Chili Con Carne
On a chilly, rainy day, what could be a greater cause for preparing a pot of chili? I've been questioned in the past about the beans I use for chili. I enjoy kidney beans because of their firmer, less readily breakable skin. I also know that corn is an unusual addition to chili, but it's my way of adding color. Of course, no chili is complete without some steam white rice.
After all is said and done, I realize that a lot of life's joy is spent with the people we cherish and our favorite foods. And the sweetest possible end would be a box of chili to take away for them.

Cinnamon Cocoa Chili Con Carne

As much garlic and onion as you're willing to chop and or stomach, some ground beef, as many different beans as you can find, about a can worth of crushed tomatos, two cinnamon sticks, two heaped tablespoons of dark baking cocoa, and what was for me the remains of my creole seasoning.
The cocoa hides the spiciness so it ambushes you. Wonderful taste.

Cheesy Baked Chili Con Carne

On a chill --much chillier than these last days!-- Winter night, this Cheesy Baked Chili Con Carne is a hearty, tasty, and simply scrumptious way to warm up! Happy Saturday!
Ingredients (serves 2):
1 1/2 tablespoon olive oil
1/2 teaspoon ground cumin
1/4 teaspoon ground coriander
½ teaspoon Red Chili Flakes
1 ½ teaspoon paprika
1 red onion
1 large garlic clove, minced
a small bunch Garden Cilantro
350 grams/12.5 ounces beef mince
1 teaspoon coarse sea salt
1/2 teaspoon freshly cracked black pepper
1 cup red kidney beans, drained and rinsed
4 Whole Peeled Tomatoes +1/3 cup of their juice
1 1/2 cup Beef Broth, warmed
1 tablespoon demerara sugar
Mature English Cheddar
Parmesan Cheese
In a large, deep skillet, heat olive oil over medium-high heat. 
Add ground cumin, ground coriander, Red Chili Flakes and paprika, fry, 2 minutes. 
Peel and finely chop red onion, and add to the skillet. cook, 1 minute. Add minced garlic, cook, 1 minute more.
Finely chop Garden Cilantro, and stir into the skillet, saving a few leaves for garnish.
Stir in beef mince, and cook until completely browned. Season with coarse sea salt and black pepper.  Stir in kidney beans, until combined. 
Roughly chop Whole Peeled Tomatoes, and stir into the skillet, along with their juice. Stir in warm Beef Broth.
When the mixture starts boiling, reduce heat to medium-low, and simmer, 25 minutes, stirring occasionally to prevent burning, until slightly reduced. Stir in demerara sugar, cook a further couple of minutes, and remove from heat. Let cool, 15 minutes, at room temperature.
Preheat oven to 205°C/400°F.
Spoon slightly cooled chili con carne into two large bowls. Using the coarse side of a box grater, generously grate Mature Cheddar and Parmesan on top of each. Bake, in the middle of the hot oven, 15 minutes at 205°C/400°F.
Serve Cheesy Baked Chili Con Carne hot, sprinkled with fresh Cilantro.

Diner Style Simple "Chili Con Carne"

I think that chili con carne is one of those recipes that it’s very easy to make and it is quite a comfort food that usually tastes better as a leftover.  There are many recipe variations allowing for much creativity from each cook with different cuts of meat, vegetables and spices.  But I’m more of a traditionalist when it comes to foods like this one which I consider iconic in the North American food culture, so here is my own simple recipe:
In a deep medium pot, I brown two pounds of ground sirloin or venison in vegetable or canola oil for about 5 minutes at medium high head.  Add two 1.25 oz packages of your favorite chili powder mix, I like McCormick Original, one teaspoon of cumin powder, one tablespoon of red pepper flakes while stirring.  Add two cups of diced tomatoes, two cups of tomato sauce, one 15 oz can of dark red kidney beans, two bay leaves, two cups of water, stir all ingredients well with the meat, lover heat and simmer uncovered for 1 ½ hours stirring occasionally.
