Creamy Mushroom Pancakes

A hearty and delicious dish, these savoury Creamy Mushroom Pancakes can be devoured at breakfast, lunch or dinner! Happy Shrove Tuesday!
Ingredients (serves 1):
1 tablespoon unsalted butter
1 tablespoon olive oil
4 large cremini mushrooms
1 cup chanterelles
1 fluffy sprig fresh tarragon
2 fluffy sprigs Garden Parsley
1 garlic clove, minced
a pinch of fleur de sel or sea salt flakes and freshly cracked black pepper
1 1/2 tablespoon White Port
1/4 cup double cream
teaspoon demerara sugar
2 fluffy Spelt Pancakes, warmed
In a large, deep skillet, melt butter with olive oil over medium-high heat.
Thoroughly dust cremini mushrooms and chanterelles with a paper towel or clean brush; then, roughly chop them.
Once the butter is just foaming, add cremini mushrooms and chanterelles, and sauté, shaking the pan often, to coat in butter and oil, until the mushrooms start browning.
Remove tarragon leaves from their stalk, and chop them finely. Finely chop Parsley as well, and stir chopped herbs into the mushrooms. Cook, a few minutes more.
Add minced garlic, and cook, 1 minute.
Season, to taste, with fleur de sel and black pepper. Cook, another minute, then deglaze with White Port. Stir in double cream, and cook until sauce thickens. Stir in demerara sugar, until completely dissolved.
Generously spoon creamy mushroom sauce onto warm Spelt Pancakes.
Enjoy Creamy Mushroom Pancakes hot, with a glass of chilled dry white wine, like Sauvignon Blanc, or a Buck’s Fizz!

Greek Veggie Wrap
Chef's Note: I really enjoy the flavors, and it's so easy to make.

Ingredients
1/2 cucumber, finely diced
1 Roma tomato, finely diced
1/2 red onion, finely diced
1/2 cup fresh parsley, diced
10 kalamata olives, diced
2 tbsp lemon juice (~1 lemon)
1/2 tsp sea salt
four 8” (medium) whole wheat tortilla / naan / pita bread
tzatziki
(optional) crumbled feta
Instructions
1. Finely dice cucumber, tomato, red onion, parsley, and olives
2. Add veggies to a bowl. Season with lemon juice and salt. Mix to combine. Drain liquid
3. To your bread, spread the tzatziki sauce over the entire surface
4. Spoon about 1/4 of the diced vegetables on top of it. Top with some feta
This may be a little less than you like, but it’s to keep the wrap from being overfilled when you bite into it

I saw a poster in the lobby that talks about all the things that are local and all things fall and are built again. It is a billboard this big. Fresh parsley, cilantro, oregano. I went back to the grocery store, where I was asked by the manager what I thought, but they told me fresh, and at no cost. I know I'm being taken aback by the whole decision of the store and the grocery store, because after buying at Wal-Mart, I found myself with my local produce, which was a little sweetened with some lemon as a garnish.

Hot Pasta alla Vodka (Vegetarian)

This spicy, creamy and warming Hot Pasta alla Vodka makes a deliciously comforting lunch, especially when you've caught a bit of a chill! Happy Tuesday!
Ingredients (serves 2):
2 cups short pasta (like orecchiette)
2 tablespoons olive oil
1/2 large onion
1/3 red chili pepper
a generous bunch Garden Parsley 
3 large Whole Peeled Tomatoes+ 1/3 cup of their juice
1 tablespoon Hot Pepper Sauce 
a pinch of fleur de sel or sea salt flakes and freshly cracked black pepper, to taste
5 tablespoons good quality Vodka
½ tablespoon caster sugar
half a dozen large leaves Garden Basil
½ cup double cream
Parmesan Cheese
In a pot of salted boiling water, cook orecchiette according to package’s direction, usually 9 to 11 minutes until al dente.
While the pasta is cooking, heat olive oil in a large, deep, nonstick skillet over medium heat. 
Finely chop the onion and stir into the skillet. Cook, a couple of minutes until softened.
Thinly slice red chili pepper, and add to the skillet; cook, 1 minute more. 
Finely chop Parsley, and stir into the skillet as well.
Roughly chop Whole Peeled Tomatoes, and stir them into the skillet, along with their juice. Increase heat to medium-high, and simmer, 4 minutes, stirring often. Stir in Hot Pepper Sauce. Season with salt and black pepper, to taste. Then, stir in Vodka and caster sugar. 
Finely chop Basil, and stir half into the sauce. Simmer, a couple of minutes more, then add double cream.  Allow to reduce and thicken a little, 2 minutes.
Then, drain orecchiette, saving 1/3 cup of its starchy water. Stir both into the skillet, coating the pasta in sauce. Grate in about ¼ cup Parmesan. Give a gentle stir until the sauce beautifully coats the pasta.
Serve Hot Pasta alla Vodka, sprinkled with remaining fresh Basil, topped with freshly grated Parmesan, hot, with a glass of chilled dry white wine, like a light and citrus-y Chardonnay or Sauvignon Blanc.
