The burden of responsibility
I will freely admit, I have a bit of a soft spot for Lord of the Rings! It’s also fun to try and recreate a scene from a movie, however those that have tried will know it can be quite challenging. When I saw this image from @circus_robot, I just had to stop and look around this fantastic recreation of the iconic scene from Return of the King. From a MOC building perspective, this recreation of the Gondor Throne Room is just incredible. It is so faithful that it actually looks like the real movie set itself! I could talk for ages pointing all the little details and fantastic build techniques on show. Not only is the build great, but the lighting and composition is perfect too. As a vertical shot, you get to take in a lot of details, but it never distracts from main point of focus. Shot with a slight tilt to the left, the position of Aragon and the staircase gives a subtle, diagonal, leading line that draws you upwards to the throne. The subtle lighting coming from the left illuminates enough of the scene without ever overpowering it. The lighting also converges onto the throne as well. As our eyes are naturally drawn to the brightest sources of light, we are further encouraged to look up with Aragon at the throne. You can almost feel the weight of the responsibility on his shoulders (or those that have read the books will at least!).

If I was writing the 60 special of General Hospital
I just finished watching the 60 special, and it was great, but it could have been amazing. Here is what I would do: 
I would have asked for it to be more than 60 minutes. Ninety minutes would have worked. 
For the host and moving it along. It was a choice to make it LW. You should have done beloved fan favourites. I would have done the following: 
Becky and Kelly or Genie and Jane or Tabyana and Nicholas. Those would be how to make most of the fanbase happy. 
I would cut down on the guest people and Stephen A. Smith. You could have done a small two minutes on some of the most famous people. John Stamos was an excellent choice to do that part. 
The part of the dancing should have been Kelly and Finola talking about guest and cast performances. 
More old clips and talking about families such as the Hardy-Webber, Quartermaine, Cassadine, and Spencer. 
Here's how I would have done it. (I love the energy Kelly and Becky have in scenes together, so that I would have them) 
Becky and Kelly are getting ready for the show, and both are in their most iconic or favourite outfits. (Becky could be in one of her wedding dresses or nurse ball dress, and Kelly could be too.) 
Becky starts it off with the Hardy-Webber family and how Dr. Steve Hardy started the show, and you get clips of the family members and the first clip of the first episode. Then Kelly added that it began as a hospital show, but it grew into more, and then we get more clips of the Cassadine-Jermoe families and the cops and others. 
But I would have Kristen Storms jump in and talk about the fantastic guest stars and famous people they had on, such as Elizabeth’s father, Richard Dean Anderson and John Stamos. That was when I would have John Stamos talk about getting the role and the other famous faces. Clips of Richard Dean Anderson, John Stamos, Demi Moore, Ricky Martin, Meghan Markle, Jonathan Jackson, Nathan Parsons, Rick Springfield, and lastly, Amber Tamblyn, who introduces the Quartermaine where she meets up with Wally, Rene, Jane, and Lisa at the Qs where they say a line if these walls could talk. This could lead to wedding dresses, with Lynn wearing her famous wedding dress.
Becky, Lynn, Brook, and Kristina are wearing their iconic wedding dresses with others such as Nancy, Laura W, and Katelyn in theirs. I would still have the same clips but with Brook talking about the first interracial wedding in the daytime. And showing iconic wedding clips such as Tom Hardy’s wedding, Steve and Audrey’s wedding, Drew and Sam’s wedding, Tiffany and Sean’s wedding, Laura and Kevin’s wedding, Scott and Laura’s wedding, Luke and Laura’s wedding, Monica and Alan’s wedding, Robert and Anna’s wedding, and one of Sonny and Carly’s wedding. And I would have Cynthia in one of her wedding dresses from Valentin and her wedding about almost weddings with clips such as Kate and Sonny’s wedding, Drew and Elizabeth’s wedding, Valentin and Nina’s wedding, and Patrick and Sabrina’s wedding.
Here is where I would have Genie host a segment on the Cassadine and Spencers as her wedding clip to Luke finishes with Helena's curse, and we have flashbacks to the war between the families and how other families get involved. I would have Nicholas C join her with Hudson, and they joke about what comes next for the Cassadine-Webber-Spencers war. 
Tristan joins them and jokes with Hudson that their character has something in common, such as coming back from death, and they have clips of characters who have done that. This is where I would have the Steve B announcement, but I would have Hudson and Asher, Jason’s sons, to make the announcement. 
The next segment I would do is about parties and events in PC that never go well with Dominic and Josh. The part of the dancing should have been Kelly and Finola talking about guest and cast performances at the Nurses Ball.  Donnell joins them, and talks about those making good Emmy reels, and they talk about General Hospital wins at the Emmys. 
Maurice, Laura, and Jon talk about iconic storylines about serious topics, and they show clips which I would like to lead into a clip of an upcoming storyline about Adam’s storyline. 
Rick and Kin talks about all of the ones the shows have lost in real life with clips, and I want them to include Billy Miller in this one. I would have Jane and Genie join them with Kristina, Tristan, and Finola as we have them honour long-standing characters. 
Becky and Kelly return and have a segment about fans' favourite storylines where they ask fans. 
Tanisha and Jon talk about babies, how we watch characters have kids and how it is always so dramatic. We have clips of all the main cast who give birth on the show of their most dramatic, such as Elizabeth with Jake and Aiden, Sam with Danny and Scout, Maxie with Georgie, James and Bailey, Alexis with Kristina and Molly, Carly with Michael, Morgan, and Josslyn, Robin with Emma, Felicia with Georgie and Maxie, Monica with AJ, Lucy with Serena, Sabrina with Gabriel, Olivia with Leo, and Britt with Rocco. 
I still have Cynthia and Maura do the bloopers and the ending of the special because that was done well. And the end of the whole thing should be a clip of the upcoming Bobbie’s episode.

