Games like Simon the Sorceror counts as "New SCUMM" style for the purposes of this poll. Likewise, even though Gobl(i{1,3})ns style implies a popup window with the inventory, King's Quest 7 could be counted as such considering it only has implied-walk, interact/take, and use-item cursors. And as such, this is about the interaction model and UI, not the graphical style. After all, Thimbleweed Park has old style character graphics but a new style 9-verb UI.

I Want to be a Pirate
Jaune: *steps into Scumm bar before tripping and falling on his face*
Vernal: What be yer problem, boy?
Jaune: *scrambles upright* I want to be a pirate!
Raven: So what?
Vernal: Why bother us?
Qrow: Hey, don’t forget we’re short of help because of this whole “Salem” thing!
Vernal: So?
Qrow: So, no pirates means no swag! And no swag means no grog! And we’re getting dangerously low on grog…!
Raven: Hmm…do you have any special skills?
Jaune: I can hold my breath for ten minutes!
Vernal: …well…all right! But you don’t become a pirate just by asking! You have to go through…
Qrow/Raven/Vernal: The Three Trials!!
Jaune: Uh, what three trials are those?
Qrow: The Three Trials are a series of challenges that every pirate must face!
Raven: *brandishes Omen* You must master the sword!
Vernal: *sneakily pickpockets Raven* And the art of thievery!
Qrow: …and…
Qrow: …a Quest!
Vernal: …a what?
Qrow: Treasure hunting, you sea urchin!
Vernal: Oh, right! You must prove yourself in these three areas: swordplay, thievery, and…uh…treasure-huntery! And return with proof you’ve done it!
Raven: And then you must drink grog with us!
Qrow/Raven/Vernal: GROG!!! *all drink*
Jaune: …what’s in that “grog” stuff, anyway?
Vernal: Grog is a secret mixture, containing one or more of the following:
Qrow: …kerosene…
Raven: …rum…
Vernal: …artificial sweeteners…
Qrow: …red dye #2…
Raven: …battery acid…
Vernal: …scum…
Qrow: …propylene glycol…
Raven: …axle grease…
Vernal: …sulfuric acid…
Qrow: …acetone…
Raven: …and more pepperoni than you can probably imagine! It’s one of the most caustic, volatile substances known to man!
Qrow: The stuff eats right through these mugs, and the cook is losing a fortune replacing them!

i've never played Sea of Thieves, but i know Monkey Island, and if they're going to the effort of getting the actual voice actors, and including things from later games (the main example being Murray), then they have to have Cobb the Loom guy in the Scumm Bar. they brought him back for Return, it's a little thing.

What do they get up to on a night out?
Depending on where they are, it usually is a dinner and an outing. Whether that outing is dancing, attending a horrible comedy club or accidentally getting caught in the middle of a bar fight, is entirely dependent on what they're feeling. But, usually, it's a dinner and sitting together, enjoying the calm.
Where do they go to on their first date?
Their first date was a nice picnic at the Lookout Point. Guybrush had to bribe the lookout to let him and Elaine be there for a few hours since the next best thing was the Scumm Bar and that, frankly, isn't romantic.
Where does their first kiss happen?
On the pier where they first met. It happened on a walk together, getting to know one another... Elaine did the first move which startles Guybrush, making him go into that gibberish babble. But he's smiling, asks if they can do that again.
