Happy Holi Instafam We celebrated with a colourful layer cake stacked with, Cardamom Flavoured Cake - bottom layer Screwpine Flavoured (similar to Pandan) Cake - green layer Turmeric Flavoured Cake - yellow layer Rose Flavoured Cake - coloured with Beet powder/ pink layer Saffron Flavoured Cake - top layer made with Saffron powder & strands Melted Sweet William low sugar white chocolate & Almond Milk whisked until smooth and added between the layers to keep them together. Shrikhand Cake (Vegan & Oilfree Sweetened Yogurt Cake) Holi the Festival of Colours starts today 🎉 The heatwave in Sydney presently means there was certainly no cooking or firing away in the kitchen to make any of our traditional favourites 🥵 Shrikhand is a traditional yogurt based dessert made by draining the yogurt to thicken and adding in powdered sweeteners along with spices like Green Cardamom Powder, Nutmeg, Saffron & Rose petals and decorated with sliced Almonds & Pistachios. I had leftover homemade Soy yogurt that had been turned into Shrikhand over the weekend because it had been so warm! So this Shrikhand Cake recipe came about with, 2 cups unbleached Self Raising Flour 1/4 cup Erythritol (use more for a sweeter cake, but the Shrikhand already had Stevia Powder) 1 cup Shrikhand 2 - 3 tablespoons plain Sparkling Water (May need more or less depending on Shrikhand consistency, mine was the consistency of a thin paste) 2 tablespoons of sliced Almonds, Pistachios, Rose Petals & Saffron for garnish. To Make, Whisk the flour & erythritol together and slowly fold in the Shrikhand. Add in the sparkling water to make a smooth but thick batter. Pour into a prepared cake pan and add the garnishing on top of the cake. Bake for 40 to 50 minutes at 170 degrees C. Rajma Chawal This hearty North Indian staple meal is made with Kidney Beans cooked in a flavourful Onion - Ginger - Garlic - Tomato sauce with dry spices like Carom Seeds, Cumin Seeds, Coriander Seeds, Turmeric, Kashmiri Chilli Powder & Amchur (dried raw Mango powder). Best served with fluffy Basmati rice, lots of red Onion slices, a generous dollop of yogurt (Coconut) and a sprinkling of fresh Coriander. My addition was lots of freshly homemade Ginger - Turmeric Pickled matchsticks in Lime Juice & Salt. Chowmein with frozen Veggie Stir Fry What are your thoughts on frozen veggies? I’ve increasingly started to use frozen veggies as fresh produce has been harder to come by. I’ve always used frozen green Peas, Beans & Corn and am now venturing into the Stir Fry & Veggie Roast packs. Lemon Loaf/ Cake This recipe is adapted from the Easy Lemon Drizzle Cake @veganrecipeclub using easy pantry ingredients & 3 Lemons from our tree, this amazing loaf was ready under an hour for delicious goodness 🍋 Check out @veganrecipeclub for more plant based goodness or Veganuary inspiration. Masala Chai ☕️ A comfortable pot of piping Masala (spiced) Chai (tea) for the cold & blustery Sydney weather 🌧️ ⛈️ My Chai Masala contains, 2 large Cinnamon Bark pieces 10 Green Cardamom 8 - 10 Fennel Seeds 6 - 8 Cloves 5 - 6 Black Peppercorn 1/2” piece of Dried Ginger Dry roast gently on low heat & cool. Powder when completely cooled down. Add the masala only after the tea leaves have steeped in boiling water. Add in your choice of non dairy milk (I used Soy) right at the end just before serving. Instant Green Mango Pickle Summer always means Mangoes - golden, sweet, tart, small, large, ripe & unripe ones 🥭 🥭 🥭 🥭 Growing up, my dear mother would make this every summer and it would be finished in a matter of days (day). This easy & quick recipe needs, 🥭 2 cups Raw Mango, diced 🧂 2 tablespoons Sea Salt 🟨 1 teaspoon Turmeric Powder 🔸1 teaspoon of Asafoetida 🔹1 tablespoon each of Mustard, Fenugreek, Fennel & Nigella Seeds 🔸1/2 teaspoon of Red Chilli Powder To make, 💚 Add the diced raw Mango, Salt, Turmeric, Asafoetida & Red Chilli powder to a clean jar & toss well. 💚 Dry roast the seeds on a low heat until aromatic. 💚 Cool well & coarsely powder (I use my heavy granite mortar & pestle). 💚 Mix the powdered spices into the mango pieces.