18. Favourite piece of Sherlock Holmes related trivia? I don't know much trivia I'm afraid, as I also mentioned when asked this before... I do find it endearing whenever actors who play Holmes and Watson genuinely become close friends, such as Basil Rathbone and Nigel Bruce or Jeremy Brett and Edward Hardwicke.
19. Favourite Sherlock Holmes supporting/one off character? First and foremost I'm a big fan of all the dogs that make an appearance, especially Toby (The Sign of Four); he actually has the same name as my own dog, so he's extra dear to me. I'm also incredibly fond of Violet Hunter ("The Adventure of the Copper Beeches"); I thought she was such a wonderful and cool character, and there are several other young women that stood out to me. There's her namesake Violet Smith ("The Adventure of the Solitary Cyclist"), Irene Adler ("A Scandal in Bohemia") is of course iconic, as is Kitty Winter ("The Adventure of the Illustrious Client") and while Lady Brackenstall didn't stand out to me in the original story ("The Adventure of the Abbey Grange"), I really liked her in the Granada series! I also love the nameless woman in "The Adventure of Charles Augustus Milverton" who shoots him. Good for her! Then there's poor Nathan Garrideb ("The Adventure of the Three Garridebs"), Mr Melas the title character of "The Greek Interpreter"... Oh, there's far too many I like! I should probably shut up now.

LOS ANGELES
The final, cringeworthy season of “Curb Your Enthusiasm” and a documentary on Run-D.M.C. are some of the new television, movies, music and games headed to a device near you.
Also among the streaming offerings worth your time as selected by The Associated Press’ entertainment journalists: Donald Glover starring as a spy in the new TV series “Mr. & Mrs. Smith” and a documentary about the making of the charity megahit “We Are the World.”
— Regardless of whether you think the 1985 charity anthem “We Are the World” is great or not, the making of it is fascinating. Director Bao Nguyen got access to never-before-seen footage and new interviews with Lionel Richie, Bruce Springsteen and Cyndi Lauper to help tell the story of how famous musicians, including Michael Jackson, Bob Dylan, Diana Ross and Stevie Wonder, got together one night for a marathon recording session. Nguyen told the AP in a recent interview that “The Greatest Night In Pop" humanizes "some of these icons that we’ve sort of idolized over many generations.” It’s on Netflix.

