I've been baking things to bring to work, to boost morale, thank people who have donated to my surgery fund, and make sure they miss me when I'm out for the whole month of May.

My grandma used to make marble cakes sometimes, and I think mine ended up pretty good!

Marble cake

Ingredients

-a bit more than ⅓ cup oil

-½ cup white sugar

-2 large eggs

-1 ½ cups flour

-pinch of salt

-½ tbsp baking powder

-½ tbsp maple syrup

-1/4 cup milk

-generous dash of vanilla

For chocolate half:

-½ cup chocolate chips

-1 tbsp milk

Instructions:

-Grease loaf pan

-Mix together oil, sugar and eggs

-Slowly mix in flour, salt and baking powder

-Mix in maple syrup, milk and vanilla

-Pour 1/2 of batter into pan

-Heat oven to 350* F

-Melt chocolate and milk together in the microwave for 45 seconds (stop to mix every 15 seconds)

-Mix chocolate into remaining batter

-Pour into loaf pan and swirl batter with fork

-Bake 40-45 min

Fellas, what do you do when your glaze suddenly seizes halfway through pouring it and turns into a weird sugary kinda halfway liquid halfway crystallized soup???

Draw silly little swirls in it after it’s on of course!

This is a cake for family thankfully, so weird glaze issues be darned! I think I might’ve used too little powdered sugar?? Not entirely sure but my dad says it tastes great so I’m not going to complain lol.

Anywho, gluten free marble cake, chocolate glaze! Enjoy silly glaze doodles and don’t put on your glazes when they’re not sufficiently powdered sugar packed!
