I have a few Head canons on some of the older characters of gravity falls.
I think that pacifica kind of became a bit of a hippie/spiritualist after moving out of her familes home. And vibes more with Mabel's engery. She did a lot of self work and got into meditation and yoga. She's also trying to self promote her singing career.
Mabel is party central and has mass parties with people over all the time, had to move out of the mystery shack due to Stan getting annoyed. Still a super creative, I feel like she's an artist working in large scale sculpture and festival design.
Dipper fell in love with a demon and that's super problematic for him and others, but he doesn't really care. With Bill funding him for everything, he doesn't work and travels a lot, solving mysteries.
Bill gets along well with all of Dippers friends - mostly cause he's charming and knows how to befriend each one of them, but Wendy never fully trusts him and Bill can tell.
Wendy gets into a good collage and is away from gravity falls often, but visits as much as possible. She studies law, but wants to be a politician so she can make the world better. In her spare time she teaches axe throwing classes.

More headcanons!
1. Dipper, still the ever-curious mystery hunter, starts creating his own coded language. Bill, intrigued, learns it in a snap to leave cryptic messages just for Dipper to find.
2. Bill finds amusement in temporarily giving Dipper odd, harmless abilities – like echoing voice or glow-in-the-dark hair – just to see his reaction.
3. They have this unofficial truce where Bill agrees not to wreak havoc on Gravity Falls before 9 AM because Dipper is not a morning person.
4. Dipper once asked Bill for help on a particularly tough puzzle, and now Bill won't let him live it down, bringing it up at every opportunity.
5. Bill secretly enjoys the fact that Dipper is one of the few humans who challenges him intellectually, even if he'd never admit it.

Isn't the point less "Ford is canonically gay" and more "Ford is whatever you see him as"? Because I've seen people headcanon him as many things (such as gay, ace, bi) and it seemed like Alex's answer was in support of all of those things, not only gay.
Yeah. At the end of the day, Alex has said in the past he will never confirm or deny any headcanon. So, Ford can or cannot be what you want him to be. Any GF character at that.
Headcanons have that beauty. And no one can tell you otherwise.
So, keep headcanoning as you wish. Alex Hirsch will always support it by not confirming or denying it, lol.

Sweet 16 Hookup AU
So it’s Dipper and Mabel’s sweet 16 and Mabel invites Candy and Grenda down to Piedmont to help her with a very important mission - turn the birthday party into a hookup party for Dipper. She convinced their parents to go out on a date for the night and the guest list consists of her, Dipper, Candy, Grenda, and every eligible gay guy they could find at school and in the neighborhood. Of course, Dipper is immediately sus.
Dipper: Mabel! Who are all these guys?! I thought you were over your boy crazy phase...
Grenda: (all too loudly) Does he seriously not notice that all these guys are gay...?
Dipper: Gay...? Mabel? Is this a hookup party...? For me...?
Mabel: Maaaaaaaybeeeee....?
Dipper sighs and wanders off. Not too long into the party though, he does meet a guy he rather likes, but being his socially awkward self, panics and holes himself up in the bathroom and starts writing up a 15-step plan to introduce himself. He’s about to get up the nerve to leave the bathroom when he hears the noise from balcony increase and a blonde climbs in through the window above the bathtub, smelling of weed.
Before Dipper can react, the blonde notices the list and snatches it out of Dipper’s hand, reading it.
Blonde: (laughs) You’re such a nerd! You don’t need a plan to meet a guy! All you need is a few smooth moves.
Dipper: L-like what...?
The blonde leans in and kisses Dipper, the taste of weed makes Dipper gag, but he doesn’t not like it... They get lost for several minutes just talking when they get startled by someone knocking on the door demanding to be let in. They laugh and leave together, and upon reaching the living room, they run into Mabel, who’s confused because she doesn’t recognize the blonde as one of the guests she invited. But she soon shrugs it off, at least her brother finally found a boyfriend!
Jump ahead two years to Dipper and Mabel’s 18th birthday, Dipper and the blonde, named Wills, have been dating steadily and Dipper decided to invite Wills with him and Mabel to Oregon to meet the Stans, who had finally gotten back in from their latest trip. However something weird starts happening once they enter Gravity Falls, Wills starts having severe headaches and feels like he’s hearing things.
Wills takes a walk through the woods to clear his head when he happens upon a small clearing with something in the middle that looks like it’s made of stone, but it’s overgrown with brush and vines. He clears it off, but then begins to panic as he backs away from it. Before him sits an object he’s seen in his dreams his entire life - the statue of Bill Cipher.
He steps forward hesitantly and reaches out, compelled to reach out to shake the statue’s hand. Minutes later, Dipper enters the clearing behind him, who looks over to find Wills hunched over in front of the statue. He rushes over to help, but backs away when Wills turns to him, his eyes now have an ethereal yellow glow as he looks at the brunette with a cruel grin.