— So Greta Gerwig didn’t get a best director nomination, but the good news is that the Criterion Channel has a new series starting Thursday about some of the “Lady Bird” and “Barbie” director’s favorite films. Gerwig’s “adventures in moviegoing” includes David Lean’s “Brief Encounter,” Michael Powell and Emeric Pressburger’s “The Red Shoes,” Max Ophüls’ "The Earrings of Madame de…” and Claire Denis’ “Beau travail.” The channel also has a series on “Interdimensional Romance” with films like “A Matter of Life and Death,” “Wings of Desire,” “Eternal Sunshine of the Spotless Mind” and both versions of “Solaris.”
— And for those who were curious about “Dicks: The Musical,” but not enough to bite the bullet on a movie ticket, it will be streaming on Max starting Friday. In an article about the movie out of the Toronto Film Festival, AP Film Writer Jake Coyle wrote that this “Dadaist riff on ‘The Parent Trap’ … may be the most demented riff on a familiar story yet. The film … has been called the most gonzo movie of the year. It’s lewd, ridiculous and surreal. Hanna-Barbera was an inspiration.” Josh Sharp and Aaron Jackson star alongside Bowen Yang as God, Megan Thee Stallion, Nathan Lane and Megan Mullally.

— Bob Marley & The Wailers, The Clash, Beastie Boys — what do these legendary artists have in common? They owe much to Lee “Scratch” Perry, a pioneer of the dub music scene celebrated as one of reggae’s founding fathers. Perry (real name Rainford Hugh Perry) died in 2021 — but during the pandemic, he worked on new music material, which will be posthumously released in his final album, “King Perry,” out Friday, Feb 2. It features guest performances from Greentea Peng, Shaun Ryder, Tricky, Marta, Rose Waite and Fifi Rong. The final track, appropriately titled “Goodbye,” is Perry’s final vocal recording — an ambitious and celebratory song that features Perry repeating his farewell over and over again. It’s a fitting coda, and still an experiment, bringing his reggae into synth wave, drum’n’bass, big beat, and electronica. Even in death, Perry is looking towards the future.

— When you’re done streaming “The Greatest Night in Pop” (see above), stay in the musical mid-’80s with “Kings from Queens: The RUN DMC Story.” This Peacock original documentary offers a close look at the early days of Joseph “Rev Run” Simmons, Darryl “DMC” McDaniels, and Jason “Jam Master Jay” Mizell's revolutionary group — finding inspiration in the streets, bringing hip-hop to the masses, and, in doing so, validating and legitimizing what will soon become the most popular style of music — and assisting in turning it into a billion-dollar business. Let’s face it, “It’s Tricky to rock a rhyme, to rock a rhyme that’s right on time,” is both an earworm for the ages — and some astute musical analysis.

— The new Amazon Prime Video series “Mr. & Mrs. Smith” is not your 2005 “Mr. & Mrs. Smith.” Instead, Donald Glover and Maya Erskine star as two stranger spies who meet and are required to marry for their cover. The series was created by Glover and Francesca Sloane, who says she looked to reality TV like “Love is Blind” and “90 Day Fiancé” for inspiration. All eight episodes will be ready to binge on Friday.
— “Curb Your Enthusiasm” fans are pretty pretty pretty disappointed because the show begins its final season on Sunday, on HBO. The irreverent comedy stars Larry David as a fictionalized version of himself who lands in awkward situations at every turn. Recurring favorites Jeff Garlin, Susie Essman, Cheryl Hines, and J.B. Smoove will be back.

— A new Disney+ docuseries called “Choir” follows the Detroit Youth Choir — who first made a splash appearing on “America’s Got Talent” in 2019 — as members audition and prepare to perform at Carnegie Hall in New York. All six episodes drop Wednesday.
— UK comedian Sir Lenny Henry used his own family history to create “Three Little Birds,” a BritBox series that follows three women moving from Jamaica to London in the 1950s. Henry says the show’s immigration story is universally relatable because all immigrants understand that it’s difficult to start over and build a new life. “Three Little Birds” premieres Thursday.
— Past seasons of National Geographic’s “Genius” anthology series covered Albert Einstein, Pablo Picasso and Aretha Franklin. Season 4 focuses on two civil rights legends, the Rev Dr Martin Luther King Jr and Malcolm X. “Genius: MLK/X” delves into each man’s formative years, rise to influence and differing philosophies. The first two episodes drop Thursday on National Geographic. It will also stream on Hulu and Disney+.

