The weather, the water, the ingredients everything makes it almost impossible to get the right consistency. . . However to my surprise, it is believed almost 4,000 years ago Mishti Doi was brought to Bulgaria by the nomadic tribes in bags that were made from animal skin. If this is true, it is surprising that it cannot be perfected outside Bengal. . . Today's recipe is a very special dessert of our Bengali cuisine. For those who dont know, Gobindobhog is a short grain, white and aromatic rice. It is sticky in texture which turns out really well when added in Payesh. It makes the pudding creamier. Patali Gur is a form of Jaggery prepared from Date Palm. It can be rightly called a delicacy which is found only during winter months. Together, they create a heavenly combination!! Steamed Chocolate Sandesh | Bengali Sweets | Kolkata Sweets 
Ingredients :-
1. Chenna (Curd Cheese) from 1 litre milk
2. Sugar Powder - 1tbsp
3. Milk - 1 tbsp
4. Chocolate Syrup - 3 tbsp
5. Roasted Cashews - 10 Nos.
6. Cardamom powder - 1/2 tsp
7. Grated Chocolate

Process:-
Firstly make chenna or curd milk out of 1 litre milk then put the chenna in mixer and blend it for a minute to make it little smooth. After that add 3 table spoon of chocolate syrup and 1 table spoon of milk in the mixture and blend it till the mixture gets smooth. Note that after blending the consistency of the mixture should be thick and smooth. After this we will be adding 1 table spoon of sugar powder and 1/2 tea spoon of cardamom powder and will mix it well. Thereafter we will take the mixture out of blending jar and will put it in an aluminium or a glass container and will spread it evenly.
Then we will take a pan and will put a stainless steel pan stand into it and will pour water into the pan, lighting the burner, for steaming purpose, in. Once the steam starts coming, we will put the container full of mixture on the pan stand ,covering the pan with a lid and will allow it to get steamed for 30 minutes in a low medium flame. By this time we will dry roast few cashews and will roughly chop them, which will be required during garnishing.
After 30 minutes turn off the flame and allow it to get cooled into room temperature. Once it comes in room temperature refrigerate it for another 30 minutes.
After 30 minutes take the container out of the refrigerator and your steamed chocolate sandesh is ready. Now take it out of the container and cut it into desired shapes and sizes. Garnish it with chopped roasted cashews, powdered sugar and grated chocolates and serve.

If I try to translate Chenar Payesh to English it will be Cottage Cheese Pudding. But that's not exactly correct, as Chena or Paneer is a specific form of Cottage Cheese. It is an acid-set form of cottage cheese. Never the less, the Chenar Payesh is a very popular traditional dessert among Bengalees. It is very delicious and the recipe I will share today is extremely easy. This is one of the few Indian desserts that can be part of a fancy meal but can be cooked in less than half-hour. This is a milk-based pudding, made with a handful of ingredients. I often play around with it and make different variations. The traditional Indian Pudding takes a long time to prepare, it is baked for hours till the milk condenses to desired consistency. My Mother-in-law is one of the finest cooks I have ever met. I have seen her preparing Payesh/Kheer (Pudding) for hours on special occasions like Birthdays and Anniversaries every year. Even though we would enjoy the Payesh to our hearth's content knowing the fact the amount of effort she has put into it, I often wondered if I could keep up with that tradition. But as they say, necessity is the mother of invention ;) I have found my ways to improvise the process without compromising the taste at all :)

Indian Pudding is ready to be served! The starting point of this recipe is Chena or cheese curd. You can make it following the Cheese Curd recipe or you can use store-bought Paneer from any local grocery stores or even on amazon. I have tried both versions and they both taste good. In the original recipe, the flavor is from green cardamom seeds. But you can use Saffron, rose water, green cardamon, or any flavor of your preference. You can also add nuts (like Pistacio, sliced almonds, etc) to add some crunch. I have tried this recipe in a slow cooker as well as in an Instant Pot. Both have pros and cons.
