It’s time to make my mum’s shredded quince jam. Homemade quince jam is So delicious and simple to make without using any preservative or thickener. Quince jam matches perfectly with marbled cheeses such as Stilton, Roquefort, and fresh goats cheese. It also goes very well with goats Labneh. Chefs have been pairing it with white meats like chicken and turkey and even with duck. For me it was the preferred jam at the breakfast table. Lebanese Rose Drink with Rose Syrup
In the never ending search for ways to jazz up our drinking water, I recently found this lovely little recipe for rose syrup and had to give it a whirl. What you need: - A pretty lil bottle or jar - 2 cups sugar - 1 cup water - Juice from 1/2 lemon - 1/3 cup rosewater (available at many health and specialty food stores) - A few drops of red food coloring (optional) Steps: 1. Add sugar and water to a pan over medium heat and stir until sugar is dissolved. 2.  Add rosewater and lemon juice and boil for 10 minutes. 3.  Remove from heat and stir in a few drops of food coloring.  You want your syrup to be a deep pink as the color will dilute a bit when you add it to water. 4.  Allow to cool and place in your pretty lil bottle or jar.

So pretty!
To serve, stir 2 tablespoons of the syrup into a glass of iced water for a traditional take.  I’ve been adding it to a pitcher of water with a few slices of lime and allowing it to steep a bit before serving.  This would also be nice in a steaming hot cup of green tea. Note: When stored in the freezer, the syrup becomes quite solid due to the lower temperatures so you’ll want to leave this to warm up on the counter for an hour or so before you need to use it.

Description: Lebanese Fattoush Salad is a dish from the Arab country of Lebanon, Middle East. Lebanon is a small country with borders between Syria and Israel. Fattoush salad is a stale flatbread based on a variety of vegetables and spices. The salad ingredients must be cut very large. The salad also uses a dressing made of lemon juice, honey, olive oil and ground sumac berries, which give a sour taste.

Servings: 4 people  Prep: 30 min  Cook: 20 min  Total: 50 min  Difficulty: Medium By: Bake My Day Happy Ingredients Za’atar pita chips: • 3 tortilla (or flat breads) • 1 tsp. Za’atar • 1 tbsp. olive oil For the Kibbeh Dough: • 1 cup fine grain bulgur • 1 cup minced meat (approx... 200gr) • 1 small finely grated onion • 1 tsp. salt • 2 tsp. cumin • A bunch of chopped parsley • A bunch of chopped mint • Sunflower oil for deep-frying Filling: • 1 tbsp. olive oil • 150 gr minced meat • 2 tbsp. roughly chopped chickpeas • 1 tsp. salt • 2 tsp. cumin seeds • 1 tsp. coriander seeds • 1 tbsp. tomato sauce Tabbouleh salad: • 1 cup boiled coarse grain bulgur (Dark) • A bunch of chopped parsley • A bunch of chopped mint • 1 grated clove garlic • lemon juice • ½ chopped chilli pepper • 3 tbsp. olive oil Directions STEP 1 Start by making tabbouleh salad. Combine all ingredients in a large bowl and mix to combine. Cover and let it sit in the fridge (you can make this step 1 or 2 day ahead). The longer it sits the better it tastes. STEP 2 Continue with kibbeh. Add the dough ingredients in a mixer and mix until well combined. If the dough is a bit stiff add a tablespoon of water). Cover and set aside STEP 3For the filling, add the olive oil in a shallow pan and fry the coriander and cumin seeds until fragrant. Add the chickpeas, tomato sauce, minced meat and salt. Fry until the meat is cooked through STEP 4 To assemble the kibbeh patties, wet your hands and take a ping-pong ball size from the dough. Make a dwell in the middle by using your index finger and move it around to open it (see pic.). Fill the hole with a teaspoon from the filling and close it carefully in order all the filling stays inside. Give it an oval shape by using your palms (see pic). Repeat this step until all the dough is finished STEP 5 Heat the oil and fry the kibbeh five at a time until golden brown. Place the patties over a kitchen paper to drain excess oil STEP 6 Now that tabbouleh salad and kibbeh patties are ready, continue with the pita chips. Combine za’atar with olive oil and brush the tortilla/flat bread. Cut into triangles and bake in the oven, Grill setting for 5 minutes. Sfouf #sikandalouscuisine Baking Time: 40 minutes. Set 180C A big thank you to Manjula Natrajan for posting this delicious cake and inspiring me to make it too. This recipe is from Thebrownieboxblog and is different from what was shared - you can make this with water and avoid milk. The texture tells you how perfect this was . Ingredients: 1 cup boiling water. 1 Cup Milk. 2 Tablespoons aniseed. 2 cups fine semolina flour. 2 cups all-purpose flour, sifted 2 tablespoons turmeric powder 1 tablespoon finely ground aniseed (you can use a spice grinder) 3 teaspoons baking powder 1 3/4 cups sugar - Powder it after measuring it. 1 cup canola oil (or vegetable oil) 2 tablespoons Tahineh (sesame paste) Blanched Almonds, halved (for decoration – you can substitute with pine nuts or 1/4 cup toasted sesame seeds) Directions: 1. Boil water then add the aniseed and let steep for 10 minutes. 2. Strain tea and put aside to cool a little bit. 3. Preheat oven to 180ºC (355ºF) 4. In a large bowl, mix the fine semolina, flour, turmeric powder, ground aniseed, powdered sugar and baking powder until homogeneous. 5. Add oil , 1 tablespoon Tahini paste , milk and tea/sugar mixture to the dry ingredients, then mix well. The batter will be slightly thick. 6. Cover the bottom and sides of a 28 cm (11 inch) round pan (or a rectangular pan) with 1 tablespoon Tahineh. 7. Decorate with blanched almonds (or substitutes – above) 8. Bake for 40 min, or until a toothpick inserted comes out clean. 9. Let cool in the pan for 30 min then invert on a wire rack. 10. Moufataka, tumeric and tahini rice pudding. You will only know this dessert if you are Lebanese specifically from the Beirut (ras beirut) region which my parents are from. This dessert brings me back to my youth, the aroma of tumeric and tahini cooking through the corridors, my mother and grandmother in the kitchen on one of their food adventures. My mother and grandmother made artwork out of food, I have never seen more elegantly wrapped waraq enaab, more perfectly shaped tiny kebbeh balls, everything was cooked with love and accuracy. This dessert was made by my sister using the recipe passed down by my mother, it was one of my farewell gifts I waited years for. You have to understand this dessert is a workout, it cooks on a low heat and needs to be stirred continually for a number of hours. It is worth the effort and tastes so good as a breakfast, lunch and dinner.