Whenever I read billdip fics I imagine Bill's voice like English dubbed voice of Yami Yugi/Aten from Yugioh. I don't know why. I just imagine a more dramatic voice for him.

Have some soft headcanons, then!
The first time Bill and Dipper took a bath together wasn't.... really a bath, per se. They'd probably run afoul of some supernatural skunk thing and had to soak in tomato juice, bickering about whose fault it was. The times they actually bathed together usually ended in water fights. Dipper half-drowned a couple times; Bill plays rough.
They've since settled down a bit! These days, the times they sink into one of Bill's hedonistic baths in his pyramid are pretty relaxing times to chat and flirt with each other.
And if Dipper's very sick or injured, Bill might even pick him up and set him in a warm bath, while taking charge of all the scrubbing down and rinsing of the pitiful mortal. While grumbling a little, but still!
Bill can cook. The trouble is getting him to stop adding ingredients that 'make things interesting', or go more along demonic culinary tastes - But he could, theoretically, make a decent meal. This is an uphill battle, since Bill's convinced following human recipes is boring and dumb. Dipper may even win it one day.
A fun fact that Dipper may or may not have learned by now is that Bill can purr! For the same reasons a cat might - calm, content, and relaxed.
However, Bill also hasn't done it in forever. For that kind of thing to happen, he'd have to be really content - to the point where let his guard down completely. Which I don't imagine he's done in basically.... eons? For all that he's had happy Party Times and pleased Winning Times and even Chill times, it's pretty impossible to ever really stop watching your back in the demon realm.
But say. After a great day. One where Bill's just won something, he's done something clever to pat himself on the back about, and he gets to chill with his husband in bed while Dipper rubs his back - just a calm, domestic-ish hangout where they're chilling - Dipper might feel and hear that rumbling start up. To his great surprise.
(And Bill's. He genuinely can't remember the last time that old instinct kicked in; it's unsettling.)

I'm different than the Bill you know. I used ta be him, then got trapped in Stan's mind and HIT WITH A MEMORY GUN. Rude. Because of that the ol' memory's not what it used ta be. I got cut off from some of my powers, and returned to the Nightmare Realm.
However around the time of your world's Cipher Hunt, I bonded with my host. So now I don't have to go back to the pitiful decaying dimension ever again.

Bill of course.
Favorite thing about him: Bill's obviously a weird guy, and I love how weird he can get. It's a pretty fun contrast to his design with the bow tie and top hat, stuff you'd usually associate with elegance and refinement. Turns out the most "refined" thing about him is his piano skills.
Least favorite thing about him: It's less something I dislike about him, and more the direction the creators chose to take his character. We never really learn about his past, other than the fact he burned his own dimension to the ground and "He says he's happy. He's a liar." I would've really liked to see that side of his character instead of leaving it a mystery, as on brand as that is.
Favorite quote: "Existence is upside-down and I reign supreme!"

Random headcanon: Bill was in an experimental folk band back in the day comprised of Sheppard's tone and endless screams of agony. It did pretty alright for itself, but in-band drama broke them up.
Unpopular opinion: Bill is irredeemable. Coming from a Billdip shipper, I feel that's pretty unpopular. I love him as an evil, chaotic demon who gets pleasure out of making other people suffer. Idgaf if his parents didn't love him enough, he belongs in hell.

quick headcanon;
Stan taught Dipper boxing and wrestling to toughen him up and make him more self dependable, just like how his father did when Stan was young.
Completely unrelated to his wrestling experience, Dipper and Bill "play" fight all of the time. back when Bill first reappeared the fighting was less "play" and more "genuine attempt to harm". During one of their spats Dipper had to put Bill into a triangle choke to subdue his swinging and attempts to bite
to say Bill had hearts in his eyes wouldve been an understatement. Bill's favorite activity is being triangle choked, he begs Dipper to do it to him when theyre chilling on the couch or in bed. He intentionally tries to piss Dipper off so that Dipper takes him down and chokes the life out of him.
Bill even asked Dipper to show him how to do it so he can lay ruin to any of his enemies, but still prefers it being done to him
At first stan would stand around with popcorn to watch and comment on Dippers form, but after he caught Bill breathless with a dopey smile sandwiched between Dippers twinkish thighs...? everyone learned to give them some privacy.
