post ep 12 I'm even more sure I'm right here (spoilers below):
Mr Bonzo is clearly there, not for the bachelor party, but for the bartender, Ms Jordan, she states that he was making his way directly towards her, flinging the party to the side in the pursuit
she also seemed to be the only one left alive, simply losing a hand, while being extremely traumatised from the first death as the only one who understood what was happening.
If I were to guess at what this all means, I would suggest that the OIAR serves the Mother of Puppets, much the same way as the Magnus institute served the Eye. Perhaps they wanted to make this woman into an avatar of some sort, maybe they wanted to scare her away from something, but I doubt she's insignificant, I absolutely expect her to show up again.
