Easy blueberry muffins !!

Disclaimer: I am actually very bad at following recipes and did not attempt to follow one too closely when I was making these so there’s not like too specific measurements here but it shouldn’t matter much)

Batter:

Ok so start by making some buttermilk: take 1&1/4 cup of any milk and add a few spoons of some acid(vinegar or lemon juice), stir it and let it sit for around 10 mins to curdle. Mix dry ingredients into a bowl: 2 cups flour, 2 spoons baking powder, 2/3 cup sugar, a little bit of salt, and a little bit of cinnamon. Mix 1/4 cup of oil(neutral preferably) into the buttermilk and then mix the dry ingredients with the wet (get the lumps out but don’t over mix it). Coat your blueberries (fresh or frozen doesn’t rlly matter) in cornstarch or flour and mix it into the batter. Then you can scoop the batter into a muffin tin lined with cupcake wrappers

Oh but you didn’t think I’d let you bake them without a crumble right? That’s literally the best part of the muffin

The crumble:

Melt butter and mix air with sugar and flour until it’s a crumbly consistency (I genuinely don’t know the measurements with this just figure it out)

-> as a bonus this is basically a shortbread so you could just bake it on its own if you make too much crumble

Baking temp: 350 F

Baking time: 25-30 mins
