I love this cake warm with only a sprinkling of powdered sugar. It is chocolaty, thick and not excessively sweet. Obviously you can continuously glitz it up assuming you feel so slanted. Coat it with chocolate ganache, frost with your number one icing or split into layers, spread with jam and spot with softly whipped cream. This cake resembles a great sets of pants; comfortable, dependable and simple to spruce up or down. Remove your fixings from the cooler and let come to room temperature about thirty minutes prior to beginning the cake. You can substitute the flours and starches with your number one universally handy gluten free flour mix assuming that you like. Cast Iron Skillet
Old cast iron has a perfectly smooth nonstick surface that’s surprisingly easy to maintain. Of course, these modern Lodge pans will do in a pinch if vintage isn’t in the cards.

Tajine
I’ve been lusting after one of these hand-painted ceramic tajines since seeing one in a cookware store a couple years ago. They require some special care, and possibly a heat diffuser to prevent cracking from intense direct heat, but I think they’re worth it just to look at, even if you never cook in them. If you do, a future of flavorful North African stews, presented beautifully at the table, awaits. They also come in a variety of designs and colors, meaning there’s the perfect pick for any home.

Uuni 2S Pizza Oven
There are a lot of custom-designed pizza ovens out there in various price ranges. I haven’t tested all of them, but my favorite so far is the Uuni 2S. It consists of a small stainless steel box with a pizza stone set inside it. You load up a hopper on the rear of the unit with wood pellets, light it up with a torch or lighter fluid, and let it preheat. About 15 minutes later, you’re ready to cook. This little powerhouse hits temperatures in excess of 900°F and bakes up Neapolitan-sized pizzas in just 60 to 90 seconds.

We forget, sometimes, that the leftover stems from blanched broccoli are wonderful cooked with olive oil and piled on toast; that their cooking liquid could be the base of a soup; that the stems of greens like Swiss chard and kale make a lovely pesto. She reminds us that stale bread can make something delicious and that yesterday’s bean broth could be the start of a pasta dish today. This book sends the valuable message that dinner doesn’t always need to be a big deal.

Wooden pizza peels are too thick to easily slide under a pie once it’s hit the oven. For that, you’ll want a thin-bladed metal peel. What’s the point of perfectly roasting that turkey or prime rib if you don’t have a pretty surface to carve it on? I love this teak cutting board because it’s large enough for major projects, but lighter than thicker boards, making it easy to move from the kitchen to the dining room. I’ve long been a fan of Jessie Kanelos Weiner’s vivid and imaginative watercolors—she’s done the art for several of our stories. There are a lot of artisanal jams out there, some good and some grossly overpriced. Though I’ve tasted hundreds of them, I still haven’t had any as good as those made by Oakland’s June Taylor, who has been making what she calls “conserves” out of superb Northern California produce for more than 25 years now. The Dapple Dandy pluot conserve tastes like you’re taking a bite out of the juiciest pluot in the world, with just enough acidity to offset the sweetness.

Few things get me as excited as a good raw bar, but most of the time, I eat far less than I want because, after the first couple dozen oysters or so, it just gets to be too expensive. That’s even truer when the oysters are top-notch, like the briny little suckers from Island Creek up in Massachusetts. But here’s the good news: You can order Island Creek’s oysters online by the 50- or 100-count for much less than they cost at most restaurants, and have them in your hands the next day for an at-home shucking extravaganza. Zojirushi Rice Cooker
A couple years ago, I managed to convince my wife of the necessity of buying a rice cooker. Not just any rice cooker: a Zojirushi. The only concession I was willing to make had to do with the size, since she wisely noted that we didn’t have the counter space for any rice cooker at all, let alone the kind of rice cooker that I had in mind. So I bought a little guy that fits, max, three cups of rice, but really is only usable for about two and a half. Know Your Ingredients: Sorghum
Learn about this early trending ingredient and how you can add it to coffee drinks.

