Dooku didn't leave because of the Jedi.
At least, if you're going by George Lucas' word.
In deleted scenes of Attack of the Clones, when we learn about Dooku's departure and his values, there's no mention of the Jedi or "the Jedi Order as an institution".
And every time Lucas refers to Dooku's disenchantment and reason for falling, he doesn't mention the Jedi.
"When you realize that Dooku is Darth Tyranus, it explains what Darth Sidious did after Darth Maul was killed: he seduced a Jedi who had become disenchanted with the Republic. He preyed on that disenchantment and converted him to the dark side, which is also a setup for what happens with Anakin." - Mythmaking: Behind the Scenes of Attack of the Clones, 2002
"[Dooku is] one of the few Jedi who became disenchanted with the Republic and left the order and he is leading a separatist movement." - Vanity Fair, 2002
"I wanted a more sophisticated kind of villain. Dooku’s disenchantment with the corruption in the Empire is actually valid. It’s all valid.  So, Chris plays it as, 'Is he really a villain or is he just someone who is disenchanted and trying to make things right?'" - Starlog Magazine #300, 2002
He probably meant the Republic/Senate in that last one, but you get the point. And you're seeing the pattern, right?
Dooku's problem isn't the Jedi, it's the Republic.
He's become disenchanted with a system that - according to Lucas' prologue in the 2004 book Shatterpoint - worked for 1,000 years...
"For a thousand years, the Old Republic prospered and grew under the wise rule of the Senate and the protection of the venerable Jedi Knights."
... but has been rendered ineffective because of 1) senators becoming corrupt and 2) corporations gaining political power.
"But as often happens when wealth and power grow beyond all reasonable proportion, an evil fueled by greed arose. The massive organs of commerce mushroomed in power, the Senate became corrupt, and an ambitious named Palpatine was voted Supreme Chancellor."
That's the message Dooku runs on, when he rallies the systems to form the Separatist Alliance.
"By promising an alternative to the corruption and greed that was rotting the Republic from within, Dooku was able to persuade thousands of star systems to secede from the Republic."
The Jedi aren't really a factor in his decision to leave.
Why would they be? Their political status isn't very high, they're virtually powerless, as illustrated by the film's narrative and stated repeatedly by Lucas.
On the contrary, as we already established in this post, Lucas full-on confirmed that Dooku actually carries the sympathies of most of the Jedi. Again:
Most Jedi agree with Dooku, ideologically.
As far as the Jedi are concerned, the politicians are effing up the Republic, and it sucks because the Jedi see this but aren't allowed to interfere in the political process. They have to resort to looking for loopholes in their mandates to actually get stuff done.
That's what that whole "she's a politician" scene is meant to hint at. In the commentary of Attack of the Clones, Lucas uses a similar turn of phrase as he does with Dooku.

"[This scene gives us] a chance to talk a little bit about politics and the Jedi’s disenchantment with the political process, due to the corruption and the ineffectiveness of the Senate." - Attack of the Clones, Director’s Commentary, 2002
Considering all this, it becomes clear that the intended narrative surrounding Dooku's decision to leave the Order is not:
"The Jedi are dogmatic and asleep at the wheel except for Dooku, who is ahead of the curb and sees the system is flawed, so he left."
It's actually:
"ALL Jedi see the system is flawed, Dooku's the only Jedi who decided to take it a step further and leave the Order so he can try to get into politics himself and change things."
That's why they hesitate to accuse him of murder.

That's why in an earlier draft of the Attack of the Clones script, by the end of the second act, Mace STILL has his doubts that Dooku would sign a treaty with the Trade Federation to attack the Republic.

As far as the Jedi are concerned, Dooku is out there fighting the good fight, making noise because whenever they try to protest it falls on deaf ears... until his betrayal on Geonosis.
After all, let's not get it twisted: the Dooku we're introduced to in the films and The Clone Wars, isn't really just Dooku anymore.
He's Darth Tyranus.
A point Lucas makes sure to highlight in his Shatterpoint prologue:
"Unbeknownst to most of his followers, Dooku was himself a Dark Lord of the Sith, acting in collusion with his master, Darth Sidious, who, over the years, had struck an unholy alliance with the greater forces of commerce and their private droid armies."
It's not about doing the selfless thing for Dooku, anymore. He's knowingly part of the problem.
He's all about ambition, now. His personal goals are things like overthrowing Sidious and becoming the most powerful Jedi.

