and trolleys has to be considered. We have a beautiful space in our upper-class cabins. We’ve had the bars, and we have some social spaces now in which packaging isn’t so essential because we would like to showcase the brands that we’re working with. That creates a space and a bit of theater with what we provide. Certainly, where premium economy and economy are concerned, we have to consider the size because we want to load as much on because we don’t want to ever be in the situation where we’re running out of certain products. However, we are constantly looking at consumption rates, and we look at regionality and seasonality because what might appeal on a West Coast flight might not necessarily appeal to an East Coast flight or an east-bound flight. It really is just looking at consumption rates, making sure that we are adapting and being flexible as we can. Also, bearing in mind that we are considering carbon offsetting in our footprints and just making sure that we are loading enough of that particular product for our customers.
Z: Excellent, so here at the “VinePair Podcast,” we have been talking a lot about RTDs and canned cocktails. I think for a lot of people, the stereotypical airline experience is an airline bottle of your spirit and whatever mixer you choose. Are you loading in canned cocktails to cut out one of those pieces and/or offer more variety?
S: It’s interesting you say that, because we’ve been doing a bit of studying here. We’ve done a few trials of introducing RTDs into our product range. It’s certainly something, purely from a sustainability perspective, that has potential. Cans, as you know, are fully recyclable. They are lighter weight than bottles. Our key strategy is to remove single-use plastic where possible onboard our aircrafts, so we’re very keen to do that and certainly can create that opportunity for us to do so. Particularly now, when cans are so readily available and you’re getting really good quality products within those cans in the U.K. market and I’m sure in the U.S. market, the choice of ranges that you can get now is just fantastic. It has certainly given us a scope, especially over the last two years, to look at that market more closely and start thinking about how we can introduce RTDs within our core range. Again, creating the opportunity to enable choice, because we can showcase a gin and tonic, a vodka and Coke, but having an RTD enables that consistency. It also enables us to create a bit more theater, I guess, so it’s certainly something that we’re looking at.
Z: Yeah, very cool. I think there’s definitely something to be said about airlines and that general setting, where you want to be able to offer people different flavors than they have been used to in the past.
S: Absolutely.
Z: You can also hit multiple goals at once, and it seems like a natural fit. Again, I’m just a guy who’s on a podcast, so…
S: We definitely think like that too!
Z: OK, so one thing that I’ve always been fascinated by since I first heard about it is this notion that food and drink taste different at altitude in an airplane when you’re 35,000 feet above the Earth, and that for beverage programs, it’s important to consider that. Is there truth to that? And how do you account for how a product mixes differently at altitude versus on the ground?
S: Yeah, there is definitely a science behind that. I’m not too familiar with the actual science, but we do consider that as part of our choices. Not so much for wines because wines are so unique in themselves, and they obviously have their own personalities. Wine is such a subjective topic anyway. But certainly, when we’re looking at tomato juice — and Bloody Marys are a prime example of customers searching for that extra flavor — the premise is that your taste buds are certainly heightened because the aircraft environment is drying to your senses. Your taste buds are slightly dampened and dull down, so I think you naturally crave a bit more acidity, a bit more freshness, and sharpness. Naturally, drinks like that lend themselves better in an aircraft environment because I think that’s what people generally crave and they just want that extra burst of flavor, if that makes sense.
Z: It certainly does. As you said, a big part of the job are the clubhouses as the other way that people interact with beverages under the auspices of an airline. You mentioned a little bit that from location to location, there’s going to be some variations based on maybe what’s local or what’s available or both. How are those stocked? Is it a similar thought to the airline, or do you get to have a little less familiar product because you’re not dealing with some of the limitations of weight or something to that effect?
S: Yes, they do lend themselves to giving us the opportunity to explore and expand our ranges, whereas we just can’t do that on board. Certainly, we do look at the locality, regionality, and what consumers would like to see within that space. Again, the teams that we work with locally are brilliant at what they do. We have mixologists, baristas, and fantastic bartenders. They are just full of knowledge. We certainly would lean on them as experts in their fields to help us identify what would work well in those environments. We really do try and, as I said, lean on the experts that we have within our teams.
Z: Makes sense. So coming back to the airline and in-flight experience, tell me a little more about the first-class cocktail lounges. I have this vision in my head of the era of aviation from before I was alive, where there was a piano, and people would just mill about. If it wasn’t for the fact that you’re on an airplane, you could be mistaken for being in a cocktail bar. Is that the vibe? In your opinion or even expertise, what is the appeal of that for a certain traveler?
