Sourdough pumpkin chocolate chip cookies
Grade: B+
The shaping wasn’t the best and the texture is softer because of the yogurt, but I didn’t burn them and they tasted fine if a bit cinnamony.
Recipe: sourdough discard pumpkin chocolate chip cookies from Make It Dough
Modifications: some coconut Greek yogurt for butter; reduced sugar; addition of ginger and pepper

Do you like baking? If so, what kinds of things do you like to bake?
I bake a lot, but that's not so much a question of what kinds of things I "like" to bake as "what kind of stuff I can reliably turn out". I bake the stuff I want to eat, rather than cooking from my cookbooks. I think in practice I like to bake stuff that tends to be both easy/not too messy (ideally) and good enough to eat, rather than trying to make a "good" product to show off my cooking skills. I really liked baking as a kid (I had this dream where I made really complicated stuff and became famous and the whole internet was like "I baked that!!"), but then I got distracted and never really did more than make little cake pops.
Anyway, some things I bake:
Little cake pops/cupcakes, because they're easy and I like how they taste
Brownies, because they're easy and tasty. I'm kind of embarrassed about this, because brownies are my go-to example of really mediocre food when other people are talking about their good food experiences. (I'm also usually making them because I'm making too many cookies or cakes at the time and my "cookies for people who get home late" instinct is coming on.
Scones, both because they're easy and because my mother told me I can make scones with butter on the stovetop. This is a useful skill, and I also have a tendency to make them with sourdough and jam, which is delicious when I'm in the mood.
Apple pie, because it's the kind of thing you can do on the stovetop and be done in a short time and it's pretty and tasty. I often make this as dessert for people when they're visiting me when I'm staying up all night, because they like the way it tastes but I can't eat more than like two pieces before my brain starts shutting down at like 2 AM.
Kuchen, which is basically just German chocolate cookies but I can make them in the oven.
Pumpkin pie because I think it looks good and that it would probably be really tasty, but also because my mom and I like the smell of canned pumpkin
Chips (for potato chips, for some reason)
Muffins because they can be done in the oven and they can be a lot of different flavors, plus I can sometimes make them with mashed potatoes, cream, and cheese?
I'm sure I have other favorite things I do not bake enough of. They are probably things I have learned to make rather quickly (which has its own charm, although it does sometimes lead to my feeling like there is nothing else to bake), like cookies with brown butter and cinnamon. (Or, as my sister put it the other day: "you bake this cookie recipe about 10,000 times before you get it right. And then you bake it about 100 times.")
I should also do things like making jam, to the point that I have a recipe for my favorite jam already- I don't know why I don't make it more, but I should do it. I also don't really buy stuff from the fancy jam/butter/chocolate section.

mandatory afternoon treat was a seedy, oaty, whole wheaty chocolate chip cookie from the freezer stash, shown here missing from the tray
dinner! was whole pumpkin soup! i roasted a whole trader joe’s decorative pumpkin for like 2 hours with a mixture of milk and broth, sage, garlic, and pumpkin guts and then broiled jarlsburg on top. had with a pile of salad featuring whole lemon vinaigrette and chopped walnuts! a delight. and seltzy.

New recipes: week of 10/24/22
After a bit of a slump, finally testing out new recipes again.
Blueberry and lychee Italian ricotta cheesecake
Grade: B+
I had some lychees to use up, so I combined lychees and blueberries together since that was apparently not an outlandish flavor combination.
The small cheesecake didn’t have cake strip so it cratered, whereas the big cheesecake might’ve still been in the oven (after turning it off) for too long so it cracked.
In terms of taste, not a big fan of my cornflake crust which didn’t have the right flavor or texture. I would do oatmeal or cookie next time. Mom loved the taste of the berry sauce though.
Recipe: creamy Italian ricotta cheesecake from Baker by Nature
Modifications:
Cheesecake: more ricotta cheese than cream cheese; reduced sugar; whole egg instead of egg yolk
Berry sauce: lychee syrup instead of sugar and water
Crust: cornflakes instead of graham crackers; accidentally used wayyy too much butter

Sourdough pumpkin chocolate chip cookies
Grade: A-
The shaping wasn’t the best and one batch was a bit burnt on the bottom, but otherwise the flavor and texture worked nicely.
Recipe: sourdough discard pumpkin chocolate chip cookies from Make It Dough
Modifications: some duck fat for butter; reduced sugar

