Shown here are two popular Dim Sum (点心) items - Fried Prawn Dumplings (明虾角) and Spring Rolls (春卷) with a cup of Teh Siew Dai or in simple English, milk tea less sweet. I have also included a video (not mine) on the making of the fried prawn dumpling.

2/9/2023 - Lunch
RHUBARB, Tanjong Pagar
$118++ for 5 courses
Amuse Bouche
🥔🐷🍐Potato roll, pork with pear puree
Quite salty but super crispy.
🦐🧅 Prawn tatare with onion and pomelo topped with cucumber dashi kelly and salmon roe. Buttermilk sauce.
Cucumber dashi was salty instead of the refreshing taste of cucumber. Gives a nice element of mild saltiness to the dish. Love the raw prawn texture but the taste itself sort of reminds me of an elevated spicy tuna mayo.
🍄🥄Mushroom emulsion on the top, truffle puree at the bottom with fermented mushrooms. Dusted with kombu powder
The earthiness of the emulsion comes through really nicely. Probably my fav component of the dish. The sour fermented mushrooms was probably there to offset the heaviness of the emulsion but I wasn't a fan of it.
🐟🧅🦞Thread fin with saffron aioli. Onion stuffed with quinoa and lobster sauce.
Fish was nicely cooked. Tender and slightly flaky. Goes very well with the lobster sauce. Aioli adds a touch of creaminess but was not needed for the fish. Goes better with the quinoa.
🦆🥟Hungarian duck with sausage dumpling. Decorated with fried grape, pomegranate sauce, rhubarb and spinach foam.
Not a fan of the grapes. The sugar coating was hard and didn't add much flavour or taste to the dish. Duck was extremely well done. Soft, tender, tasty and not gamey. Sausage dumpling felt like an atas luncheon meat. Never had rhubarb in it's cooked form. Tastes sort of florally and sour.
🥥🍨Coconut clouds with lychee sorbet
The refreshing lychee sorbet goes well with the thick heavy cream at the bottom. An amazing dessert that has perfect balance when eaten together.
Petite Fours
Blood orange jelly - NO, just no. This was so sweet
Madeline with orange
Chocolate truffle

Shark Fin Inn: Yum Cha
Tumblr media Tumblr media Tumblr media
Are you really a Melburnian if you've never gone to Shark Fin Inn for yum cha?
Shark Fin Inn is popular and for good reason. It's one of the few remaining eateries which does yum cha in the old-school style: trolleys full of steaming dumplings, baked treasures and fried cakes. When you see something you like, you request it rather than deciding ahead of time what you'll purchase. This makes yum cha here feel a bit like "choose your own adventure": what you eat next depends on the path which you've taken during the meal so far.
The food is good and reasonably priced (we paid far more going to a yum cha hall in Springvale). All pastries were satisfyingly flakey, showing that the pastry chefs at Shark Fin Inn have their technique down pat. The dumplings were plump with prawn, and the other dishes were satisfyingly moist without being damp.
The venue is crowded and chaotic - book in advance unless you arrive right upon opening.

🥢 North Park Noodles

📍WOK IT OUT, TAYTAY | 03.03.2023
First time ko magdimsum gamit ang aking own money!!!
Tumblr media Tumblr media
• Dimsum Sampler (P318) - 5/5!!!
Molten Choco Xiao Long Bao - 1/5; Keri naman, di masama yung lasa. Ayoko lang ng choco xiao long bao in general kase matamis tas ang weird talaga nung pagsabog nya eh literal na melted chocolate lang sasabog sa bunganga mo. Ahahaha.
Prawn dumplings - 4/5; Ang laki pls !!
Hakaw - 5555/5!!!!! All time fave ko to kahit san kami pumunta na dimsum place eh parang iiyak ako pag walang hakaw and is2g this one did not disappoint!!! Super laki nung laman tapos lasang lasa yung shrimp tapos sobrang sarap umorder pa kami ng isa pang serving ahahaha
Tumblr media
• Taiwanese Chicken Chops (P98) - 3/5
Tumblr media
• Salted Egg French Beans (P108) - 4/5
Ahahaha.
Ayun lang kase wala happy lang me na nakatry ako ng bagong kainan rin saka hello afford ko na magganito with friends kahit papano. Salamat sa ojt, eme. Ahahaha! Ok, babay.

