Here's my take on Underswap Sans and Papyrus! They're swapped with each other as they are in most versions about Underswap.

Sans, rather than being a royal guard wannabe, is already in the royal guard, ranked beneath alphys and mettaton. He made a promise to toriel that he'd protect the people of the underground, but he still doesn't take his job too seriously. His puzzles are a lot more like elaborate pranks than actual puzzles. Papyrus works as a delivery boy for Gerson's tavern, very enthusiastic about his job, and his job lead him to meet undyne. He had a delivery for her, but when he got to her lab she had fallen asleep and didn't answer the door, and he just stood there all night just to give her her (now cold) food. Undyne herself used to work at Gerson's, helping him brew drinks, which is what sparked her interest in chemistry and science.

Also i don't really have anywhere else to clarify this but Gerson is swapped with Grillby
