Today’s dinner is at Astons Specialities in Sembawang Shopping Centre. Mum’s Crispy Fried Fish (S$11.50++) with potato wedges and tasty rice. Mum was complaining that her fish came with almost half of its bread crumble coating gone.

I picked the Double Up Chicken (S$16++) and chose one each of the black pepper and crispy fried chicken. For the sides, I had garden veggies and potato wedges. My chicken is kind of over fried but is still pretty edible. Whoever the chef is today did not put in his heart and soul into preparing the food.

After dinner, we bought home a couple of pieces of the Chendol Agar Agar (S$1.50 each). Each triangle slice came with three layers – coconut milk & green rice flour jellies at the bottom, coconut milk, gula melaka & red beans at the centre and palm sugar agar agar on top. Overall, it is not too sweet with fragrance of coconut milk and gula melaka coupled with texture of red beans in every bite.

I was at trader joe's yesterday and one worker just walks up to me and goes, "do you like coconut?" and I'm like sure, yeah, and she goes "okay, I have a recommendation for you, I think you'll like it since you look Asian and all" and I'm just cracking up under my mask bc she's actually a South East Asian looking lady so it's not like, racism or anything. And she takes us to the frozen goods aisle where she pulls out these boxes of Thai coconut street food and tells us that she's actually Thai, and she never trusts trader joe's Thai food but this one so good and she had it for breakfast today and I'm like oh wild, thanks for the rec! We'll try it out and also tell our Thai friend and she goes, "here???" bc it's actually kind of unlikely to come across a Thai person here, and she just walks off and we go back to shopping. And then she walks up to us again and hands us a bag of another Thai snack with the barcode crossed off with her name signed, telling us that it's from her and that it's free!! and asks if we know our friend's name (yes, he's our friend 😭), and we tell her his first name and she goes "??? That's not a Thai name" and I'm like hmm, well, he's definitely Thai and she's like "no, it's not" and I tell her his full name and she's like "hmm," as if the last name does make it kinda Thai lmfao.

Leaving home where 4/4 of us had eating disorders and nobody could cook and learning to cook for myself I'm past the WAUGHHH I HATE THISSSS WHY IS EVERYTHING HARD phase and am now making stuff I think tastes GOOD instead of just passable. Pineapple Coconut Fried Rice
(photo of empty pot because between "I should check this for seasoning before serving" and "I should have taken a photo of that for posting" was too short.)
Ingredients:
2 cups cooked Jasmine Rice
2 large eggs, scrambled, cooked, then chopped to small ribbons.
2 tbsp oil
1/2 medium red bell pepper (chopped)
1/2 cup sliced mushrooms
1/4 cup chopped Vidalia onion
1 cup drained canned pineapple chunks
1 minced garlic clove
2 Tbs currants (or raisins or peas . . . something small and sweet)
1/2 cup toasted cashews
Sauce:
1/2 Tbs shredded dried coconut
2 tbsp soy sauce
1/2 tbsp honey
1Tbs mirin
1 tsp brown sugar
1 tbsp yellow curry powder (Penzey's satay seasoning, or Morton & Basset "Thai yellow curry" work)

Directions:
Obtain cooked Jasmine rice, and also, a fried scrambled egg chopped into small ribbons. Set aside.
In a small bowl mix the soy sauce, coconut, honey, mirin, brown sugar, and curry powder, adjust to taste. Let it rest for a bit while you do everything else.
Chop up and saute the fruit and veg.
Add the sauce, stir well, add the cooked rice, and then the cashews last of all.
Stir fry everything together.
Optional: could add bite sized pieces of cooked protein (meat, tofu, or other meat substitute) , if desired.
Test and adjust seasoning.
Serve.
