#Repost @fithealthyrecipes • • • • • • 🍔🥬GRILLED ZUCCHINI FRITTER & MUSHROOM BURGER W/ CASHEW AIOLI🍔🥬 By @biancazapatka 1 small broccoli optional 3 zucchini grated 1/2 can corn rinsed & drained 1/2 cup scallions (or onion) 60g, finely chopped 1 clove garlic minced approx. 2 tbsp chickpea flour or other flour* 2-3 tbsp nutritional yeast flakes optional salt and pepper to taste 2 tbsp oil for frying ⠀ 📍INSTRUCTION: 1. Boil the broccoli and cook for just 2-3 minutes (it should not be cooked through). Then drain. Rinse the broccoli and finely chop the florets. 2. Squeeze grated zucchini and add chopped broccoli, corn, scallions, garlic, chickpea flour, nutritional yeast flakes, salt, and pepper. Stir everything together until well combined. Set aside for 5 minutes to allow the flour to absorb any excess liquid. 3. Form 8-10 fritters of the veggie mixture (or to your desired size) 4. In a large skillet, heat the oil over medium heat. Fry the zucchini corn fritters for about 3-5 minutes on each side, or until golden-brown. Serve with your favorite dip. Raw Snicker Bars by @thefitstitch 🍫 👇🏻⠀ RECIPE⠀ - 1 Cup Dates (8-10 )⠀ - 2/3 Cup Almond Flour⠀ - 1 tsp Maca Powder⠀ - 1/4 tsp Salt⠀ - 1 tsp vanilla extract⠀ - 1/3 Cup Peanuts⠀ - 4 Onz. vegan Chocolate ⠀ - 2 Tbsp peanut butter⠀ ⠀ * Prepare Caramel: Soak dates for 10 min in hot water, drain and add dates, peanut butter, vanilla, maca, 1 tbsp of hot water & pinch of salt to a food processor and blend until smooth. Place aside.⠀ * Noughat Layer: Take 1/4 cup of the caramel sauce and add almond flour mix until a dough is formed. Place a baking papper on a tin and press down noughat layer creating a even flat layer. Place on freezer for 20 min.⠀ * Remove nougat from freezer place rest of the caramel and top with peanuts. Place back to frezeer for 1 hour.⠀ * Remove from freezer let chill for 5 min and slice in even bars. Melt chocolate and dip bars until you cover them completely, place on a plate on the fridge for 5 min for chocolate to harden. ⠀ Enjoy!! Happy Friday friends!! 🎉🎉 Who else is excited the weekend is here🙋 We started school and activities this week so was a weeee bit of a transition, so I’m welcoming some rest for the long weekend 🌞🙏🎉 . Picked up some tempeh this week at the store, so was pumped to try out some recipes with it. For some reason, I had been going through an unintentional no-tempeh time of my life 😂 . But here’s a fun and sweet (and a bit spicy) tempeh dish, served with a really easy fried rice. 🌿🍃🌿🍃 . 1 package tempeh, steamed for 10 min and cut into chunks Tempeh Marinade: 2 T and 2 tsp coconut aminos 4 tsp rice vinegar 4 tsp agave 2 tsp sesame oil 1.5 tsp chili garlic sauce 2 minced garlic cloves 1 tsp cornstarch mixed with 1.5 tsp water for slurry, set aside Veggies for tempeh: 1/2 onion diced, 1 8 oz. package mushrooms, 1 bell pepper sliced Rice: 1.5 T sesame oil 1/2 medium onion finely chopped 3 minced garlic cloves 2 1/4 cups cooked rice 2 T coconut aminos 2 1/3 cup cooked rice 1.5 T rice vinegar 1/4 tsp dried ginger 1 cup chopped steamed broccoli florets 1/2 cup cooked peas Cashews optional For tempeh, whisk marinade ingredients in large bowl. Add tempeh, toss, let sit for 30 min. In large pan, add bit of sesame oil, mushrooms and onion, cook 5 min. Add bell peppers and marinated tempeh (keep remaining liquid in bowl). Cook for 4 minutes, stirring occasionally. Add slurry to marinade in bowl, whisk. Push everything in pan to the side and add in the marinade, let cook (bubbly) for a minute, then toss it all. Ready to serve. For Rice, add oil to pan, along with onions and garlic. Cook 3 minutes, careful not to burn garlic. Add rice, cooking 3 min and stirring often.
