FOREWORD: Pheromones, or 'pheroes', are potions brewed into the perfume, which are used for different purposes. For example, the Cuddle Bunny pheromone is intended to attract and allure others in a romantic sense, preferably to cuddle or engage intimately. Most of the scents listed are pheroed, but some are not. Please be aware of the fact that the pheroed scents are notably stronger and more direct than the unpheroed scents.

VARIETY: Chiroso PROCESS: Fully washed AREA: El Vergel y Santa Barbara, Antioquia PRODUCER: Echavarria family (Santa Barbara Estates[Finca La Camelia, Finca Agua Linda]) ALTITUDE: 1800, 1850 m . Antioquia県Urraoエリア起源の品種 ”Chiroso種”、今回は二つの農園のものを集めたコーヒーです。この品種の樹は背が高く、葉やチェリーは細長い形状をしており、地域では生産性の良い品種であると認識されていました。最初に発見したのは、以前紹介した La Falda農園のJose氏です。Santa Barbara Estates のPedro Jr氏とLeo氏は Jose氏と密に協力し合う間柄であり、この品種の卓越したカッププロファイルから 早速、両氏の農園でも栽培をスタートさせました。今年 研究によりChiroso種の起源はCaturaやBourbonのようなTypica系ではなく、エチオピア在来種にあることがわかってきています。 La Camelia農園, Agua Linda農園ではそれぞれセレクトピッキングされ、収穫されたチェリーはケーブルカーを使って、Santa Barbara Estates 所有の”La Joyería Wet Mill”まで運ばれます。ここで特徴的なのは、2日間に渡って収穫したチェリーを1ロットとし処理していることです。1日目に収穫されたチェリーは、同日中にパルピングされ、醗酵槽で醗酵を開始します。2日目に持ちこまれたチェリーも同じく、同日中にパルピングされた後、既に24時間の醗酵工程をとった1日目のパーチメントのある醗酵槽へ注ぎ足されます。それから更に24時間の醗酵工程をとります。その結果、1日目の収穫分は48時間、2日目は24時間の醗酵工程をとることとなります。このプロセスでは、2日目に注ぎ足されるパーチメントが醗酵槽のpHレベルを上げてアルカリ性に近づけ、強度の酸性で好ましくない酢酸が生成されるのを防いだり、良くないバクテリアの活動を抑制しつつ、より長い時間醗酵工程をとることができています。 とても甘く、柔らかな質感のコーヒーで、ハイビスカスやデラウェアのような葡萄、紫蘇やハスカップといった他の品種には無い大変ユニークなキャラクターを持ちます。是非お試しください。 ー ー ◼︎ BRAZIL Taste of Harvest Rancho Grande Natural TASTE NOTE: Tropical fruits,, Hibiscus, Guava, Jackfruit, Sugar cane, Rose tea, Smooth, Syrupy .
