𝗦𝗮𝘂𝘀𝗮𝗴𝗲 𝗦𝘁𝗲𝘄 𝗮𝗻𝗱 𝘀𝗶𝗱𝗲𝘀
𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀
• 400g Cumberland sausages
• 1 tbsp olive oil
• 1 large onion, diced
• 2 celery stalked, diced
• 1 carrot, diced
• 2 cloves garlic, minced
• Broccoli
• 2 tbsp tomato paste
• 400g diced beef steak
• 3/4 cup red lentils
• 400g tin of diced tomatoes
• 500ml beef stock
• 185ml dry red wine
• 1 tsp mustard powder
• Salt and pepper to taste
𝗠𝗲𝘁𝗵𝗼𝗱
1) In a skillet over medium-high heat, sear the sausages on each side until just turning brown. Remove from heat and allow to cool. Once cool, set aside.
2) Heat the oil in a large pot over medium heat. Add the onions, Broccoli, carrots and celery and cook for around 5 minutes or until the onion has turned soft. Next, add the garlic and cook for an additional minute.
3)Add the tomato paste and stir through the onion mix.
4) Next, add the lentils, tomatoes, beef stock, red wine and mustard powder and stir until well combined.
5) Season with salt and pepper. Bring to a heavy simmer, then cover and reduce heat to low.
6) Simmer, covered, for one hour. After one hour, turn off the heat and stir the stew. Remove the lid and allow to sit for a further 15 minutes, to allow the beef to rest before serving with whatever you fancy! Here there is roast carrot chips, parsnip mash and swede and carrot.
𝗠𝗲𝘁𝗵𝗼𝗱 for Swede & Carrot
You just need swede and carrot (maybe butter if you feel fancy)
1) Simmer the carrots and swede over a medium-high heat for 30 mins until the swede is tender when pierced with a fork. Drain well and return to the pan.
2) Meanwhile, mash the butter with a fork in a bowl (or pour in the oil), then add a few grinds of black pepper, the thyme and lemon zest
3) Blitz the carrot and swede with a stick blender to a smooth mash. Stir in half the butter or oil, then top with the remainder and a few extra thyme leaves to serve.
𝗠𝗲𝘁𝗵𝗼𝗱 for the parsnip mash -
• Pour milk into a large pot over medium heat; bring to a simmer. Add parsnips and salt. Cover and cook until parsnips are tender, 25 to 30 minutes. Drain parsnips. Blend.
𝗠𝗲𝘁𝗵𝗼𝗱 for mixed root vegetable fries - just buy them in a bag 😂
