I've waited for this day for what seems like my whole life. I remember in 6th grade, we did a career project--I said I wanted to be a doctor. From that point on, everything I did was involved in working towards this goal. I even had "Dr. Kajal Mali" as my Twitter handle for a while in hopes of visualizing it into existence. Throughout high school & college when I thought about how I didn't fit the perfect medical school applicant profile, I had many moments of lost hope. After putting 6 long hard months into studying for the MCAT and still getting a score that I felt was not good enough, I thought I'd need to choose another profession, another passion--BUT, I chose not to give up! This choice to not give up was a battle nonetheless, but with the help of my parents, siblings, friends and God. I persevered. I pushed out all the negative thoughts and GRINDED. When I walked up on stage there was a couple seconds of idle time before we donned the white coats and I literally wanted to start dancing!! Beautiful broccoli! Often considered as one of the healthiest foods in the world, broccoli is high in SO MANY nutrients, but mainly vitamin K, C, Iron, Potassium and also a healthy dose of soluble fibre. Interestingly, broccoli also contains much more protein than most other vegetables, which is in large part why we feel much more satiated with this food item. This lovely veggie can be enjoyed raw or cooked in other ways - like steaming, stir-frying etc. Of course, each cooking method affects the nutrition we gain from the veggie itself and it is key to consider the way our food is prepared (not just the ingredients themselves) when wanting to eat a healthy diet. For instance, a recent study revealed that as it turns out... gently steamed broccoli provides us with the most health benefits out of all the cooking methods. As we lightly steam the broccoli, this cooking method activities health-promoting compounds without losing the water-soluble vitamins :D. Steaming it seems like has the best mention rates around! It's about PROGRESS, not perfection. . In our pursuit of a more sustainable, mindful lifestyle and business, we might accidentally discourage ourselves when we pursue perfection in that it either hinders us from getting started at all, or we beat ourselves up when we falter (or fail to tell the waiter not to put that darn disposable straw in our drink, or forget our eco bag at home, etc. etc.). . The important thing, as with most things in life, is that we constantly try to do things better. Forgive yourself for slip-ups or personal indulgences you may have been used to before, and then pick yourself up, try again, and keep on keeping on! .
