[recipe down there] Hi everyone! Today is Imbolc day, and since I was supposed to go to a larp about Imbolc, I search for a cake I could make around this theme. I found out this lemon and poppy seed vegan cake, which I didn't knew about. I have never done vegan cake, I thought it might need some complicated ingredients, but not this one! So its a very quick and easy one to do and you can easily replace the lemon and poppy seeds with whatever you want! I chose to add cream cheese frosting door half of the cake, because I saw another recipe for this cake adding a frosting, so half of it wasn't vegan anymore but still super good! Here's the recipe : 260g of all-purpose flour 160g of sugar 2 tablespoons of poppy seeds 1 tablespoon grated lemon peel 1 teaspoon of baking powder 1/2 teaspoon of salt 200ml of water 50ml of oil 2 tablespoon lemon juice. Preheat the oven at 175*C Use the sieve and make sure the flour and baking powder have no clumps. Add all dry ingredients to the mixing bowl and stir. Add the remaining ingredients and mix until you have a smooth batter. Line the inside of the baking pan with baking paper and pour the batter in. Bake in the middle of the oven at 175*C for 35-40 minutes or until a toothpick inserted in the centre comes out clean. The cake is delicious, moist, soft, juste perfect! 🔷 Raspberry & almond bundt cake 🔷

Growing up in the Caribbean, I wouldn't understand why raspberry-flavored candies or icelollies were blue. I mean, those fruits are red right?! Even though raspberries are not easy to find there, I knew what they looked like... 😅

My young self learned a few years later that it was in fact to make it recognizable against other products flavored with cherry, strawberry or other red fruits... sure, most of you knew that already... but that makes for a quick introduction to my raspberry and almond cake 🍰

No eggs, no dairy but the right combination of almond, soy milk, aquafaba and ground flaxseeds to get an airy texture to this vegan cake 🌿

En grandissant dans la caraïbe, je ne comprenais pas pourquoi les bonbons et glaces à la framboise étaient bleus... Enfin, ces baies sont rouges, non ?! Même si les framboises ne sont pas si courantes là bas, je savais à quoi elles ressemblaient 😜

J'ai appris quelques années après que c'était en fait pour pouvoir les reconnaître d'autres parfums comme cerise, fraise et autres fruits rouges... Bien sûr, la majorité d'entre vous le savait déjà haha... mais ça me permet de mettre un peu de contexte à mon gâteau framboise-amandes 🍰

Fait sans œufs, sans produits laitiers mais avec une combinaison idéale de lait d'amandes, de soja, d'aquafaba et de graines de lin mixées pour donner une texture légère à ce gâteau 100% végétal 🌿