Dooku - like all other Sith, and like the very corporations and Senators he had sworn to destroy - is consumed by his own greed.

It’s been how long since you had stopped by? Months, probably. Can you believe it’s been almost a decade since the last time we did one of these? Regardless, I hope this finds you well. 
Life update: how’s the volleyball club you decide to sign on? I hear the Latin America clubs have their eyes set on snagging a European title. Ever think of coming to play here? ‘M sure Ushiwaka would like a chance to play against you. You’re all giants in the modern generation. Remember the time we all made captain? That was fun. I’m sorry you didn’t get your ticket to nationals during our time at Seijoh, but I am glad you earned the right to play in the Olympics back at home. 
As for me? Apparently, volleyball and diving are two different events with their own seasons. I play in a neighborhood league nowadays since my injury. I received so many well wishes and support from the old group…Except yours. You never sent me one, but I was reassured by the others (Iwazumi, Mattsun, and Hanamaki) you sent your regards. I guess we were really antagonistic in our attitudes toward the end of that year. 
The year that changed everything with the way life called us all to different paths made the choice so clear. You went to Argentina to chase golden sand and I left to Italy to pursue my own dreams. If you’re wondering how I got this address of yours, thank Hanamaki and Mattsun for continuing their OTP-jar to get us to talk to one another.
In case you didn’t know or no one has said this to you in a while: I’m sorry for gloating I got into the university league before you got accepted in Team Argentina… Also, I apologize for this next part too. Can you open your front door?

The taxi driver is still counting his bills that you paid him for. Nights outside here in the quiet suburb of Buenos Aires have you sort of thankful you packed a jacket on your red eye flight. You glance down at your shoes., These were the ones with flower design, but since your accident on the train service going to an away game in Milan, the one on the prosthetic left knee seems a little loose. You hear the unlocking of the door in front of you and when the door pulls back, you rise to meet the recipient of your letter. OIkawa Tooru, proud starting setter of Team Argentina, protege of the Blanco, in his pajamas at two in the morning stares at you.
“Sixteen hours,” your voice cracks under the weight of his gaze. He leans against his door frame before he reaches out a hand; his breathing suggests he’s just stunned–like the first time he received your letter. 
Oikawa Tooru hasn’t seen you in the same span of time. The last time you were in the same room, you had a shouting match with him and he told you to disappear. Or was it, “go to hell?” He couldn’t be any more upset with himself when he saw your shoulders slump and you really did make good on your word. From what you can infer, there are clippings of your accomplishments on a corkboard and his own are next to yours in a trophy case. 
“How?” His voice is gentle like the breeze at dawn.
“Our friends,” you search your bag for the postcard attached with the plane ticket to Buenos Aires. “Want us to be amigos?”
Oikawa chuckles at the way your lips formulate around the word for friend. 
“I never should have fought with you,” he says when he lets you inside his home.
“We were seventeen, reaching for the stars, or something like that,” your bag is on the loveseat and you sit side by side with him on his actual couch. 
You both swap stories of the last decade and in the end, he realizes just how much he missed. A void in his heart he once confided in Iwazumi must have gotten out when the Seijoh reunion in Sendai. That was a pinnacle where when you walked through the door of the pub, limping a bit and though the male counterparts of the sports cheer for your triumph, you persisted in leading your group-division of paralympians to victory. Oikawa hears this all second hand afterall, but now you’re here–in his home.
“And you’re ok?” you ask him. You try to not notice the box of take out, the soiled dishes in the sink, the box of tissues from the last change of seasons. “Oikawa…?”
“...not ok,” his smile falters. “But I’m relieved you’re here, chibi-chan.”
“Me too,” you give him a comforting smile before you cup his cheeks. You press your lips to his brow after he whispers it’s ok especially since you’re quieting his overstimulated mind.
He lets you embrace him and for the first time in what seems like a lightyear, the animosity isn’t there. The misunderstandings are forgiven when the stars collide in a tiny abode on the outskirts of the Argentine capital.

ENT Rewatch Starlog, 25 February, 2024: Episode 3.15 “Harbinger”
Trip is taking what he’s learned from T’Pol’s neuropressure sessions and having his OWN sessions with Corporal Cole of the MACOs. She expresses interest in taking it further, but has also gone to Phlox to mention she’s been having headaches afterward. Phlox informs T’Pol and suggests she try to undo Trip’s missteps with the Corporal. T’Pol gives her very unhappy stoic face.