— Don’t worry, “Dateline” hosts, your jobs are safe. For now. Mike “The Situation” Sorrentino of “Jersey Shore” has entered the chat. He’s hosting “Statute of Limitations,” a new true crime show where everyday people who have committed nonviolent crimes tell their story. (Think: A thief who used a hot air balloon as a getaway vehicle.) What’s more, their statute of limitations has run out so they’re free and clear to talk. In 2019, Sorrentino served eight months in prison for lying on his taxes. “Statute of Limitations” will be available to stream beginning Thursday on platforms including Tubi, YouTube and The Roku Channel.

Alas, the developer is turning to the dark side of the DC Universe with Suicide Squad: Kill the Justice League. What do they have against Superman, the Flash and their buddies? Well, Brainiac has brainwashed the superheroes and now it’s up to the supervillains to save Metropolis. You can expect guest appearances by the likes of Lex Luthor, the Penguin and the Riddler, and publisher Warner Bros. Games is promising a steady flow of downloadable scoundrels in the future. The brawling begins Friday on PlayStation 5, Xbox X/S and PC.

The excitement in Vinewood is reaching an all time high as the much-anticipated movie "Barbra The Movie" unveils it's sensational soundtrack lineup. With a mix of icons and rising stars, this soundtrack is shaping up to captivate audiences long after the credits roll.
The artists that have been revealed are, Billie Eisman, Charlie XOX, Chanel Venturas, Dark Purple, Jordyn Westland, Kerry McIntosh, Lady Charlamagne, Nashe Menage, Nathan Perry, P*NK, The 1995, The Kid RALOI and Tyrell Smith.
However, the excitement doesn't end here! There are whispers of special artists yet to be revealed. The suspense is killing us, but we're certain that these surprises will make the soundtrack even more of a masterpiece!

JOHN HICKS TRIO 'I'll GIVE YOU SOMETHING TO REMEMBER ME BY' (1988)
In the late 1980s, the renowned American jazz pianist, composer, and arranger John Hicks formed one of the most influential ensembles consisting out of musicians that had played music at the highest level all their lives and gained their status as both stand-alone artists and important sidemen. Each of them had participated in many of jazz’s great moments and all shared the ability, documented on many albums, to inspire their fellow musicians to even greater heights. The ‘John Hicks Trio’ had several line-up changes over the years that included greats such as Clifford Barbaro (Strata East, Blue Note, Sun Ra Arkestra, Charles Tolliver), Clint Houston (Prestige, Nina Simone, Roy Ayers, Azar Lawrence), Ray Drummond (Freddie Hubbard, Art Blakey, Lalo Schifrin), Marcus McLaurine (Muse, Verve, Weldon Irvine, Kool & The Gang) and Victor Lewis (Steve Grossman, Stan Getz, Charles Mingus, Cedar Walton, Chet Baker).
On the album we are presenting you today (I’ll Give You Something To Remember Me By from 1988) the trio consists out of some of the biggest and best players in the jazz, funk and soul scenes:
On piano we have the Atlanta based trio’s bandleader JOHN HICKS (1941-2006). He served as a leader on more than 30 albums and played as a sideman on more than 300 other recordings. After being taught piano by his mother, Hicks went on to study at Lincoln University of Missouri, Berklee College of Music, and the Julliard School. After playing with a number of different artists during the early ’60s (including Oliver Nelson and being part of Pharoah Sanders’s first band) he joined Art Blakey & The Jazz Messengers in 1964. In the early ’70s he taught jazz history and improvisation at Southern Illinois University before resuming his career as a recording artist. Next to his many solo recordings for labels such as Strata East and Concord, Hicks would collaborate with all the big names in the scene, including Archie Shepp, Mingus and Alvin Queen. In 2014 & 2015, J Dilla paid homage to John Hicks by sampling two of his songs.
On drums we have the legendary IDRIS MUHAMMAD (1939-2014) who to this day is still considered as one of the most influential drummers covering a multitude of genre-transcending styles. Born in New Orleans, he showed early talent as a percussionist and began his professional career while still a teenager, playing on Fats Domino’s ‘Blueberry Hill’. He then toured with Sam Cooke and would later go on to work with Curtis Mayfield. Next to his landmark solo recordings for Prestige Records, Idris would collaborate with iconic musicians and acts from the likes of Manu Dibango, Ahmad Jamal, Melvin Sparks, Charles Earland, Walter Bishop, Ceasar Frazier, Roberta Flack, Gato Barbieri, Nathan Davis, Sonny Rollins, Lou Donaldson, Galt MacDermot, Lonnie Smith…and countless others. Idris Muhammad’s work was sampled by renowned performers such as Drake, Beastie Boys and Fatboy Slim.
On bass we have CURTIS LUNDY (born 1955) who originates from Florida. Lundy is a well-respected bass player (and a master of his instrument), choir director, arranger, composer and producer who was part of performances and recordings of renowned acts and artists such as Pharoah Sanders, Frank Morgan, Cole Porter, Chico Freeman, Khan Jamal… and many others!

