Honey Gingerbread Men Cookies (w/o Molasses and Less Refined Sugar)

I can't believe I compared macaron recipe proportions manually (with. poor understanding of approx g per egg white in large eggs apparently, although I think we had home-laid eggs then so smaller on avg than store-bought, maybe my past self wasn't just wrong lol), when there was a blog post where someone did that, did experiments on proportions, and laid out their findings. Anyway, I need to try a diff recipe, I find the one I use is.. quite tooth-achingly sweet. I've got a couple diff ones I might try next time, I might start with cakemerchant's? then try indulgewithmimi's recipe. I like that cakemerchant laid out what each ingredient does and also vaguely what adjusting sugar ratios do. Also, their site isn't annoying AND no ads! amazing.

You guys! Can you believe Christmas is around the corner.. seriously when did the time fly by? We had a wee bit of snow yesterday, I think that’s what really shoved Christmas in my face .. Last week, one of my *favorite* pastry chefs turned TV personalities said that macaron shells should be HOLLOW 😐. A million times NO!