Last October, we took a look at several fall and winter drink offerings from a few different cafés, including Portland Coffee Roasters’ Sorghum Cinnamon Latte. The sweet, molasses-like flavor of sorghum paired with cinnamon has a ginger molasses cookie taste, perfect for a latte. What exactly is sorghum, though? As part of our “Know Your Ingredients,” series we are taking a closer look at sorghum, and learning about its uses both in and out of the coffee industry. 
Sorghum’s sweet, molasses flavor pairs great with cinnamon in Portland Coffee Roasters’ Sorghum Cinnamon Latte.
Sorghum is a cereal grain, or more accurately, a flowering plant of the grass family that originated in Africa. It can grow up to eight feet tall. In fact, it’s not uncommon for sorghum to be planted between rows of young coffee plants to provide shade. Some varieties are grown to feed livestock, and others are grown for human consumption. You can even pop the kernels like popcorn. 
Roxana Jullapat, head baker and co-owner of Los Angeles bakery Friends & Family, has a book slated to come out this spring titled Mother Grains: Recipes for the Grain Revolution. The book shares her work with ancient crops like barley, buckwheat, rye, and sorghum, and how using these grains brings out different attributes in baked goods. 
Roxana explained that there are two main varieties of sorghum grown for human consumption. Grain sorghum is grown to harvest the berries, which are then milled into flour. Sorghum flour has a mild, earthy texture, and makes a great gluten-free flour substitute for wheat. The second variety is syrup sorghum, grown specifically to extract juice from the plant stalks, then cooked to a syrup. “The process is very similar to molasses made from sugar cane juice,” Roxana says. 
Sorghum syrup is “incredibly artisanal, made in smaller batches mostly in the Southern U.S.,” she says. “Each batch speaks of its specific maker as well as of the region in which it was grown … no two batches of sorghum syrup are identical.” 
Sorghum syrup is a flavorful sweetener that can be used similarly to molasses or honey. Flavor nuances can range from caramel-y and buttery to smokey and fudgy.

Macadamia choc chip cookies!

A new recipe I created today. They are super delicious! So glad I picked up some macadamia nuts over the weekend. I'll definitely be using them in recipes more often. Hope you guys love these as much as I do❤️
Makes 7-8 cookies😋 Ingredients: 1 cup gluten free plain flour* 1/2 tsp baking powder 1/3 cup maple syrup 1/3 cup softened vegan butter* 1/2 cup dark chocolate chips 1/2 cup crushed macadamia nuts
*You can substitute this for the following flours: Teff, rice, sorghum, buckwheat. If gluten free isn't required, feel free to also substitute with regular plain flour, spelt, oat or wholemeal. *I used nuttelex, but you could also try it with coconut oil.
Method: 1. Preheat the oven to 170C and line a baking tray with baking paper. 2. In a bowl, mix together the flour and baking powder. 3. Add in the maple syrup and vegan butter. Combine until you have a cookie dough batter! 4. Lastly, stir in the chocolate chips and crushed macadamia nuts. 5. Form into cookies, place them onto the tray and then pop the tray into the oven. Bake the cookies for approx 20 minutes! Until slightly golden on top. 6. Remove the cookies from the oven and top with extra crushed nuts and cinnamon sugar if desired! Enjoy☺️

If you like cured meats, you will love Ayoba Biltong, an air-dried meat snack that originates from South Africa made from grass-fed beef that’s marinated, seasoned, and hung to dry for fourteen days. But don’t confuse this snack with beef jerky. 
Founded by brothers Emile and Wian van Blommestein, Wian tells me, “Typically, beef jerky is heated at a low temperature for six hours. This leaves the beef very dry. To counter this dryness, most beef jerky recipes use either a sugar marinade or artificial ingredients to soften the beef. Biltong’s difference lies in the drying process,” That process includes being hung dry much like prosciutto. The result is an incredibly tender snack without all of the added sugars and ingredients including no added nitrates. “The Biltong drying process also leaves more muscle fibers intact, which means Ayoba Biltong contains more protein than jerky.”
Biltong has a long rich history in South Africa dating back 400 years and was first created by the country’s indigenous people when they cured the meat in salt. As Europeans settled the country they brought with them more sophisticated means to cure the meat including the use of vinegar and select spices. “Our Biltong adventure started in our family kitchen with an authentic South African family recipe that has been passed down countless generations within the van Blommestein family,” shares Wian. “Our recipes have evolved over the years, but one rule remains the same: we stick to the basics and use only all-natural spices to accomplish our rich flavor profiles, such as freshly ground black pepper, coriander and rosemary.”