Launder—Happening (Ghostly International)

Happening by LAUNDER
As Launder, John Cudlip floats moody whispers over a firestorm of guitar sounds, a caress on top of a roiling surge. The band’s sound owes a lot to modern studio engineering, which allows even quiet singers to dominate the loudest of pedal-altered guitars. It’s also pretty much the definition of shoegaze, and you can have your own fun trying to figure out which tone-bending icon Launder most resembles.  I’d go for Slowdive over My Bloody Valentine, with possibly an honorable mention to Cocteau Twins, but your mileage may vary. In any case, there’s nothing super innovative here, but if you like the whipped-cream-over-chaos aesthetic of the All in a Dream box, you will likely enjoy Launder.
Launder is a relatively new band with a handful of EPs behind it, but Happening is its first full-length. Nonetheless, Cudlip elicits a sleek, assured, guitar-heavy sound from a four-piece configuration, himself and Nathan Hawelu on guitar, Chase Meier on bass and Bryan DeLeon on drums. For this album, he also tapped some outside collaborators, including Jackson Phillips of the much janglier band Day Wave, as well as the French actress/dream pop diva Soko and DIIV’s Zachary Cole Smith. 
Launder’s shoegaze sound combines drifting reverie with amplified thunder in varying proportions, with a gradual build in volume and intensity as the album goes on. “On a Wire” floats weightlessly, with the sinews of bass and guitar submerged under ambient fuzz, and “Become,” the song with Soko, tumbles backward into downy, dream-pop pillow piles. But the clanking bass foundation of “Beggar” sounds more like the Cure than you’d expect, and the strobe-lit disaffection of its melody carries a hint of Primal Scream.
“Lockwood” is, perhaps, the most MBV-ish of these cuts, a buzzsaw of dissonance running through prism-fractured guitar sound and angelic vocals. “Lockwood,” “Chipper” and “Parking Lot,” all coming near the album’s end, get the balance of taffy-pulled sweetness and obliterating decibels exactly right. Happening doesn’t reinvent any wheels or pull any new tricks, but if you like to feel the guitars in your vibrating gut and the tune in your head, why not do some Laundry?

