Meal for one 💚🍏🍎💚 It’s a very quick, crispy, crunchy delicious salad. I use my mandolin to thinly slice 1 apple: 1/2 each of 🍎 and 🍏.Then I cut them into thin strips. Julienne very finely some orange rind, slice 7-8 red grapes in halves ( honestly you can use whatever fruits you have at home) I also added toasted walnuts for texture. Add all these ingredients in a wide glass bowl. . Now the twist or let’s say the secret ingredient is the dressing. Make sure you dress the salad only before eating. In a small glass bottle add the following 🧃 - 1 tsp olive oil 🍃 - 1 tbsp appy fizz @feelthefizz 🍎 - pinch of salt and pepper 🧂 - fennel fronds, roughly broken by hand( from my terrace garden) 🍃 Give it a good shake. Fold the salad by hand with the dressing and some more fennel fronds. I can’t wait to make the same with the fennel bulbs when they are ready. I do not add any lemon 🍋 or citrus in the dressing as green apple and appy fizz add the tartness/tanginess. This is such a simple and refreshing salad and one of the easier ways to eat fruit. You can always replace fennel with the herb of your choice - mint, and parsley will pair well. Use your regular potato peeler and shave cheese 🧀 on it if you like. . . Carrying on with Nasrani flavor in our home cooking, today was another classic. Chakkakuru Chemmeen Maanga Curry with Drumsticks. The ingredients sound rather exotic with prawns, jackfruit seeds , Drumsticks & raw mango in a finely ground coconut curry . With the exception of seafood, everything else was from our backyard. Spicing limited to turmeric & red chillies. A marvellous example of simplicity & balance of flavors. Payathanga Thoran & Andhra style Vazhapindi completed the picture. Yard long beans is one of my favorite legumes & taste almost buttery even just tossed with spiced coconut . The Andhra style Banana stem is a recipe mom learnt from our neighbours in Vizag. Super simple. Mustard seeds, sesame oil, ground mustard & plantain pith is all there in this stirfry. Today's lunch inspiration is Ven Pongal with Chettinadu Breakfast Sambar . Many confuse Pongal for Khichdi , but there is a world of difference between the two. Also, Pongal is a popular breakfast dish in South India . Peppercorns, Ginger and Cumin seeds are filled with so many healing properties 🙌🏻🙌🏻 Moreover this dish has the right amount of taste and good health . A family favourite too . I just love this sambar , which reminds me of the South, where it generally served with Kal dosai . Sambar onions ( shallots) , brinjal and drumstick make it just yum!