May I have a word with whoever is placing the orders at work? Don’t get me wrong. I like having less things to do. But, this is sad.
First of all, we did not receive flour - freaking flour, which I only use to roll the pre-made baguette and ciabatta dough in and to sprinkle on the rustic sourdough or whatever it’s called, but it’s a bakery - on the past two trucks. One of my bosses had to bring some from another store twice. And, then there’s the frozen/refrigerated stuff:
crumb topping, which technically could have been brought in but is only sprinkled on top of the tomato basil bread so no big deal
pastry rings, which we don’t sell that often anyway
cranberries, which until we get the new recipe versions, are not already mixed into the cranberry orange muffins
pumpkin muffins right at the start of pumpkin season
chocolate chip muffins, so no muffies (muffin tops)
basically, if you’re hungry for a muffin, you get blueberry and don’t complain XD
bear claws; last night I made two because that’s all we had
cinnamon rolls; I had just enough to make the required amount last night
technically, we still have pecan filling but only enough to make three or four pecan braids
chocolate chip cookies; only because a catering order required 72 of them; I only had 56
Luckily, last night’s truck brought in crumb topping, cookies, bear claws, cinnamon rolls, and - get this - two big bags of flour. No muffins or pastry rings. Granted, I could have missed them since they leave the boxes stacked on top of each other and our freezer is small, but I don’t think we have them.
Again, not complaining, less work for me, frees me up to do some extra stocking and cleaning, but come on.

8 ZERO-WASTE SNACKS FOR KIDS
These simple healthy snacks will satisfy even picky eaters. Fill little bellies, not garbage bags! 🍊 A piece of fruit Snacks and meals need not look like winning contenders for a high-pressure reality TV cooking show. Feeding your kids fruit as a snack simplifies your life. 🌱 Vegetables and hummus If you have started down the zero-waste rabbit hole, we bet you have increased your hummus intake. Homemade hummus tastes delicious and eliminates gazillions of plastic tubs generated by the store-bought stuff. 🍫 Sourdough crackers These also go well with hummus. Or any dip. Or on their own. To make these, you will need to start and nurture a sourdough starter. Learn how to do that here. When you feed the starter, you accumulate inactive starter that cannot make bread rise. 🍟 Roasted chickpeas Chickpeas and hummus are an easy means to help consumers meet the recommended 1.5 cups of legumes per week… Consuming chickpeas and/or hummus may help prevent or offset the development and progression of several chronic diseases (CVD, type-2 diabetes, etc.). 🍪 Granola bars Adjust them to your snackers’ preferences. Add cranberries, omit the chocolate chips—or keep them—toss in a bit of dried coconut or leftover pulp from making coconut milk, change up the nut butter… 🍪 Granola Or just snack on granola itself. Top it with fruit and yogurt if desired. 🌰 Roasted pumpkin seeds To make these, remove as many pumpkin (or squash) chunks as you can from the seeds. Toss the seeds in olive oil to coat, along with salt and if using spices. Spread in a single layer on a cookie sheet or glass tray. Roast at 350 degrees Fahrenheit for 20 or or 30 minutes, stirring every 10 minutes until golden and crunchy.
🌽Stove-top popcorn Into a medium-size saucepan, add 1 teaspoon of salt (or to taste), 1/2 cup popcorn kernels and two tablespoons coconut oil or olive oil or a combo of the two. Put the lid on the pot, turn the burner to high heat and shake the pot continuously. Once the kernels begin to pop, they will pop quickly, in about a minute. -------------------------- Visit our website: https://zerowasteinitiative.com/ Source: Internet

Note
Top three things to bake!
Categorically- breads, cookies and pie
Specific items- Sourdough (though I have yet to make a successful base that would keep over an extended period), basic chocolate chip cookies (I have made them literally hundreds of times. I feel I pour the most love into chocolate chip cookies)
Pie I'm going to break down
I love making pumpkin pie because it is William's favorite and watching him eat it brings me a special kind of joy.
I love practicing apple pie, because it's my favorite to eat and I haven't perfected the recipe for the filling yet. But I'm the only one who eats apple pie so I don't make it often....which is probably why the recipe hasn't been perfected...hmm
I get a rediculous amount of enjoyment from making pecan pie because I can line all the pecans up perfectly and it fills a void in me.