Hot diggity dog — a month to celebrate America’s iconic foods

Whether you call it a frankfurter, frank, wiener, weenie, coney, red hot or hot dog, it’s National Hot Dog Month, and time to celebrate one of America’s most iconic foods. Hot dogs are part of American culture and summer backyard celebrations.
I remember lunchtime when I was in elementary school, and we waited in line by the old station wagon with the wood-grain side panels, where the street vendor served up boiled hot dogs topped with hot sauerkraut with spicy, brown mustard from the back hatch of the vehicle. This was the way wieners were served, at least in greater New York City.
Living not too far from the original Nathan’s on Coney Island, my parents would take me there to enjoy the famous dogs and French fries. Don’t we (almost) all have “hot-dog memories” and favorite brands and toppings? Each region of the country has its favorites, too. It seems that Hummel, founded in 1933 in New Haven, is the favored brand in the region of Connecticut where I now live.
No matter where you travel in the country, there is a local hot dog stand, pushcart, diner, deli or restaurant offering its version of the American classic, often with “secret” condiments topping off the dog.
If traveling this summer is not on your agenda, get yourself a copy of “The Great American Hot Dog Book: Recipes and Side Dishes from Across America” by Becky Mercuri (2007, Gibbs-Smith Publishing, $14.99) and you will be able to “visit” some well-known hot dog places from your own kitchen.
From the Coney Island Dog of New York to the Remoulade Dog in New Orleans to the tortilla-wrapped Bacon Burrito Dog at Pink’s in Los Angeles to the New York System Hot Wiener Sauce served at the famous Original New York System in Providence, R.I., the book takes you on a tour to reveal the inside story of how the hot dog has evolved and become even more firmly entrenched in America’s culinary traditions.
You’ll notice how the humble hot dog has stepped up a notch or two, dressed up in creative toppings. Mercuri begins with a bit of hot dog history and introduces entrepreneurs who’ve contributed to hot dog culture. The chapters that follow are devoted to various regions of the country. She then breaks down the chapter by state, including well-known establishments, back stories and recipes for the dogs, toppings and  signature side dishes.
Recipes such as Hot Dog Parmesan and Philadelphia Surf and Turf (a grilled fish cake, mashed, that tops off a hot dog, with yellow mustard and chopped onions), I must admit, made me want to stick to the dogs I prefer, like those served from that old station wagon.
A blog post of the Jewish Federation of Greater Philadelphia starts with “Hot dogs are so ingrained in American culture that grabbing one at lunchtime or at a Phillies game is simply reflex. But once upon a time, hot dogs were unknown in Philadelphia. That is, until two young Jews, Abe Levis and Anna Solo, had the idea to pop a frankfurter on a bun, thus becoming Philadelphia’s hot dog king and queen.“   Some of you might have heard of Levis Hot Dogs and the famous Champ Cherry Soda served at 507 South 6th Street. Celebrate the all-American food that has been served by presidents, enjoyed by astronauts on the moon and relished in backyards throughout the country. Here are a few recipes from the book for you to enjoy on your “tour.”
Deep-Fried Dogs with Mustard and Pear-Pepper Relish
The headnote says, “This mild, delicious relish is a cousin to that served at Blackie’s. If more heat is desired, increase the amount of jalapeno peppers. The recipe is adapted from a formula for pear relish by the late Chef Chet Beckwith of Baton Rouge, La., and as Chet would say, ‘It will set your toes tapping.’”
Founded in 1928, Blackie’s, located in Cheshire, is a well-known establishment in Connecticut. They even make their own mustard. The author writes, “their spicy hot relish is a closely guarded secret, and fans are left speculating as to the formula for what appears to be a mixture of chopped green peppers, vinegar, and spices — including, perhaps a bit of cinnamon.”
4 firm Bartlett pears, peeled, cored and coarsely ground in a food processor
2 large onions, chopped
2 medium green bell peppers, cored, seeded and diced
1 jalapeno pepper (or more, to taste), seeded, deveined and diced
Boiling water
1 ½ cups sugar
2 ¼ teaspoons mustard seed