Asian Delicacies: Shrimp Varieties in the Asia-Pacific Market
Shrimp, known for its delicate flavour and versatility in culinary creations, holds a special place in the hearts of food enthusiasts across the globe. In the vast and diverse Asia-Pacific region, this seafood staple takes on a myriad of forms, each reflecting the unique cultures, traditions, and flavours of its locale. Let's take a deep dive into the rich world of shrimp varieties found in the Asia-Pacific market, exploring the tastes, textures, and stories behind these Asian delicacies.
The Asia-Pacific Shrimp Market
The Asia-Pacific region stands as a hub of shrimp production and consumption, with countries like Thailand, Indonesia, India, Vietnam, and China leading the market. According to recent data, the Asia-Pacific shrimp market is expected to continue its growth trajectory, driven by factors such as increasing demand for seafood, rising disposable incomes, and the expansion of aquaculture practices.
Thai Tiger Shrimp: Royalty on the Plate
One of the most sought-after shrimp varieties in the Asia-Pacific market is the Thai Tiger Shrimp, known for its large size, distinctive stripes, and succulent taste. These majestic creatures are farmed along the coasts of Thailand, where the warm waters of the Gulf of Thailand provide an ideal environment for their growth.
In Thai cuisine, these tiger shrimp are celebrated for their versatility. They star in dishes like Tom Yum Goong, a spicy and sour soup infused with lemongrass and kaffir lime leaves, and Pad Thai, the iconic stir-fried noodle dish. With their sweet, firm flesh, Thai Tiger Shrimp truly embodies the richness of Thai culinary traditions.
Indonesian White Shrimp: Purity in Flavor
Travelling to Indonesia, we encounter another prized shrimp variety: the Indonesian White Shrimp. These gems from the Indonesian archipelago are known for their pearly white appearance and delicate, slightly sweet flavour.
In Indonesian cooking, these shrimp often find their way into dishes like Udang Bakar, grilled shrimp seasoned with aromatic spices and coconut milk, or Udang Goreng Tepung, crispy fried shrimp coated in a light batter. The Indonesian White Shrimp's tender flesh and subtle taste make it a beloved choice for dishes that showcase the purity of its flavour.
Indian Black Tiger Shrimp: Bold and Flavorful
India's coastline is home to the impressive Black Tiger Shrimp, a species revered for its robust flavour and striking appearance. Named for its dark stripes against a contrasting background, this shrimp variety is a favourite in both Indian and international cuisines.
In Indian kitchens, these shrimp take centre stage in dishes like Prawn Masala, a rich and spicy curry bursting with flavours of cumin, coriander, and turmeric. They also shine in Tandoori Prawns, marinated in yoghurt and spices before being cooked to smoky perfection in a tandoor oven. The Black Tiger Shrimp's meaty texture and bold taste make it a popular choice for those seeking a more pronounced shrimp flavour.