These lightly pickled beans were once fuel for Roman warriors and are now enjoyed as an appetizer across the Mediterranean region. BRAMI founder, Aaron Gatti, grew up snacking on lupini beans when he was visiting family in Rome as a young man. But, it was on a trip with his wife that he rediscovered his love for eating lupini beans and reimagined them for the modern-day warrior.

If you love yogurt, but are seeking a plant-based non-dairy alternative—Hälsa Oat Milk Yogurt products should be on the top of your list. Most oat milks available are made by an old technology called enzymatic hydrolysis that Lumme tells me is as complicated as it sounds.
“It’s a chemical-heavy process that alters the composition of the grain by turning oat starch to sugar, in a process that resembles the making of high-fructose corn syrup. Various artificial ingredients that emulsify and create a milk-like consistency are added (gellan, xanthan or guar gums, industrial phosphates, etc.) Consumers believe they’re getting the healthy benefits of oats, but unfortunately that’s not the case. ‘There’s got to be a better way,’ we thought. This is why we created a completely new manufacturing process to make plant-based milks in a way that keeps all the nutritional benefits intact.”
Hälsa is the only oat milk on the market made from whole grain oats.  Lumme tells me, “This is important because only whole grain oats containing the most beneficial part of the oats—the beta glucan—has many health benefits including: lowering cholesterol, balancing blood sugar, and keeping hunger at bay.” Another unique differentiator is the brand’s commitment to the environment. “Our oats are grown with zero water footprint, and we’ve designed every step from growing to harvesting to manufacturing to leave the smallest possible water and carbon footprint. In comparison, California’s almond orchards consume 10% of California’s fresh water. It takes two gallons of water to grow one almond.”
While I can’t speak to the consistency of Hälsa’s new oatgurt in the cups, I love the way the drinkable versions taste. They aren’t too sweet and are a perfect smoothie alternative.  I especially appreciate the lack of aftertaste that some other oat-based drinks leave behind. I am pretty picky about my snack items. But, Ka-Pop!, an ancient grain snack that offer puffs and chips that are vegan, gluten-free, and even free of the top 12 allergens, kind of knocked my socks off with their delicious flavor profiles. Ka-Pop! was founded by Dustin Finkel, a certified cross fit instructor, long time paleo diet follower, passionate foodie, and proud dad of two little boys when he couldn’t find a satisfying snack that met his needs. “So many foods that eliminate gluten, allergens, etc. both don’t taste good and usually add so many fillers that inherently they aren’t that healthy. Ka-POP!’s main ingredient is sorghum. If you don’t know what paneer is—you should acquaint yourself with this versatile cheese that originates from India. Founded by husband and wife team Jasleen and Tarush Agarwal, Sach Foods Organic Paneer was created to offer consumers a high protein food with low carbs. “Being vegetarian, we struggled to find good tasting, sustainable, vegetarian protein-rich options. We think consumers deserve more high-quality vegetarian options than what’s available in the market today. That’s the problem we wanted to solve,” explains Tarush.
Paneer isn’t like other cheeses. It doesn’t melt for one, even when grilled. Nor does it have cultures or rennet. It’s also very versatile, similar to a tofu. “There are countless creative ways to use paneer. You can grill it, fry it, bake it, put it on a salad as your protein topping or use it more traditionally to make stews and curries,” Tarush tells me. 
Sach’s paneer is made from five or less total ingredients including organic grass-fed milk and is made in small, artisanal batches. The brand offers five flavors including The Original, Spicy Habanero, Mint Chutney, and Turmeric Twist. Currently, Sach is the only producer in the United States to offer flavored paneer commercially. “We realized early on that introducing paneer with creative flavors would help us get Paneer in front of more consumers,” says Jasleen. “We wanted our flavors to be made with ingredients that aren’t just delicious, but also offer a variety of health benefits.”
I love Sach’s paneer. It is delicious and nutritious and I especially like how many ways the product can be eaten. Spinach Salad with Ginger-Soy Dressing 🥗
Total 20 min; Serves 8.
This hearty, zesty salad is a perfect companion for rich winter braises. Popped sorghum adds an addictive crunch.
¼ cup popping sorghum (or 1 cup store-bought popped sorghum or plain popcorn) Salt and freshly ground black pepper 2 Tbsp. orange juice 2 Tbsp. lemon juice 2 Tbsp. minced shallot 1 Tbsp. soy sauce 1 Tbsp. Dijon mustard 1 Tbsp. minced peeled ginger 1 tsp. honey 2 Tbsp. olive oil 1½ lb. regular or curly spinach, stemmed, large leaves torn 1 medium seedless cucumber, thinly sliced 1 cup thinly sliced red onion
1️⃣ Heat a medium saucepan over moderate heat. Add the sorghum and cook, stirring constantly with a wooden spoon, until the grains pop, about 3 minutes. Once the popping stops, transfer to a plate to cool. Sprinkle lightly with salt. 2️⃣ In a large serving bowl, whisk together the orange juice, lemon juice, shallot, soy sauce. Dijon mustard. ginger, and honey. Gradually whisk in the oil in a slow. steady stream until emulsified. Season with salt and pepper. Add the spinach, cucumber, and red onion, and toss. Top with the popped sorghum, and serve.
Crisp cucumbers and popped sorghum enliven this spinach salad.