¾ teaspoon ground allspice
¼ teaspoon ground cinnamon
¾ teaspoon turmeric
1 tablespoon salt
1 ½ cups white vinegar
Prepare and place, in 3 separate bowls, the pears, onions and all the peppers. Place pears in a colander and pour boiling water over them, drain well and place in a heavy medium pot. Repeat with the onions and then the peppers, adding both to the pot with the pears. Mix the pears and peppers together. In a medium bowl, combine the sugar, spices and salt, and add the pear mixture. Add the vinegar and mix well. Over medium-high heat, bring the mixture to a boil. Reduce heat to low and simmer, uncovered and stirring occasionally for 30 minutes. Pour the hot relish into hot, sterilized jars and cover, following the manufacturer’s directions for preparation and safety. Place the jars of relish in a boiling hot water bath for 20 minutes. Remove from water and set the jars on kitchen towels to seal, this will be indicated by a popping noise. Makes about 4 12-ounce jars.
Assembly
Canola oil for deep-frying
Hot dogs, all-beef or a pork and beef mixture
Hot dog buns, toasted
Spicy brown mustard
Pear-pepper relish
In a heavy, deep pot, heat the canola oil over high heat to 350 degrees. Deep-fry the hot dogs, a few at a time to the desired degree of doneness. Place the hot dogs on buns and top with mustard and pear-pepper relish. Serve immediately. Source: Hummel Brothers.
Bacon-Kraut Dogs
Rawley’s Drive-In located in Fairfield is another Connecticut favorite. The author writes, “Rawley’s is a busy place, often frequented by Meg Ryan or David Letterman. … The bacon topping is so popular that Rawley’s fries up twenty pounds of it every day, and some folks order ‘heavy bacon,’ or double the amount.”
Canola oil for deep-frying
Beef and pork franks
Hot dog buns
Butter
Mustard
Sauerkraut, plain or heated (recipe below)
Chopped onion
1 slice of bacon per hot dog (or more, to taste), cooked crisp, drained and crumbled
In a heavy, deep pot, heat the canola oil to 350 degrees. Deep-fry the hot dogs, a few at a time, until they are just beginning to blister. Meanwhile, heat a griddle. As the hot dogs are removed from the oil, transfer them to the griddle and cook until crispy and blistered. Open hot dog buns and lightly butter the inside; place on griddle to toast. Place the hot dogs in buns and top with mustard, sauerkraut, onions and bacon. Serve immediately.
Sauerkraut  
The headnote says, “Some folks are partial to plain sauerkraut on their hot dogs, but this version, mild and favorable, is truly a delicious topping.”
1 (2-pound) package refrigerated sauerkraut
½ cup butter
2 medium onions, chopped
1 (14-ounce) can beef broth
1 cup white wine, such as Chablis, divided
Preheat oven to 350 degrees. In a colander, rinse the sauerkraut under running water and drain well. In a deep, medium frying pan, melt butter over low heat. Add onions and sauté, stirring occasionally, for 20-25 minutes or until soft and translucent. Add sauerkraut and mix well. Stir in beef broth and, over medium-high heat, bring just to a boil. Remove from heat and stir in ½ cup of the wine. Pour sauerkraut mixture into a 13-inch by-9-inch non-reactive baking dish and cover tightly with foil. Bake for 1 hour. Remove sauerkraut from oven, stir in remaining wine, reseal with foil and return to oven for 1 hour longer, or until sauerkraut is golden and most of the liquid is evaporated. Makes about 4 cups.
North Dakota State Fair Corn Dogs
Canola oil for deep frying
½ cup all-purpose flour
½ cup yellow corn meal
1 tablespoon sugar
1 teaspoon baking powder
½ teaspoon salt
1 teaspoon dry mustard
½ cup milk
1 egg
1 tablespoon vegetable shortening, melted
6 hot dogs
Plain yellow or spicy brown mustard
In a deep pot, heat oil to 375 degrees. In a bowl, mix the flour, cornmeal, sugar, baking powder, salt and dry mustard. In a separate bowl, whisk together the milk, egg and shortening and add it to the flour mixture, stirring until smooth. Place the mixture in a deep pie pan. Dry hot dogs with paper towels. Dip hot dogs into batter to evenly coat and carefully place into hot oil, cooking two at a time. Deep-fry two to three minutes, or until golden brown, turning them carefully with tongs to brown all sides. Remove from oil and drain on paper towels. Serve immediately with the mustard. Serves 6.
Note: Wooden sticks may be inserted into the hot dogs before they are battered and deep-fried.