Vietnamese River Shrimp: A Taste of Freshness
Vietnam's waterways offer up another delightful shrimp variety: the Vietnamese River Shrimp. These small, sweet shrimp are harvested from the country's rivers and freshwater ponds, prized for their tender texture and clean taste.
In Vietnamese cuisine, these river shrimp find their way into dishes like Goi Cuon, refreshing spring rolls filled with shrimp, herbs, and vermicelli noodles, and Banh Canh Tom Cua, a comforting soup featuring shrimp and crab with thick rice noodles. The Vietnamese River Shrimp's delicate flavour and melt-in-your-mouth texture highlight the country's emphasis on fresh, simple ingredients.
Chinese Prawn Dumplings: Dim Sum Delights
No exploration of Asian shrimp varieties would be complete without a mention of China's famed Prawn Dumplings, known as Har Gow. These translucent, delicate dumplings are a staple of Cantonese dim sum, showcasing the quality and craftsmanship of Chinese culinary traditions.
Made with a thin, translucent wrapper and plump, juicy prawns, Har Gow is a testament to the skill required to create these bite-sized delights. The shrimp's natural sweetness is enhanced by hints of bamboo shoots and water chestnuts, creating a harmonious blend of flavours and textures.
Embracing Diversity on the Plate
As we traverse the diverse landscapes of the Asia-Pacific region through its shrimp varieties, we discover not just a range of flavours and textures, but also a deep appreciation for the cultural significance of this beloved seafood. From the regal Thai Tiger Shrimp to the humble Vietnamese River Shrimp, each variety tells a story of tradition, innovation, and the artistry of local cuisines.
In the bustling markets and lively kitchens of Asia-Pacific countries, shrimp is not just an ingredient—it's a symbol of community, celebration, and the shared joy of good food. Whether grilled, steamed, fried, or simmered in a fragrant curry, these shrimp varieties remind us of the endless possibilities and pleasures found in the world of Asian delicacies.
So, the next time you savour a plate of succulent Thai Tiger Shrimp or delicate Chinese Prawn Dumplings, take a moment to appreciate the centuries-old traditions and vibrant flavours that have made shrimp a culinary star in the Asia-Pacific market. In each bite, you'll find a taste of history, a dash of innovation, and a whole lot of deliciousness.
Conclusion
The Asia-Pacific shrimp market is a treasure trove of culinary delights, offering a diverse array of shrimp varieties that cater to every palate. From the bold flavours of Indian Black Tiger Shrimp to the delicate freshness of Vietnamese River Shrimp, each variety brings its own unique characteristics to the table. As demand for seafood continues to rise, these Asian delicacies stand ready to tantalise taste buds and inspire food lovers around the world. So, the next time you're looking to explore new flavours and experiences, consider diving into the rich world of shrimp varieties from the Asia-Pacific region—you won't be disappointed.