Meanwhile, Major Hayes of the MACOs has approached Archer about providing combat training to senior Starfleet officers, which Malcolm takes to be an attempt on Hayes’ part to take over ship security. He grudgingly goes along with it, but the sessions prove to be escalating one-upmanship between the Starfleet Lieutenant and the MACO Major. 
While all THAT interpersonal drama is going on, Enterprise discovers an enormous cluster of spatial anomalies equidistant between five spheres.

They pick up a life sign in a small pod just inside the anomaly, and with some dangerous moves manage to retrieve an unknown alien. He claims to have been a prisoner from a different dimension of space who was forced into the pod. Archer begins to think some of those myths about the Sphere Builders returning D’Jamat and his people from “Chosen Realm” discussed might be somewhat true, and this alien may be like a canary in a coal mine to see of the spheres are changing local space to be what those builders need. 
After various shenanigans and awkward discussions between T’Pol, Trip, and Cole, Trip and T’Pol are conducting a neuropressure session where she reveals that Sim—the Trip clone from a few episodes back—told T’Pol that Tucker has feelings for her. After some repartee, T’Pol kisses Trip, and disrobes, and the two have sex.
Meanwhile, Hayes and Reed are in the gym sparing and the testosterone takes over, and it becomes a brawl that spills into the corridor. About that time though, the alien reveals himself able to phase through matter and walks to engineering where he proceeds to reach in and damage the warp core. Fresh from their fight, Malcolm and Hayes manage to tweak the engine to zap him and stop him.

The Alien reveals he was there to stop the NX-01, and when the Xindi destroy Earth, his “people will prevail,” before phasing completely out.
Trip and T’Pol have an awkward coffee together where she says their encounter was basically her just exploring her curiosity about human sexuality, but Trip does think they should continue neuropressure. Archer dresses down Malcolm and Hayes, who seem to have resolved their differences after their own physical session.

Rare to see a Trek episode that has an A, B, AND C story going on all at once. The parallels between the Trip/T’Pol and Reed/Hayes stories do not however seem coincidental. Yeah, I’m a T&T shipper, though some of T’Pol’s very human jealousy here seems more than a bit forced, I’m not sure the eroticism between those characters was any more dramatic than between Reed and Hayes when they were fighting. Jesus, guys, just kiss already. Archer leaving them in his quarters after his lecture without dismissing them, and neither wanting to leave drives the point that these two are really pretty similar home.
But T&T DOES finally consummate here including a scene that shows about the top third of T’Pol’s bare “bum,” that as I recall was actually edited in some parts of the country; how quaint.  Some of how this all plays out I think does weaken T’Pol’s character a bit, but I guiltily accept it as these two are on my OTP list, so what can I say? 
Meanwhile, there is an age-old Trek foible here that I will never quite understand. What keeps an alien (or flashing back to TNG in the episode “The Next Phase” Geordi and Ro) who is phasing—seemingly uncontrolled as he can’t control his disappearance at the end—from falling through the floor?  Or staying in one point in space while the ship moves around them, since surely gravity and inertia won’t work on them too?  How can he use hands to climb the ladder to get on top of the warp core, but put his hands through the top to reach in a reach havoc? OK- MAYBE in this case he has more control over the process than they indicate so he’s just CHOOSING to have the bottom of his feet only phase for walls and not floors, but…it always makes me shrug.