S: I think it’s certainly an aspirational environment, and we’ve done a few trials with various categories. We still believe that within any cabin, there is a sense of a treat, an indulgent experience within the upper-class cabin and premium economy. People still love to have a glass of Champagne when they’re boarding. We’ve trialed those categories which we assumed would work well because the time is quite right. Those categories are very popular here on the ground. However, we found that they haven’t really necessarily translated that well in the air, and that’s not to say that we wouldn’t include them by any stretch because it is definitely key. Yet, we still find that customers tend to still enjoy the more indulgent cocktails, Champagne, and sparkling wine, so I think that element of treating yourself is still very much there. Having that sense of “me time” is absolutely key to that space where you can really treat yourself.
Z: What about further thoughts of flights where there’s some type of meal service? I understand that depending on the destination and the duration of the flight, that may not be part of every flight. However, I’ve been on some international flights where it is not only on the menu, but there are wine pairings. Is that something that you look at? And how do you make those work?
S: We do. We work very closely with our food team here, and we try to choose wines that would pair with most of our dishes. We’ve worked with some great wine partners in the past. Berry Bros. & Rudd was the most recent one, and we had a fantastic relationship with them. We do look at when the menu cycle changes, and we will look at what wines are up and coming. We also look at some New World wines and Old World wines and also what the season is. We’ll introduce sweet wine when the time is right. We obviously have our cheese as a dessert and pudding service. We’ve introduced ports in the past, so we definitely look very closely. We look at where we are with the menu cycles, the time of the year, introducing newness where we can, trends on the ground, and seeing what’s popular within the on- and off-trade. We do a lot of thinking about what we’re going to load at the right time.
Z: And how about you, Shiada? How do you discover new wines and keep on top of what’s happening? Obviously, reading is very important, but I assume there’s a decent amount of tasting in your life as well?
S: Yes, I do. I’ve done a lot of tasting, and it is great. I thoroughly enjoy what I do. As I said, we worked with Berry Bros. & Rudd who were brilliant at taking us along the journey of learning. They used to showcase hundreds of different wines. We would spend days tasting so many upcoming varietals, up-and-coming brands, and new winemakers. It has been a great experience. We’re constantly looking at the marketplace, looking at what’s going to be appealing to our customers in the future. We are also looking at sustainable brands. We’re looking at where we fly to. We really want to showcase some of the destinations we fly to and some of the vineyards and the wines that come in from those particular destinations. We are constantly looking at what’s occurring on- and off-trade. We get a lot of feedback from our customers that pass through our clubhouses, as well as our crew. We get a lot of feedback from them, and we love to listen to what their thoughts are. So there’s a lot of analysis.
Z: My last question is, we are getting to this point where the last year and a half or so have been challenging for everyone. Airline travel in particular, similar to other parts of the travel and hospitality industry, has had a lot of issues. Looking forward, and maybe something for me to dream about, since I’m still mostly stuck at home: Given all the destinations that Virgin Atlantic flies to, if you could get on a plane tomorrow with no considerations about anything else, where would you be flying to, and what would you be drinking?
S: Oh, I would probably fly to South Africa. I’ve tried and tasted quite a lot of South African Chenin Blanc recently. It is a varietal that I’ve always enjoyed but haven’t really got to know very well. But I certainly have recently, and it’s probably my favorite varietal right now. I would fly to South Africa, head down to the Cape, and enjoy a beautifully crisp, chilled glass of Chenin Blanc on my way.

And as you pointed out, there is sometimes a small or big indulgence that we allow ourselves. Even for me, as a professional, this is something I think a lot about. It was a marriage of two of my passions in one. I’m very lucky to be in the role that I am in, working for an airline and having the ability to learn and deal with beverages and drinks.
Z: I want to ask this because you started out as a cabin crew, as you mentioned. Between when you got started in the airline industry and now, what are some of the biggest changes to the type of offerings there are in flight?
S: At Virgin Atlantic, we have a complimentary range, so all of the drinks that we offer onboard are complimentary. We also have our clubhouses globally, and there is a lot of regionality within the offerings that you see in the clubhouses overseas. Onboard, we try to appeal to the majority where possible, so we do load as many familiar brands as possible so customers are aware of the brands that we’re loading. It creates good partnerships with some of the brands that we work with as well. I think we’ve always tried to appeal to the masses rather than looking at small minutia opportunities because something that we have to really consider when choosing brands is we have extremely limited space onboard, and we have to be mindful of weight. There are two key things that we really need to consider when choosing partners, brands, and products because of the environment that we work in. We have to be very, very mindful that what we’re offering is appealing and it will be consumed and enjoyed. Yes, there is a lot of consideration and lots of “Tetris playing” sometimes with loading our beverage products on board.
