Nutrition and Special Diets
A gluten free diet excludes gluten from the persons diet. 
Celiac disease is an autoimmune disorder in which the small intestine is damaged by the protein gluten which prevents the small intestine from absorbing nutrients.  
Many people choose to follow a gluten free diet because they’re either allergic to gluten, gluten intolerant, or read a lifestyle article about how gluten is bad for you. Personally, i’d be devastated if i had a gluten allergy or intolerance. There are so many foods with gluten like bread, pasta, and baked goods. Of course there are gluten free alternatives like rice flour and almond flour but they taste grainier in texture in my opinion. Also, many foods are also made in the same factories as foods with gluten so they run the risk of possibly being cross contaminated. 
Not only is it hard to follow a gluten free diet, you’re also missing out on a lot of nutrition from products containing gluten. For example, many breads and cereals are fortified with vitamin B and are naturally a good source of dietary fibre. (Strawbridge, 2013) A lot of gluten free alternatives are not fortified, so the person will need to add those vitamins into their diet another way. So in short, if you can eat gluten, just eat it. Of course cutting back on carbs is good if its too prevalent in your diet, but to cut it out completely unless allergic really isn’t necessary.
Over the summer I worked at a summer camp and out of the 800 people we served, 200 were special diets and allergies. The most common were egg, dairy, and gluten, but there were many others like raw apple, chick pea, chocolate, and vanilla bean. We also had a lot of kosher, vegetarian, and vegan diets.
Many of our recipes tried to avoid as many of those ingredients and dietary restrictions as possible.
 For example we always used margarine instead of butter for dairy free, and aquafaba in place of eggs (or applesauce for the one person who was allergic to chickpea).
Whenever we prepared a gluten free batch of cookies we would make sure the workbench and stand mixer were all properly sanitized, and our rice flour and chickpea flour were stored in a separate room the all purpose and bread flours.
French Macaroons (nut free and egg free)
71 grams of raw sunflower seeds 
117 grams confectioners' sugar 
4 tbsp aquafaba
53 grams granulated sugar 
Pinch of cream of tartar
-Preheat oven to 325 degrees. Place sunflower seeds in a food processor along with confectioners sugar. Process until combined, about 1 minute.
-Pass seed/sugar mixture through a sieve. Transfer once mixture does not fall through sieve as easy, and process; sift again, (Make sure you’re blending an equal amount of sunflower seed and confectioners sugar or you might start to make sunflower seed butter.) Repeat until less than 2 tablespoons of solids are left. Discard the remainder. 
-Whisk aquafaba and a pinch of cream of tartar by hand to combine first. Then whip on medium speed, slowly stream in the granulated sugar and increase the speed every 3 minutes until stiff peaks form. This should take between 6-10 minutes.
-Add dry ingredients and fold in with a spatula. Repeat just until batter flows like lava.
-Hold the piping bag with the tip of the bag parallel to the baking tray let a small amount of batter onto parchment paper or on a macaron sheet. Tap sheets firmly against counter 2 or 3 times to release air bubbles.
-Bake until risen and just set, 10-12 minutes. Let cool. Pipe small amount of passion fruit buttercream onto macaroon and press 2 together.
Passion fruit Buttercream
1 cup margerine 
2 ½ cups confectioners sugar
3 tbsp of passion fruit puree
-whisk margarine slightly and then sift in confectioners sugar ½ cup at a time. 
-whisk in passion fruit puree and add more confectioners sugar if necessary
I used to test this recipe a lot in my old school and it was very frustrating. If you beat the aquafaba and sunflower sugar mixture too much they flatten out more than necessary and don’t rise, but if you don’t mix it enough they don’t flatten out properly and don’t get the classic even flat top of  French macaroons. They also needed to be rotated repeatedly since my oven has a slight hotspot which causes the foot to slope over more on one side. Also, if the oven is too hot to begin with, they will split.(which happened a lot since everyone would accidentally adjust the temperature on my oven)
This is one of my favourite recipes to make since every time I’ve made it, it has been for someone who was allergic to nuts and couldn’t have regular French macaroons. They have the same slightly gooey texture on the inside and airy crisp on the outside of a regular french macaroon, with a slight sunflowery taste. if you dont enjoy the taste of sunflower too much, you can add a bit of cocoa powder to the batter.

