Today is National Banana Day! Did you know bananas and celiac disease have a very interesting history? Before celiac was well understood and gluten was identified as the problem, a banana-based diet was used to treat the disease in children (and at the time, presumed to have "cured" them).

So excited by this. I made gluten free cauliflower & cheese pies. I’m really not much of a cook & a lot of things I make, turn out rubbish. But these worked really well 👏🏻. Before coeliac, there would be no reason for me to learn to make something like this. There is a bakery 5 minutes from my places that does delicious ones. But the closest place that does gluten free cauliflower & cheese pies to me, is an hour away. Let me know if you want the recipe, I’ll add it as a reblog if there’s any interest.

If you have celiac and buy the brand Van’s for their waffles, please know that 9 days ago there was a recall because some of the packages of the gluten free waffles may contain “undeclared” wheat. And if you have celiac, you know “may” might as well mean “does”.
This recall only applies to boxes with the matching lot codes and numbers, and do not pertain to other products that Van’s has to offer. These boxes were distributed in AZ, CA, FL, GA, IL, NC, & WA. Please check your boxes immediately to ensure your own safety and save yourself the painful reactions to gluten. It’s advised the purchased packages be either thrown out (or given to someone who can eat wheat so as not to waste it) or return the product to where you’ve purchased it from.

Ik I've made a post about it before but hospitals don't always have the ability to cater to life or death food allergies and are often not up front about this when admitting patients.
Yesterday I had to take my roomate to the hospital. He is allergic to soy, dairy, most tree nuts, several fruits, and he has severe celiacs, so no gluten whatsoever.
Little backstory, we are both disabled, and I am his advocate in situations like these, generally I am his caregiver, though I'd say it goes both ways.
So he is being pushed to accept hospitalization, and I am agreeing until I ask about food. The nurse says "it's a hospital, why wouldn't we be able to accomidate"
I am more direct, and say "many hospitals can't, I don't mind walking to the cafeteria to confirm." She seems to get frustrated but says she will call them and leaves after belittling me for having her check.
When she returns I'm told "they cannot guarantee any of the foods we have will be allergen free, but nothing in life is 100%"
My roomate came to the hospital because he was bleeding from ulcers caused by accidentally getting a single speck of grain alcohol based hand sanitizer on his tounge.
Td;lr hospitals don't always provide for allergens, and when I brought this up in a hospital with a nurse, I was basically told the patient should just eat allergens

still trying to sort through the layers of this ableism & antifatness but it’s particularly painful that society treats eating gluten-free as something rooted in a desire for weight loss when
i gained more weight in the year after figuring out i have celiac than any other year of my life
including going up two shirt sizes
& going from being read as (small)fat but not having any access issues around size separate from mobility aids to being outside the bounds of straight sizing
because my body can absorb nutrients now
& for most people who ‘need’ to be eating gluten-free, you will gain weight!! & we, including those of us who were already fat, should be given space to celebrate that!! hallelujah that my body is still here to grow!!

So little thing that I learned recently; under the FDA, drug manufacturers are not required to disclose presence of major allergens in their products. While most medications do not contain gluten-containing ingredients, if you have any food allergy you need to make sure it's on file with your pharmacy, and speak with your pharmacist to find out how they flag for allergens in their system. Sometimes you may need to contact the manufacturer--if so, have the drug NDC (National Drug Code)# on hand, as they often need that to look it up. You can get this information (as well as manufactuer name) from your pharmacy.

I love when people ask me how they can help support my Celiac disease because usually they think I'll ask for them to make GF foods or buy extra health bars or something but no. The #1 thing is to ask if a restaurant has any gluten free options and what their prep methods are when you go out to eat without me.
It's so disheartening and tiring trying to go to restaurants and vet them myself, especially if I just need to walk out right afterwards. But there are so many places I would've never eaten at if someone else hadn't gone in, asked questions, and shared that information!

With celiac disease, every meal is a risk. Gluten hides everywhere, from restaurant griddles to soy sauce and licorice. Since my diagnosis, I’ve identified “safe foods” I can always trust not to set off an intestine-destroying immune response: whole fruit, plain potato chips, most hot dogs, Hershey’s chocolate. When I’m stranded and hungry, I look for them. Drawing on the bright colors and abstract inedibility of David Seltzer’s Sea Salt/Lemon Sage, I made my safe foods easier to find by rendering them in an ANSI-inspired worksite safety palette. Use the headlamp for the full high-visibility experience.
Exciting news: This sculpture is on display at the ArtsWorcester gallery show Feast: Call and Response with the Fitchburg Art Museum through April 21, 2024.
Even more exciting news: the Fitchburg Art Museum selected it, along with nine other pieces from the show, to exhibit this summer!