Z: Yeah, so I want to ask a little more about that, especially very practical considerations of onboard service. You mentioned that desirability and the fact that ideally everything that goes on the plane is consumed so you’re not flying it around needlessly. What are some of the other considerations that people like me who just have been on airplanes and don’t think much about the operations might not know? You mentioned weight, but does that mean that you’re looking for things in different packaging than people might expect? What about opening bottles? Are you prioritizing non-cork closures? What about all that stuff?
S: Packaging is key. Ideally, the lighter the weight, the better. The size of the product and how it could be packaged into the small drawers, small carts, and trolleys has to be considered. We have a beautiful space in our upper-class cabins. We’ve had the bars, and we have some social spaces now in which packaging isn’t so essential because we would like to showcase the brands that we’re working with. That creates a space and a bit of theater with what we provide. Certainly, where premium economy and economy are concerned, we have to consider the size because we want to load as much on because we don’t want to ever be in the situation where we’re running out of certain products. However, we are constantly looking at consumption rates, and we look at regionality and seasonality because what might appeal on a West Coast flight might not necessarily appeal to an East Coast flight or an east-bound flight. It really is just looking at consumption rates, making sure that we are adapting and being flexible as we can. Also, bearing in mind that we are considering carbon offsetting in our footprints and just making sure that we are loading enough of that particular product for our customers.
Z: Excellent, so here at the “VinePair Podcast,” we have been talking a lot about RTDs and canned cocktails. I think for a lot of people, the stereotypical airline experience is an airline bottle of your spirit and whatever mixer you choose. Are you loading in canned cocktails to cut out one of those pieces and/or offer more variety?
S: It’s interesting you say that, because we’ve been doing a bit of studying here. We’ve done a few trials of introducing RTDs into our product range. It’s certainly something, purely from a sustainability perspective, that has potential. Cans, as you know, are fully recyclable. They are lighter weight than bottles. Our key strategy is to remove single-use plastic where possible onboard our aircrafts, so we’re very keen to do that and certainly can create that opportunity for us to do so. Particularly now, when cans are so readily available and you’re getting really good quality products within those cans in the U.K. market and I’m sure in the U.S. market, the choice of ranges that you can get now is just fantastic. It has certainly given us a scope, especially over the last two years, to look at that market more closely and start thinking about how we can introduce RTDs within our core range. Again, creating the opportunity to enable choice, because we can showcase a gin and tonic, a vodka and Coke, but having an RTD enables that consistency. It also enables us to create a bit more theater, I guess, so it’s certainly something that we’re looking at.
Z: Yeah, very cool. I think there’s definitely something to be said about airlines and that general setting, where you want to be able to offer people different flavors than they have been used to in the past.
S: Absolutely.
Z: You can also hit multiple goals at once, and it seems like a natural fit. Again, I’m just a guy who’s on a podcast, so…
S: We definitely think like that too!
Z: OK, so one thing that I’ve always been fascinated by since I first heard about it is this notion that food and drink taste different at altitude in an airplane when you’re 35,000 feet above the Earth, and that for beverage programs, it’s important to consider that. Is there truth to that? And how do you account for how a product mixes differently at altitude versus on the ground?
S: Yeah, there is definitely a science behind that. I’m not too familiar with the actual science, but we do consider that as part of our choices. Not so much for wines because wines are so unique in themselves, and they obviously have their own personalities. Wine is such a subjective topic anyway. But certainly, when we’re looking at tomato juice — and Bloody Marys are a prime example of customers searching for that extra flavor — the premise is that your taste buds are certainly heightened because the aircraft environment is drying to your senses. Your taste buds are slightly dampened and dull down, so I think you naturally crave a bit more acidity, a bit more freshness, and sharpness. Naturally, drinks like that lend themselves better in an aircraft environment because I think that’s what people generally crave and they just want that extra burst of flavor, if that makes sense.
Z: It certainly does. As you said, a big part of the job are the clubhouses as the other way that people interact with beverages under the auspices of an airline. You mentioned a little bit that from location to location, there’s going to be some variations based on maybe what’s local or what’s available or both. How are those stocked? Is it a similar thought to the airline, or do you get to have a little less familiar product because you’re not dealing with some of the limitations of weight or something to that effect?
