       ~ “Sanssouci Palace, located in Potsdam in Germany. This Rococó Palace was built in the first half of the 18th century as the summer residence of King Frederick II of Prussia. The building belongs to a group of palaces and park complexes in Potsdam and Berlin that have been on the UNESCO World Heritage List since 1990. Visitors can admire, among others, the royal apartments, the Audience Hall, the library and the Concert Hall, which is a remarkable work of Prussian roccocó. The palace also has terrace gardens and the tomb of Frederic II. The author of the palace project was Georg Wenzeslaus von Knobelsdorff. In the first half of the 19th century, the residence was rebuilt by Ludwig Persius and Ferdinand von Arnim at the request of the King of Prussia Frederick William IV.“ ~

Roccocó (Neapolitan Christmas Biscuit)

It wouldn’t be Christmas in Naples without roccocó. You know that the holidays are around the corner when you see this delicious crunchy biscuit in the local bakeries. 
This biscuit is steeped in history and tradition. Invented in 1320 by the nuns of the Real Convento della Maddalena, roccocó is eaten from December 8, the celebration of the immaculate conception, and enjoyed through the holidays.
Roccocó is easy and inexpensive to make at home, and it tastes amazing because of the Neapolitan spice blend ‘pisto’.
Ingredient notes: 
Candied fruit: The candied fruit in this recipe is very important. Traditionally, you should use candied citron. As it may be difficult to find outside of Italy, I’d recommend using candied lemon or lime chopped into tiny pieces. 
Pisto: This is an essential ingredient, and you can easily buy it online. However, I’ve found that the homemade version is cheaper and way tastier and you probably have all the ground spices in your cupboard right now. Simply mix 15 grams cinnamon powder, 5 grams pepper, 5 grams nutmeg, 2 grams cloves, 2 grams star anise, and 2 grams coriander seeds.

Ingredients: 
100 grams almonds (skin on)
250 grams granulated white sugar 
2 grams pisto/mixed spice
87 grams water (room temperature)
250 grams 00 flour / all-purpose flour 
100 grams candied fruit 
Zest of 1/4 orange 
A pinch of baking soda or baker’s ammonia 
Decoration: 
1 egg (for the egg wash)
30 grams whole toasted almonds (optional)
Method:
First, roast the almonds in an oven (preheated at 180C) for five minutes. After, let them cool and put aside half (50 grams). Then, blend the other half in a food processor until you have a sandy mixture. 
In a medium-sized bowl, whisk the flour, sugar, baking soda, pisto, and ground almonds together until combined. Add in the orange zest, and slowly pour in the water while mixing the dough by hand. After the dough is well-mixed, add in the diced candied fruit and 50 grams of whole almonds. Mix and transfer the dough to an un-floured work surface. Knead until the dough is smooth. 
Following this, it’s time to shape your roccocó. Lengthen the dough until it’s a long tube and then dived into eleven equal portions (75 grams each). Take each piece, roll, and put the two ends together, sealing them. 
Put the roccocó onto a baking tray lined with parchment paper. Whisk one egg for the wash, and brush the biscuits with it. Press a couple of almonds into the top of each biscuit for decoration.
Bake in a preheated oven (180C) for 25 minutes or until the roccocó are lightly browned. When they’re finished, let them cool on a wire rack. 
Notes:
1- If you don’t have a food processor, you can buy ground almonds at a supermarket or health food store. Otherwise, a mortar and pestle would do the trick! 
2- Want to make a harder biscuit? Bake them for five to ten minutes longer! Then, you can dip them in some wine to soften when you eat them.