Southeast Asian Cuisine: Culinary Delights
Let’s go on a journey through Southeast Asian Cuisine, where each dish tells a story of tradition and flavor. This guide unveils the culinary treasures of Vietnam, Thailand, Indonesia, and beyond. Southeast Asia serves hundreds of culinary delights for those wanting to try new foods and experience different tastes. Exploring the diverse cuisine in Southeast Asia allows people to better understand the history and people of the region. So, if you’re considering visiting the area any time soon, there are certain dishes you certainly will want to take advantage of! Let’s jump in and look at the highlights of some of the essential dishes in the region.
A Foodie’s Journey Through Southeast Asian Cuisine
Tumblr media
Indonesia
Indonesian cuisine is less famous than other regions like Thailand or China internationally (a situation the Economist attributes to varying factors like politics and prejudice). But there are incredible dishes using rich, flavorful ingredients and spices. An Indonesian staple is rice. It may be served steamed, slightly cooked, or wrapped in leaves. Other popular foods include soup, noodles, and dishes like Nasi Goreng and Rendang.
Tumblr media
Rendang is a traditional Indonesian dish originating from Padang. It consists of tenderized beef marinated in coconut milk and traditional species. It certainly is a favorite among people visiting the region. Other notable mentions include satay lilit in Bali. This is a grilled minced meat dish seasoned with chili, lime, and lemongrass. Siomay, a street snack consisting of fish dumplings, sliced potatoes, cabbage, and tofu, topped with a tasty peanut sauce is also great.
The Philippines
Filipino cuisine is more like a fusion of various cultures and influences from Malay, China, and Spain. Some of the more popular choices for those visiting the region include Lechon (roast pig), a staple in Cebu. Don’t miss out on chicken inasal (a charcoal-grilled chicken dish). If you have the chance, enjoy the authentic version in Bacolod. Other tasty meals include adobo (which is marinated meat), and morcon (made from beef, poor, sausages, onions and eggs).
Tumblr media
If you’re visiting Davao, take advantage of the opportunities to try durian. There’s also numerous varieties of durian fruit (consisting of candies, cake, flavored coffee, and more). If you are looking for a new taste sensation, the Philippines is definitely the right choice for you.
Southeast Asian Cuisine – Thailand
The history of Thai food interweaves ingredients and cooking methods from various cultures. The result is a culinary experience that attracts people from around the world. If you’re looking to participate in it, Thai street food is a perfect choice. While visiting, definitely don’t miss out on the roadside stalls where you can try out some delicious options like moo ping (grilled pork), tom yum goong (hot and sour shrimp), Khao man gai (chicken and rice), Khao niao mamuang (sticky rice), grilled skewers and Pad Thai. Head out early in the morning if you want a comforting bowl of jok, a rice porridge featuring pork topped with ginger and onions. Street food allows for a truly immersive experience for those visiting Thailand and wanting to get a unique taste of their culture.
Tumblr media
If you want to explore Thailand, remember that each city and region features something unique. In Chiang Mai, stop and enjoy Khao Soi, a curry soup made with coconut milk served over egg noodles and topped with layered crispy fried noodles. Heading to Northeastern Thailand? Try Som Tam, a mash of tasty vegetables, Larb, and Nam Toke, and salads of meat, rice, lime, and fish sauce. Staying in the central region of Thailand? Well, many describe Bangkok as a “”food lover’s paradise, ” so don’t miss out on everything the city has to offer. If you’re heading South to the beautiful islands, try Sataw (prawns with a unique flavor), Massaman curry, or Khua Kling.
Vietnam
Southeast Asian Cuisine and Vietnam! If you’re traveling in Vietnam, you’ll encounter a range of dishes and flavors that change from North to South. Those in Sagon enjoy bánh xèo (crispy pancakes) rolled with greens and dipped in sweet-and-sour fish sauce, while Hai An Cao Lau noodles are a popular snack. Don’t miss out on the fantastic street food options like banh mi (a sandwich featuring pickled vegetables, fresh cilantro, pork belly, pork floss, and cucumber) or pho (featuring flat rice noodles with beef or chicken cooked in a hearty stock, spiced with clove, and cinnamon and anise).
Tumblr media
Bánh Xèo, emerging from the Mekong Delta and popular in south and central Vietnam, features a batter made from coconut milk and rice. The filling contains pork, bean sprouts, and shrimp. If you still have room, try Che, a dessert sometimes served hot or cold and topped with fruits like bananas and longan. The unique combination of sauces, herbs, and spices creates a memorable experience that captures Vietnamese cuisine.
Singapore

Laos
Laos’ amazing scenery and deep cultural legacy makes it a popular choice. The food is also worth trying out. Laotian cuisine is not as well known in the West. The dishes may seem simple, but it’s quite flavorful, frequently combining fermented pork and fish with chilies and fresh herbs (think mint, cilantro, makrut lime leaf, ginger, garlic, etc.).

Cambodia
When we talk about Southeast Asian Cuisine, we have to talk about Cambodia. The use of different herbs and spices, together with the addition of tropical fruits from the area, define the cuisine. The region’s most popular dishes include lok lak, a stir-fried beef dish; fish amok, which is fish made with banana leaves; and amok, a stew made with kroeung and fresh coconut milk. The cuisine of the area combines a variety of tastes, from spicy to sweet, to produce a flavor profile that is sure to please. You might want to try kangkep baob if you’re feeling more daring. It’s a frog that’s been roasted over hot coals packed with peanuts, chiles, pork, and different spices like garlic and lemongrass.