Sunflower Seed Flour Vs Almond Flour
There are so many types of flours available these days. Once upon a time, it was a choice between all-purpose flour and self-raising, both being made from wheat. While wheat flour is indeed useful and versatile, it is sadly not suitable for everyone, particularly those with gluten intolerance, coeliac disease, or those following a low-carb diet such as the ketogenic diet.

   For a long time, your only other option was almond flour, which has a long history traceable back to the Middle East in the 16th century. Again, however, almond flour is not suitable for those with tree nut allergies, allergies which are more and more prevalent both in the USA and globally. There have to be other options that tick all the boxes, right?
Popularization Of Almond Flour 
For centuries, almond flour has been a key ingredient in confectionery and pastry. Macaroons, macrons, the French Frangipane Tarte, the Viennese Sachertorte, and any number of other sweet delights all contain almond flour. If you have ever enjoyed marzipan, this is made using almond flour also. 
Almond flour was already very present in cuisines around the world, but it truly rose to popularity in more recent times as a low-carb option for those ‘going keto’ and anyone living with a gluten allergy. It is nutrient-dense, nutty, high in protein and good fats, sadly it just isn’t for everyone due to the reasons mentioned earlier. 
Alternatives To Almond Flour

Should you be gluten intolerant, coeliac, or allergic to tree nuts, there are thankfully now huge numbers of alternatives out there to wheat and almond flours such as:
Coconut Flour
Made from the dried and finely ground meat of the coconut, coconut flour is more similar in consistency to cornstarch. It is highly absorbent making it tricky to use in baking as a substitute. It adds a light, coconut flavor to cooking. There are increasing numbers of people across the USA with coconut allergies also, so use with caution. 
Tapioca Flour
Made from dried and finely ground tapioca roots, tapioca flour is similar in texture to wheat flour and able to be substituted 1:1 without much issue. However, tapioca flour is considered to be nutritionally inferior to other flours, offering no added vitamins or minerals to food and is virtually pure starch.
Chickpea Flour
Chickpea flour is a relative newcomer to American kitchens. Originating on the Indian subcontinent, where it is a staple, chickpea flour is made from the finely ground gram chickpea. While chickpea flour is nutrient-dense, it is exceedingly high in carbohydrates and also poses an allergy risk for those sensitive to legumes. 
Rice Flour
Rice flour is a cross between coconut flour and tapioca flour in terms of texture and uses. It is very starchy and has a low nutritional profile, only offering vitamin D and magnesium. It is  incredibly high in carbohydrates though, making it unsuitable for those following a ketogenic diet. It is also not approved on the paleo diet. 
Arrowroot Flour
Similar to cassava flour, arrowroot flour is harvested from the tropical maranta arundinacea plant. It is a fine, white, starchy powder. It is high in fiber and is safe for consumption by those with a wheat or gluten intolerance. It works well as a thickener, however, it doesn't handle high heat well and can separate.
Sunflower Seed Flour  
Closest in texture, taste, and color to almond flour, Sunflower Seed Flour is made from dried, de-hulled, and finely ground sunflower seeds. Sunflower seeds are nutritionally dense, containing a host of essential vitamins and minerals, as well as being high in protein and low in carbohydrates. Sunflower Seed Flour Vs Almond Flour
As the two most similar to one another and the ideal option for those pursuing a gluten-free, coeliac or ketogenic diet let’s compare the pair. 
Sunflower Seed Flour
Pros
Nutritionally dense containing B group vitamins, vitamin E, and antioxidants such as phenolic acids and flavonoids. These antioxidants have been shown to improve brain health and help regulate weight.
Similar texture, taste, and color to almond flour and performs much the same when baked. 
Safe for those with gluten intolerance and tree nut allergies as well as being keto and paleo-approved.
High in protein and low in carbohydrates. 
Inexpensive and sustainable with sunflowers requiring minimal water to produce a large crop. 
Cons
Can turn green when baked with baking soda, due to the presence of naturally occurring chlorophyll. This can, however, be counteracted through the use of small amounts of lemon juice or vinegar and is completely harmless. 
Almond Flour 
Pros
Nutritionally dense, containing many essential vitamins and minerals.
Low in carbohydrates and high in protein.
Safe for those with gluten intolerance, coeliac disease, or if following the ketogenic diet.
Cons 
Unsuitable for anyone with a tree-nut allergy. 
Can be quite expensive compared to sunflower seed flour. 
Almonds are not produced sustainably and require significant water to grow well. A single almond requires 1.1 gallons of water to grow. 
Like Almond Flour, But Better