do you remember what captain yang jaewon was like on his birthday, three days ago?
cigarette between his fingers, smoke in his mouth, he strides long-legged through the ship, not afraid to make his noise, his thunder, his boots storming over the metal grating like they belong to it— and they do.
eyes are sharp, eyes are quick, eyes are gold and black plated, too busy for you and all your concerns, questions, answers, comments.
he is the same as every other day because every other day is the same. a year comes and goes and jaewon grows more and more into the man he is, despite how many deaths he narrowly escapes.
there are days that have given him growth and a “birthday” has never been one of them.
when they found him beside the dumpster, they decided he was probably about five; no memories to speak to his name or his real age, no faces of whoever had been with him before, no tales in his head or wake in his step— no one searching for him.
“did i ever have a father?” he asks later, much later, a small mumble under heated breath, whispered into a cloth wrap around his head, while he curls against lyona, the boy with eyes bluer than the sky.
“we’re your father now,” is the only answer. jaewon isn’t even sure lyona knows what the word father means.
on the worlds he’s traveled to, the cities he’s stolen from, he watches children celebrate their birthdays and becomes convinced it’s some sort of ridiculous ploy, a joke, a lie, like the one they tell about a fat, red man bringing toys to every kid on every planet in the solar system. stupid. insipid. wasteful.
“when’s your birthday?” vera asks one afternoon in december, while she’s showing him crew members’ starlogs, wanted posters with their names and dates on them.
“i don’t have one,” his tone offhand, dismissive, uninterested. he’s never celebrated something that useless and he doesn’t intend to.
“you ought to pick one,” she tells him, like it’s important.
“why?” eyebrows furl over dark eyes, still boyish but too seasoned for their own good.
“life is short and hard and ugly, and it’s never going to get any better. celebrating things is how people cope.”
“i don’t need to cope.” he’s ready to snarl, ready to battle on this, because every hill he mounts is one he’s willing to die on, but he can see the argument leave her face, ready to drop the topic because she’s not one for meaningless confrontations like he is.
he wants to be just like her, wants to emulate her, and now a sudden weight drags on his chest, the need to not let her down with this somehow. a beat pauses between them.
“yesterday.” his eyes drop. “i’ll say my birthday is yesterday— that way i don’t have to think about it again for another year.”

The Sith don't want peace.
I've seen some fans use the below quote by Lucas in the Revenge of the Sith director's commentary to frame Darth Sidious/Sheev Palpatine as "evil but with well-meaning intentions".

"Lord Sidious thinks he's bringing peace to the galaxy because there's so much corruption and confusion and chaos going on. Now he's gonna be able to straighten everything out, but the price the galaxy is gonna have to pay for it is way too much."
And uh... no.
Sidious thinking that him ruling the galaxy will bring about peace as a byproduct and him wanting to bring about peace are two very different things.
He's not doing what he does for altruistic reasons. He's a selfish dick who is saying that technically the galaxy won't be fighting anymore and the corruption in the Senate will be quelled... because of course it will be, they'll all be under his thumb in his totalitarian regime.
So Palpatine is not lying, but he's not being genuine either. And that's his whole schtick.
"The Jedi are holding you back, Anakin." Yes, because Anakin has a tendency of flying off the handle, mainly because you enable him to give in to his darker instincts, Sheev!
"The Jedi are trying to take over!" Temporarily? Yeah. Because you're a dictator who orchestrated a war and cemented division across the galaxy, and everyone behind you is corrupt to the bone, SHEEV!
He's not Thanos or Killmonger, he's not the "if you think about it, he's actually a good guy who took it too far" villain.
This is a modern myth with a binary view of good and evil. He's Iago, Jafar, Freezer. He's not "gray", he's the classic "he's evil because he can be" villain. The Emperor is the Devil. As stated by Lucas himself:
"Palpatine is the Devil. There’s no fall from grace there. He’s the evil one." - Starlog Magazine #337, 2005
And the Sith are not pragmatists or people who try to bring positive change using their passion. They're not "free thinkers" who "follow their own path". They're not "religiously persecuted for pursuing knowledge beyond the dogma of the Jedi".
And this battle between the Jedi and Sith, thousands years prior to the films ⬇️...

... it didn't happen the way it's shown in the comic panel. That's Sidious showing horrific unreliable visions to Maul - a child - to indoctrinate him into hating the Jedi.
You know who does that? A cult. That's what the Sith are.
Hell, their code was partly based on Mein Kampf.

The whole "the Jedi 'limit' but the Sith 'embrace' and that's why we're being hunted down" line is just that. A line.
It's what the Sith tell themselves to justify the fact that they fucked with Dark Magic, got corrupted, and are now making it everyone else's problem.
"The Sith are people who are very self-centered and selfish. [They] learned how to manipulate both sides of the Force, and then they fell into the trap of being corrupted by the dark side." - Sci-fi Online, 2005
Which is why the Jedi step in, to stand up to them.
"The Jedi are the enemy of the Sith because the Sith want to dominate the galaxy, to control everything, and for a thousand years they have had a plot against the Jedi." - Sci-fi Online, 2005
The Sith just wanna subdue and control everyone around them, including the Force itself, to fashion the galaxy in their image.
"The end game for the Sith was to bring the world into a very selfish, self-centered, greedy, evil place, as opposed to a compassionate place." - James Cameron's Story of Science Fiction, 2018
So sure, have fun with your The Old Republic OC, go to town.
But when it comes down to it, when we're talking about the intended narrative (I'm looking at you, The Acolyte):
The Sith don't care about peace, they're literal religious extremists.
While some Sith may say they're misunderstood and some may justify themselves as being altruistic... at the end of the day, they're objectively not. They're greedy, power-hungry and self-centered.
They're the anti-theme to Star Wars' theme of "be compassionate".

