Instant Green Mango Pickle Summer always means Mangoes - golden, sweet, tart, small, large, ripe & unripe ones πŸ₯­ πŸ₯­ πŸ₯­ πŸ₯­ Growing up, my dear mother would make this every summer and it would be finished in a matter of days (day). This easy & quick recipe needs, πŸ₯­ 2 cups Raw Mango, diced πŸ§‚ 2 tablespoons Sea Salt 🟨 1 teaspoon Turmeric Powder πŸ”Έ1 teaspoon of Asafoetida πŸ”Ή1 tablespoon each of Mustard, Fenugreek, Fennel & Nigella Seeds πŸ”Έ1/2 teaspoon of Red Chilli Powder To make, πŸ’š Add the diced raw Mango, Salt, Turmeric, Asafoetida & Red Chilli powder to a clean jar & toss well. πŸ’š Dry roast the seeds on a low heat until aromatic. πŸ’š Cool well & coarsely powder (I use my heavy granite mortar & pestle). πŸ’š Mix the powdered spices into the mango pieces. These β€œhealthier” alternatives of sugar, aren’t actually that different at all! πŸͺ They still contain lots of fructose, they spike your insulin lvls just as much & the β€œtrace minerals” are practically nonexistent unless you consume them in a vast quantity. β€’ β€’ β€’ 3️⃣EVAPORATED CANE JUICE πŸ₯€. Quite a fancy name for plain sugar. All sugar is extracted from the sugar cane plant, the only difference is, white sugar is stripped from all TRACES of molasses. It’s basically just crystallized sucrose made to sound natural 🌱. β€’ β€’ β€’ 4️⃣ARTIFICIAL FOOD DYES 🌈.. β€œYellow 5”, β€œblue 1”... These are hidden in numerous of goodies. Used to give colour to products. Sadly, these food colourings have all been linked to cancer, brain tumors, allergic reactions etc. β€’ β€’ β€’ 5️⃣HYDROGENATED FATS. Honestly, this deserves an entire post to itself πŸ“ . Search it up. You’ll understand that these fats are the type you should most certainly avoid. This is often used for its long shelf life in place of reg oil & because it’s cheaper. Vegan Mini Frittata These tasty little morsels are 5 ingredients, gluten free, nut - free, oil - free, baked & of course vegan. Keep well for lunchboxes & tea parties alike πŸ˜€ We need, 🟩 1/3 cup Nutritional Yeast flakes 🟩 1 & 1/2 cups Besan (Chickpea Flour) 🟩 3 cups finely chopped Veggies (I used a mix of onions, shredded carrot, baby spinach, diced capsicum & minced garlic 🟩 ~ 2 cups Water ( May need more or lesser depending on the Besan) 🟩 Kala Namak (Salt) & freshly ground Black Pepper to taste 🟩 1/4 teaspoon Turmeric Powder To make, 🟒 Preheat oven to 180 degrees C. 🟒 Spray cooking spray or line nonstick baking paper squares in a 12 mould muffin pan 🟒 Sift the Besan to aerate it & whisk into the water along with the Nutritional Yeast, Kala Namak, Black Pepper & Turmeric 🟒 Whisk until a nice & fluffy batter forms. 🟒 Fold the veggies into the batter and mix well. 🟒 Pour tablespoonfuls of batter into the prepared muffin pans 🟒 Bake in a heated oven for 20 - 25 minutes at 170 degrees C The tops look cracked & golden once ready, but check with a wooden skewer inserted into the centre πŸ™‚ Last up to 3 days in an airtight box in the fridge or for 2 months in the freezer tightly wrapped up. #masalavegan #veganuary #plantbasedprotein #veganfoodshare #veganrecipeshare #veganglutenfree #veganoilfree #whatveganscook #govegan #sydneyvegans #whatvegansbake #veganfortheanimals #whatveganseat #veganfortheplanet #budgetvegan #instavegan #foodgram #veganfrittata #vegansofinstagram #veganfood (at Sydney, Australia) https://www.instagram.com/p/Cm4yseAhvRV/?igshid=NGJjMDIxMWI=

πŸ’š**RECIPE BELOW** πŸ’š Now, I’m not a big fan of savory pumpkin πŸŽƒ recipes but this pumpkin pasta sauce was absolutely delicious 🀀 β€’ πŸ’•FOLLOW @theoddfoodie FOR DAILY RECIPES/FACTS & TIPS πŸ’• β€’ β€”β€”β€”β€”β€”β€”β€”β€” INGREDIENTS 🌱 β€”β€”β€”β€”β€”β€”β€”β€” β€’ 300 g pasta β€’ 2 C Pumpkin Paste πŸŽƒ β€’ 1+ C Non-Dairy milk πŸ₯›* β€’ 1/2-1 tsp Cinnamon β€’ 1-2 Tbsp Applesauce ** 🍏 β€’ 1 Tbsp Balsamic Vinegar β€’ 1 tsp Cumin β€’ 1-2 tsp Garlic (add more/less if desired) β€’ 2 tsp Prepared Mustard β€’ 1 Diced Tomato πŸ… β€’ Other chopped veggies of choice (Peppers, Onion, Corn..) β€’ Salt/Pepper to taste β€’ Other spices if desired β€”β€”β€”β€”β€”β€”β€”β€” METHOD πŸ“ β€”β€”β€”β€”β€”β€”β€”β€” β€’ 1️⃣ Cook pasta as per instructions on the box & drain out excess waterπŸ’§ . β€’ β€’ 2️⃣ In a separate pan, add the rest of the ingredients, slowly pouring in liquids (stop when reached desired consistency) πŸ₯£. β€’ β€’ 3️⃣ Mix on low to Medium high heat πŸ”₯(just to heat the sauce up & blend all the flavors, cause it tastes so much better warm). β€’ β€’ 4️⃣ Adjust seasonings to taste πŸ‘… .