S: Yes, they do lend themselves to giving us the opportunity to explore and expand our ranges, whereas we just can’t do that on board. Certainly, we do look at the locality, regionality, and what consumers would like to see within that space. Again, the teams that we work with locally are brilliant at what they do. We have mixologists, baristas, and fantastic bartenders. They are just full of knowledge. We certainly would lean on them as experts in their fields to help us identify what would work well in those environments. We really do try and, as I said, lean on the experts that we have within our teams.
Z: Makes sense. So coming back to the airline and in-flight experience, tell me a little more about the first-class cocktail lounges. I have this vision in my head of the era of aviation from before I was alive, where there was a piano, and people would just mill about. If it wasn’t for the fact that you’re on an airplane, you could be mistaken for being in a cocktail bar. Is that the vibe? In your opinion or even expertise, what is the appeal of that for a certain traveler?
S: I think it’s certainly an aspirational environment, and we’ve done a few trials with various categories. We still believe that within any cabin, there is a sense of a treat, an indulgent experience within the upper-class cabin and premium economy. People still love to have a glass of Champagne when they’re boarding. We’ve trialed those categories which we assumed would work well because the time is quite right. Those categories are very popular here on the ground. However, we found that they haven’t really necessarily translated that well in the air, and that’s not to say that we wouldn’t include them by any stretch because it is definitely key. Yet, we still find that customers tend to still enjoy the more indulgent cocktails, Champagne, and sparkling wine, so I think that element of treating yourself is still very much there. Having that sense of “me time” is absolutely key to that space where you can really treat yourself.
Z: What about further thoughts of flights where there’s some type of meal service? I understand that depending on the destination and the duration of the flight, that may not be part of every flight. However, I’ve been on some international flights where it is not only on the menu, but there are wine pairings. Is that something that you look at? And how do you make those work?
S: We do. We work very closely with our food team here, and we try to choose wines that would pair with most of our dishes. We’ve worked with some great wine partners in the past. Berry Bros. & Rudd was the most recent one, and we had a fantastic relationship with them. We do look at when the menu cycle changes, and we will look at what wines are up and coming. We also look at some New World wines and Old World wines and also what the season is. We’ll introduce sweet wine when the time is right. We obviously have our cheese as a dessert and pudding service. We’ve introduced ports in the past, so we definitely look very closely. We look at where we are with the menu cycles, the time of the year, introducing newness where we can, trends on the ground, and seeing what’s popular within the on- and off-trade. We do a lot of thinking about what we’re going to load at the right time.
Z: And how about you, Shiada? How do you discover new wines and keep on top of what’s happening? Obviously, reading is very important, but I assume there’s a decent amount of tasting in your life as well?
S: Yes, I do. I’ve done a lot of tasting, and it is great. I thoroughly enjoy what I do. As I said, we worked with Berry Bros. & Rudd who were brilliant at taking us along the journey of learning. They used to showcase hundreds of different wines. We would spend days tasting so many upcoming varietals, up-and-coming brands, and new winemakers. It has been a great experience. We’re constantly looking at the marketplace, looking at what’s going to be appealing to our customers in the future. We are also looking at sustainable brands. We’re looking at where we fly to. We really want to showcase some of the destinations we fly to and some of the vineyards and the wines that come in from those particular destinations. We are constantly looking at what’s occurring on- and off-trade. We get a lot of feedback from our customers that pass through our clubhouses, as well as our crew. We get a lot of feedback from them, and we love to listen to what their thoughts are. So there’s a lot of analysis.
Z: My last question is, we are getting to this point where the last year and a half or so have been challenging for everyone. Airline travel in particular, similar to other parts of the travel and hospitality industry, has had a lot of issues. Looking forward, and maybe something for me to dream about, since I’m still mostly stuck at home: Given all the destinations that Virgin Atlantic flies to, if you could get on a plane tomorrow with no considerations about anything else, where would you be flying to, and what would you be drinking?
S: Oh, I would probably fly to South Africa. I’ve tried and tasted quite a lot of South African Chenin Blanc recently. It is a varietal that I’ve always enjoyed but haven’t really got to know very well. But I certainly have recently, and it’s probably my favorite varietal right now. I would fly to South Africa, head down to the Cape, and enjoy a beautifully crisp, chilled glass of Chenin Blanc on my way.

I originally selected the blog name "writtenthenerased", but mistyped it as "writtenthanerased" in a text to a friend. I didn't catch the typo until he asked me to clarify between two meanings, one of which was "Do you mean it as in 'I'd rather be written than erased'?" I thought it personally fit me rather well, and I selected writtenthanerased as my blog name.

