Decadent Chocolate Lava Cakes for Valentine's Day
Ingredients:
1/2 cup (1 stick) unsalted butter
4 ounces semi-sweet chocolate, chopped
2 large eggs
2 large egg yolks
1/4 cup granulated sugar
2 teaspoons vanilla extract
1/4 cup all-purpose flour
Pinch of salt
Optional: powdered sugar, vanilla ice cream, or fresh berries for serving
Instructions:
Preheat the Oven: Preheat your oven to 425°F (220°C). Grease four ramekins with butter or cooking spray, and dust them with cocoa powder for extra flavor.
Melt the Chocolate and Butter: In a microwave-safe bowl or using a double boiler, melt the butter and chopped chocolate together until smooth and well combined. Stir occasionally to prevent burning. Set aside to cool slightly.
Prepare the Batter: In a separate bowl, whisk together the eggs, egg yolks, granulated sugar, and vanilla extract until light and frothy. Slowly pour in the melted chocolate mixture while whisking continuously until fully incorporated.
Add the Dry Ingredients: Sift in the all-purpose flour and a pinch of salt into the chocolate mixture. Gently fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix.
Fill the Ramekins: Divide the batter evenly among the prepared ramekins, filling them about 3/4 of the way full.
Bake: Place the filled ramekins on a baking sheet and transfer them to the preheated oven. Bake for 12-14 minutes, or until the edges are set but the centers still jiggle slightly.
Serve: Carefully remove the ramekins from the oven using oven mitts or kitchen towels. Let them cool for a minute before running a knife around the edges to loosen the cakes. Invert each cake onto a plate and gently lift off the ramekin. The center of each cake should be soft and gooey.
Garnish and Enjoy: Dust the warm lava cakes with powdered sugar and serve immediately with a scoop of vanilla ice cream or fresh berries on the side. Watch as the molten chocolate lava flows out with each decadent bite.

Weekends are for #baking #bananabread right? 🧡 Here’s #myrecipe If you’re interested, it’s really simple and I often change the addition of nuts, sometimes it’s walnuts, sometimes hazelnuts and as pictured here almonds too👋🏼 2 cups organic unbleached self-raising flour @kiallapurefoods (or spelt flour but use 1 tablespoon of baking soda for this option) 1/2 cup coco sugar 1/2 grape seed oil 1/2 cup organic almond milk @goodbetterbruce 3 ripe organic bananas 1 tablespoon ground organic cinnamon 1/2 chopped almonds Basically mix dry ingredients in a bowl and add all wet ingredients including banana into a high speed blender and blitz - I use my @vitamix - pour wet mixture into dry and mix together, adding the chopped nuts at the end and folding through evenly. Bake in pre-heated oven on 180 degrees for 55 min - Enjoy!