Everyday Health[1] has gathered several registered dietitian nutritionists to help share the biggest food trends of 2019. Find out what you’ll be seeing in the grocery store aisles and in the magazines next week!

General Mills, for instance, set a goal to sustainably source 10 of its top ingredients by the year 2020. It’s currently meeting 76 percent of that goal, with all of its palm oil, 99 percent of its fiber packaging, 81 percent of its U.S. sugar beets, and 67 percent of its U.S. dry milled corn sustainably sourced. This notably impacts its Cheerios and Nature Valley lines. Also, the bottled beverage company Rebbl ethically employs workers and donates 2.5 percent of its net sales to reduce the risk of exploitation and human trafficking. And don’t forget about sustainably sourced eggs. “Vital Farms’ hens are allowed to forage freely, and this keeps the pastures healthy and means harmful chemicals aren’t necessary,” says Cassetty. “It’s a win for the animals, a win for the environment, and a win for egg lovers because pasture-raised eggs have more vitamins and minerals than eggs produced in other ways.”
3.       Convenience Superfoods for When You’re On the Go: It’s now easier than ever to eat healthy when you’re in a hurry. Don’t have time to prepare sweet potato toast from scratch? 4.       New Plant-Based Milks From Surprising Sources: Looking for a plant-based milk? Your options now include much more than almond and soy milk. From banana to walnut to hemp, hazelnut, oat, and flaxseed milk, products now exist to suit almost any dietary preference and need. "People always love a trend, and plant-based is the hottest trend right now, fueling the desire for multiple plant-based milk sources,” says Kyle. “Certain plant-based milks, like banana milk or oat milk, are appealing to consumers because they are generally free of many of the top eight allergens that are typically present in more traditional milks like almond or soy. Look for oat milk from Oatly, walnut and hazelnut milks from Elmhurst 1925, pecan milk from MALK, flax milk from Manitoba Milling Co., and banana milk from Mooala. Wondering why your alternative milk’s label says “milked nuts” or “malk”? It’s because the U.S. Food and Drug Administration (FDA) is in the process of likely banning all nondairy milks from using “milk” in their names. Note that while banana milk is delicious and provides nutrients like blood-pressure-helping potassium, you’ll typically get more satiating protein from a nut- or seed-based milk. For an easily accessible source of protein, opt for calcium-rich dairy milk. Check the nutrition facts label to choose a milk that meets your nutritional needs.
5.       Innovative Lactose-Free Dairy Products That Go Beyond Milk: Food for people with specific dietary needs is plentiful right now. More consumers are now connecting food choices with everyday quality-of-life outcomes, and labels that offer more information can help make that easier.” You’ll also find food labels promoting specific dietary patterns, such as paleo and keto. Think grain-free paleo snack puffs from Lesser Evil and multiple brands offering keto-specific products. 7.       Protein-Powered Foods to Help You Crush Your Next Gym Sesh: Protein is all the rage, and here’s why: It helps keep you fuller for longer, helping to fight the urge to snack all day long and also providing fuel for your workouts. 10.   Almost-Ready-to-Eat Healthy Breakfasts: Frozen and other quick-cooking lunches and dinners have been on offer for years.
