I’ve been watching J. Kenji Lopez-Alt journey through Seattle on YouTube trying all the teriyaki spots, and why am I not surprised that I had a huge craving for chicken teriyaki.
The chicken teriyaki and gyoza combo, just as my man kenji would order. The gyoza sauce is soy sauce and a hint of jangajji brine which is a Korean pickle containing jalapeños, radish and onions, and a dash of gochugaru. The salad dressing is a miso mayo based dressing that’s been watered down a little bit to lower its viscosity.
It’s a very untraditional teriyaki as I didn’t actually use a teriyaki marinade, I used my bulgogi asada marinade and just cooked my marinated chicken thighs on the plancha, it’s the closest I can get to an actual grill in my living arrangement. The marinade had enough sugar to caramelize on the meat and leave those nice little charred bits

I don’t want to take pictures of the food or make content at a restaurant anymore, I just want to immerse myself in the experience of dining…the more I’m learning to be myself, the more I’m disconnecting from social media…unsure how I feel about it.
