Tibetan Vegetable Momos 🧡

INGREDIENTS
DOUGH
By @thecuriouschickpea
2 cups all purpose flour, more as needed
1/2 tsp salt
1 tbsp oil
3/4 cup water
FILLING
2 cups (180g) shredded green cabbage
3/4 cup (70g) shredded carrot
1/2 cup (45g) thinly sliced scallions, white and green parts
2 tsp salt, more to taste
1 tbsp minced ginger
3-4 cloves garlic, minced
1/4 cup minced cilantro
4 oz extra firm tofu, crumbled
1 tsp ground black pepper
2 tsp oil

INSTRUCTIONS
Make the dumpling dough: In a mixing bowl whisk together the flour and salt. Add the water and oil and mix the dough until it comes together. Turn out onto a floured counter and knead the dough, adding more flour as necessary, until you have a smooth and barely tacky dough. Put the dough back in the mixing bowl and cover with a damp towel. Let the dough rest for 30 minutes while you prepare the filling.
Add the shredded cabbage, shredded carrot, and sliced scallions in a large mixing bowl. Add the salt and toss to combine. Let the mixture sit for 5-10 minutes, then squeeze out extra water from the cabbage. You can do it easily in a thin tea towel, nut milk bag, muslin or layered cheese cloth.
Dump out the water and add the vegetables back into the mixing bowl. Toss with the ginger, garlic, cilantro tofu, black pepper, and oil. Taste and add salt if needed.
When the dough has rested for a half an hour, divide it in half. Leave one half under the damp towel, and roll the second half out on a lightly floured counter until it is very thin, basically as thin as you can roll it. Lift the dough and rotate, flip and dust with more flour as you roll to keep it from sticking.

Cut the dough into 3 1/2 - 4 inch circles. Remove the scraps of dough and place it back under the damp towel.
Taking one piece of dough at a time, place it in the palm of your non-dominant hand. Put about 1 tablespoon of filling in the center of the dough, then fold and pinch the dough together to form a round momo. If you would like you can pinch the dough together at the end to seal the center, or leave it open as pictured.

I really wanted to try making gnocchi from scratch for the first time...especially after seeing Eva’s (@thecuriouschickpea) recent gnocchi post. I shared a bit of the process in my instastories earlier. They looked pretty decent right? Weeellll....here’s what happened: . I boiled a medium white potato and medium sweet potato together in some water until tender. . While still hot, peeled and mashed the white potato first until smooth, added 1/2 tsp salt, then mixed in 4 tbsps semolina (wheat) flour until it comes together in a light but not sticky dough. Then I cut the dough into equal pieces and rolled them on my gnocchi board dupe to get the pattern, coating the pieces with extra flour. . I repeated the steps with the sweet potato but using 6-7 tbsps flour as it had more moisture. After shaping, I let them rest a bit. . When ready to cook, I boiled some water for the gnocchi. Meanwhile, I heated 1 tsp olive oil in a pan and added 3 sliced mushrooms, cooking them until crispy then removed from the pan. Then heated 2 tbsps olive oil and added 4 minced garlic cloves, 1 tsp fresh rosemary and a handful of chopped fresh broccoli. . Here comes the messy part...I dropped a few pieces of both types into the boiling water and immediately the white potato gnocchi fell apart 🤦🏾‍♀️. The sweet potato ones were fine so I added the rest, boiled them until they started floating then drained. . Now I really didn’t want to re-knead the white potato gnocchi so instead I tossed in the remaining unboiled pieces in the hot pan with the garlic, let them brown a bit then added the cooked sweet potato pieces, seasoned with salt, pepper, chopped fresh basil, mushrooms and tossed them until they were all brown and crispy. . And you know what...the white potato ones came out perfectly with this method...light and tender. I loved the flavour of the sweet potato ones too. Man that was a close call! 😓

In a blender combine all of the ingredients for the queso and blend until smooth. Transfer to a small pot and heat over medium-low until it simmers and thickens. Turn off heat and cover to keep warm. 📋Ingredients⠀
1 lb extra firm or super firm tofu⠀
6 tbsp cornstarch, arrowroot, or tapioca starch⠀
1/4 cup plant milk⠀
BREAD CRUMB MIXTURE⠀
1 cup panko style bread crumbs⠀
2 tbsp olive oil⠀
1/2 tsp paprika⠀
1/2 tsp salt⠀
freshly ground black pepper⠀
1 tbsp fresh minced parsley⠀
BUFFALO SAUCE⠀
6 tbsp (90g) red cayenne pepper hot sauce, ideally Franks RedHot⠀
3 tbsp (35g) vegan butter⠀
1/8 tsp granulated garlic⠀
1/8 tsp salt⠀
TO SERVE⠀
Vegan bleu cheese or ranch style dressing⠀
romaine, sweet peppers, croutons, avocado for salad⠀
INSTRUCTIONS⠀
Preheat the oven to 425 ºF and lightly grease a large rimmed baking sheet.⠀
If using extra-firm tofu press out the extra water: Slice your tofu into 6 width-wise slabs and wrap in a lint-free towel or paper towel. Place some weights over the wrapped tofu, like a heavy cast iron skillet or books atop a baking sheet. Let drain for about 20-30 minutes before continuing.⠀
Cut your tofu into 18 'wings' or ~1/2" sticks. Cut the block of tofu into 6 slices width-wise if you haven't already for pressing, then slice each of those slabs into 3 slices lengthwise.⠀
Put the cornstarch (/arrowroot or tapioca starch) in one bowl, the plant milk in a second bowl, and mix together the bread crumb mixture in a third bowl. Pour some of the bread crumb mixture onto a plate.⠀
Dip each tofu 'wing' into the starch, followed by the milk, then roll in the breadcrumbs on the plate. Place the wing onto the prepared baking sheet and repeat with the remaining 'wings.' Use one hand for the starch and bread crumbs and your other for the milk to keep breading from clumping on your fingers. Add more of the breadcrumb mixture to the plate as needed.⠀
Bake the prepared tofu at 425 ºF for 25 minutes, flip, then bake an additional 10-15 minutes until the tofu wings are nice and crispy.⠀
While they're baking, make the buffalo sauce. Melt the vegan butter and stir in the hot sauce, granulated garlic, and salt.⠀
Put the tofu wings in a large mixing bowl and toss with the buffalo sauce to coat. Enjoy!