ENT Rewatch Starlog, 27 April, 2024: Episode 3.21 “E2”
An elderly Vulcan woman sits in her quarters as a younger Vulcan man comes in to report they failed to stop the probe. The woman laments that 7 million people are going to die and we see this is T’Pol, old beyond old. She looks to the Vulcan man and says, “We must find Jonathan Archer.”
On the NX-01 we know, Trip confronts T’Pol about avoiding him, and wants to be supportive, knowing something is wrong. She resists his efforts. Soon after, as Enterprise gets closer to the Kovaalan nebula, which contains the subspace corridor Degra has said to use to get to the Xindi Council; they see there are far more Kovaalan patrol ships than they anticipated. They are suddenly approached by another NX class vessel which they realize is a heavily modified version of Enterprise.

The Vulcan man, Lorian, introduces himself as Captain, and his first officer as Karyn Archer; when Enterprise enters the subspace corridor, the composition of their engines will cause the ship to be thrown back to the year 2037. The crew will decide not to contaminate their timeline, and they become a generational ship trying to themselves prevent the Xindi from completing their mission. It’s why the Xindi have believed their are multiple Starfleet vessels in the Expanse. Lorian offers to instead upgrade the NX-01’s engines to allow them to travel fast enough to not need the subspace corridor, and work begins with him revealing to Trip that his parents are in fact Tucker and T’Pol.

The elder T’Pol asks to see Archer, and gives him data for her younger self. Checking the numbers, she has realized that the modifications Lorian suggests won’t work, and has instead worked out a method to allow Enterprise to pass through the corridor as intended. When confronted Lorian resists, to the point of planning to disable the present Enterprise and go to the council himself. Archer comes out on top in the fight, and they begin to proceed with a plan where the past Enterprise will help defend the current against the Kovaalans. 
The two T’Pols meet and the elder tells her younger self that she does get over the Trellium addiction, but she NEVER loses the emotions she has awakened.  The elder recommends T’Pol seek support from Trip Tucker, a human who cares.

The two NX-01s enter the nebula flying close so the Kavaalans thing one is a sensor shadow and are taken by surprise fighting two ships. Lorian maneuvers to hold off an attack while Archer takes his ship through; they are successful and not thrown back in time.

They wait for Lorian’s ship, but it never emerges. Archer and T’Pol debate whether the second ship was destroyed by the Kavaalans, or ceased to exist because THIS NX-01 broke the cycle. Degra’s ship arrives to escort them to the Xindi Council.

This may be the best episode of the season. Great character studies, intricate science fiction plotting, moral conundrums, and some terrific performances. You immediately feel for Lorian and our crew’s decedents, and the show has a little fun revealing who would eventually end up with whom (sad moment though for poor Malcolm as he finds out he dies alone…kinda broke my heart). 
The performance by David Andrews as Lorian is thoughtful, stoic enough to believe he has Vulcan blood, and nuanced enough to sell the Tucker connection. The stubbornness I will assume the character gets from BOTH parents! Jolene Blalock as always kills it, but her elder T’Pol under layers of makeup is sold not by that effect but by her manner and demeanor. The modifications on the older NX-01 look great, and it’s just all around a well produced episode. 
An interesting connection here (and please know, I did NOT notice this myself then or now, but saw the call out on the Wiki): The Kavaalan ships are the same ones used by the “Silent Enemy” in season 1, indicating that the Xindi are NOT the first Expanse aliens to trouble the Earth Starfleet.  I don’t recall seeing that expounded on in any of the Beta Canon sequel novels (most of which I love) but I would love to see it addressed somewhere. 
Something else I’d love to see: That the E2 made it. That she was neither destroyed nor erased from history (because let’s face it, modern Trek shows us the timeline on Trek is MUCH more malleable that we previously believed) but just knew they had to be careful not to now influence the corrected timeline…Maybe another Enterprise a century later could find Lorian and Karyn Archer’s child commanding a sturdy old starship, nearly unrecognizable after a hundred more years of cobbling together, but still emblazoned with “NX-01.”