So Rosie @not-your-dear​ and I were having an Xmas call and we realised a lot of people in the series are obsessed with a certain food (America and her strawberry tarts, Kile and butter, and Henri with korvapuusti). So we decided to give them all something to be obsessed about. But it turned into them as a type of food but most of them are both the food and what they would be obsessed with. Mary - S'mores Gurl can party, and she is a great mix of everything amazing in life
Anne- Bran Muffin w/ Choco Chips She makes you need to poop, but also them choco chips add a little spice to life
Daphne - Caviar French, too rich for you, don't even look at me unless you can afford a diamond ring
Gavril - Confetti Cake with Sprinkles on Top Is fun and lowkey bisexual, always knows how to have a good time
Sylvia - Lobster Fancy and put together, gets red and snappy when people aren't elegant
2nd Generation (The Heir & The Crown):
Eadlyn - Prune Purple like her dresses, kinda makes people wanna poop, lowkey bland but also adds an element of surprise to your bathroom routine
Ahren - Mac & Cheese French but tries too hard to be, like Thomas Jefferson, blonde like his hair
Kaden - Carrots Sky wanted him to be red haired (She will literally fight you on Kaden's genetics) like carrots, is healthy because he's smart and knows its good for him, a fun veggie
Osten - Cheese Puffs Mischievous, unhealthy, fun, would see at parties, causes trouble, orange like his hair
Camille - Macaroon Colorful, French, draws people in, pretty, sweet
Josie - Pancakes Sky says ew, can have lots of toppings but tastes better simpler, nice complement to carrots
Kile - Popcorn With a Shit Ton of Butter Slippery af, have you read The Heir?, loves butter and is butter, you are what you eat
Fox - Lollipops Sweet, tasty, always red  (Sky says you always wanna suck it omg)
Hale - Kale It rhymes duh, Kale takes care of people, Hale takes care of peeps
Ean - Cream of Mushroom Classy, doesn't taste excellent, lowkey gay
Henri - Korvapuusti/Cinnamon Rolls Do you even need to ask?
Eikko - English Tea Comforting drink, nice, hot af, just rlly good
Gunner - Fruit loops Fruity, fun for everyone
Marid - Green food dye Tasteless and bland but pretty looking (Rosie's perfect tagline)
August - Caramel Like his hair, charming and makes you feel gooey inside.
Georgia - Peach Sweet, Famous Georgia Peaches, yummy, sometimes has a tangy taste.
Brice - Dark chocolate Like her bro but stronger and tougher, tastes delicate but puts up with a lot of shit.

One of our family’s Christmas traditions is making a big platter of cookies and handing out small plates filled with goodies to our neighbors.
The kids LOVE it and even though it is several weeks away they are already planning on the types of cookies they want to make.  That is why we have compiled this GIANT list of Christmas Cookies Recipes that we love.
Let’s get baking Christmas cookies!
Chocolate, Chocolate, Chocolate!  Cookies!
Chocolate Amaretto Cookies – these are tasty AND gluten-free!
Flourless Fudge Walnut Cookies    –
Chocolate Chip Cookie (or Pie?) – these deep dish is delish!