26. Random fact: So this is going to sound really freaking weird, but I'm actually a student pilot! I've been flying since I was thirteen (yes, here in the United States, it is legal to fly a single-engine plane before you can drive a car. Lovely lawmaking, isn't it?) and have nearly enough hours to apply for my private pilot’s license (a minimum of forty). As I just turned sixteen two months ago, over the summer I will be going to a flight camp for three weeks, upon which I will take my first solo flight! I'm looking to pursue this in college and obtain a Bachelor's in Aeronautical Science; from there I'll hop into the airlines and hopefully start working my way up from there. I've always been passionate about aviation, and I'm an air show junkie who's been to shows and air tattoos in numerous states and countries. It's a weird hobby for a sixteen year old to have, but hey, I like a little diversity in my life.
27. Describe yourself: I’m an INFJ on the Meyers-Briggs scale, and a 1w2 on the Enneagram. 
To be honest, I’ve spent more time thinking about this question than was probably necessary, but I struggle to accurately sum myself up in a brief paragraph, perhaps because I’m not quite sure who I am yet. Bear with me, this might be a little long.
People tell me I’m intelligent, self-reliant, mature, and wise; apparently I’d make a good therapist, and I’d have to agree. I’ll listen to you even if you’re my worst enemy, because everyone deserves to be heard, no matter what our relationship status is. I’m a natural mediator, and it takes a lot to get me truly angry, but once I am, it’s not a pretty sight. I’m painfully selfless, maybe too selfless at times, and I’ve learned that I give people too many chances. I trust a little too quickly, but I’m also terrified of telling people my inner thoughts (what a weird conundrum, huh?). I’m hung up on the “what if”s, they’ll haunt me until the end of time. I’m anxious; I love to be alone, but I’m scared to be lonely. I hope for the best and assume the worst, and the end product is usually somewhere in the middle. 
I’m usually fairly quiet because if it’s a weekday, chances are I haven’t slept well. I rarely take the initiative in conversations, but god, get me on a topic I love? I’ll talk your ear off for hours about Overwatch and European History and the F-18. My friends say I’m sarcastically savage, but also have a heart of gold, and will do anything for the people I love. I love without abandon; I like to assume the best in people and find the good in every bad situation, seek out the little things that bring joy to a darker day. I create endlessly, through writing and drawing and architecture and dreaming. My mind is always thinking, always conceiving, and rarely does it ever stop, but I’m painfully perfectionist; I criticize constantly, from the ragged edges of my chewed-short fingernails to the sentence I just typed on a blank Google doc. I run from the past and look to the future, and it seems so far away, but I blink and I’m suddenly looking at junior year of high school and the world of college and student loans and sweet, sweet independence. It’s right here, I’m right on the verge, and just about when I think I can see who I actually am, the kaleidoscope turns a little to the right, and there’s a different design in the eyepiece.
It’s been turning a lot lately, it seems. I’ve lost a lot of people, been burned at the edges, discovered what it’s like to have everything fall out from underneath you. But you know what? I’m still here, and that kaleidoscope is still rotating, because each time another block has been pulled out, I see yet another side of myself I never knew existed, and even in just a few months, I’ve learned countless lessons about people and feelings and even my own self. Thus, I’ll keep looking through the eyepiece and watching the pieces turn, beautiful and bright in their design.
Because I can’t do much else other than hope and dream, push forward to the future, to the days when things will work themselves out, to the moment when I can work myself out.
And that day, I think, I’ll finally see the whole mosaic.

1. Where do you live? I currently live in Delaware...yeah, the tiny ass state everyone forgets about.
2. One cool item you own? I’m trying to think of something really deep and meaningful...I have a Texas charm with golden star on it that I wear with a cross on a chain around my neck and never take off. 
3. Moon or stars? The stars (High key one of the things I miss most about Texas)!
4. Places you’d like to travel to? Either to London or to Disney...both are related to Peter Pan for reasons.
5. Favorite song? I cannot possibly pick just one song...music is everything. Praying by Kesha has me all sorts of in the feels right now.
6. Do you have any fears? I am afraid of so many things. I am afraid of the dark, germs, going into anaphylaxis, letting people down, not being good enough...I should stop now, right?
7. Do you feel different than you did last year? I mean I guess. The past year has been really bad for me, but I’ve just recently started feeling really hopeful about the future.
8. What is your race? I am white as white can be. I’m 75% Canadian (25-British, 25-Irish, and 25-French with a bit of Native American mixed in) and then 25% mystery that is most likely German or Dutch.
