The people deserve to know their future roi considers them in all his deliberations, to know he will think of them and their well-being as well as his own. Eleanor already understands that. Why else would she ask you to endure this arrangement?

La Reine Arabella: First, may I remind she does in fact have a name. Second, I would appreciate if you did not take your frustrations out on her when she has done nothing wrong. 
Le Roi Gaspard: She’s a distraction-
La Reine Arabella: Eleanor deserves far more credit than you currently afford her. 
Le Roi Gaspard: [Scoffs] I find that incredibly unlikely. 
La Reine Arabella: Then you are a fool. Instead of accusing her of distracting him, you should be thanking her.

La Reine Arabella: Oliver has been utterly beside himself since she sent word rejecting him...[sighs] but I suppose until we can uncover what is happening I will have to arrange for another to accompany him....Perhaps...Mademoiselle Aubert?

At what age did young ladies start and finish finishing school? And what did they learn?

I'm so glad you asked this question, as I've actually created an entire system and history of this particular finishing school in Thornolia!

Château Épitoise was founded in 1835 by the Madame la Reine, Arabella de Thornolie, for mademoiselles of noble birth to allow them the rights to education.
Thornolia's noble familes send their daughters (upon reaching the age of eight) to the Château Épitoise, where they study and live until they reach the age of eighteen. This is to ensure a thorough education, though mademosielles are allowed to return home for the Christmas and Easter holidays. Families also visit every Wednesday and Saturday between the hours of twelve and two to spend time with their daughters.
The mademoiselles are divided into three age groups for learning: 8-11, 12-15, and 16-18. Each age group is designated a coloured uniform dress to distinguish them between their three groups (8-11: Gray, 12-15: Yellow/White, 16-18: Green/White), and placed into rooms with one another. Each dormitory consists of four beds, and is also sparcely decorated in the colours of each particular group.

Classes for these mademoiselles cover a variety of subjects, including literature, language (with a primary focus on French and English), religion, history, geography, arithmetic, dancing, music, art, and etiquette. These classes are mainly taught by married, educated, eldery men, with class ladies overseeing the mademoiselles progress and keeping them obedient through lessons when needed.

The daily timetable at Château Épitoise is rooted in strict routine: 
06:00: Wake Up/ Get Dressed 06:30: Morning Prayers/Breakfast 07:30-11:30: Lessons 11:30: Free-time 12:00: Lunch 13:00-17:00: Lessons 17:00: Dinner 18:00: Dance Lessons 19:00-21:00: Free-time/Bath (depending on wash schedule, each mademoiselle had a bath every few days) 21:00: Evening Prayers 21:30: Sleep

The Famille Royale also visit on occassion, particulary surrounding the days of national celebration in Thornolia. On such occassions, dinners and balls are hosted by Château Épitoise, not only to honour the Monsieur le Roi, but to allow the mademoiselles to continue their learning of etiquette and dancing, which sometimes include the opportunity to dance with either the Monsieur le Roi or the Monseigneur L'Épin. It is said these events are a favourite of the Madame la Reine, who has said the Monsieur le Roi too enjoys the light-heartedness of these events. 
Final exams are taken by those who have turned eighteen, with the Famille Royale present. Final exams include a ball and a concert put on by the Famille Royale, and mademoiselles at the top of their class receive a cipher from the Madame la Reine (who as well awards it to them).
There is so much more I could say, but I am intending to have some flashback scenes in future of our favourite Thornolians attending school! But I do hope you enjoyed this little tidbit of information!

Le Roi Gaspard: Do not forget you and I will leave for the palais first thing tomorrow. I trust you will remember your obligations, Oliver. These next few days are vital, and whether you like it or not you will be the focus of everyone’s attention.
Monseigneur Oliver: Oui, mon père. I am aware. 
Le Roi Gaspard: I also expect to see you to making an effort during the bal blanc. One cannot be certain of a decision as important as this without first seeing all that is on offer. And there will be much on offer, I can assure you.

Monseigneur Oliver: [Sighs] I will do as you ask, but you should know it is highly unlikely my mind will be swayed. Eleanor is-
Le Roi Gaspard: Stop acting naive. I find it beyond impossible for you to be so certain, to be persauded so easily by the first mademoiselle to cross your path. If you do not make all the necessary efforts-
Monseigneur Oliver: You’ll what?

La Reine Arabella: My, my. What is all this fuss about? I could hear you both arguing from down the hall. 
Monseigneur Oliver: It’s nothing, Maman. [Leaves]
La Reine Arabella: Where you going? Oliver?

La Reine Arabella: Gaspard? 
Le Roi Gaspard: That son of yours is far too impulsive. How can he be so certain? He’s barely even looked!
La Reine Arabella: Ah...
Le Roi Gaspard: He gets that from your side of the family. 
La Reine Arabella: Oh, no. That stubborn impulsiveness he inherited from you. And while he may be impulsive, he does see reason. He will do as we ask, and he will make the right decision when the time comes.

La Reine Arabella: You’ve been such a dear helping me look over all the final details, Charlotte. I’m not sure I could have done any of this without you. There was certainly far more to putting this together than I originally prepared for.
Duchesse de Clèrisseau: Honestly, the pleasure is all mine. The opportunity to see a proper saison once more…it does brighten one’s mood, does it not?
La Reine Arabella: I hope it will be received well. From my understanding it already has most of Thornwood in a state of excitement.
Duchesse de Clèrisseau: The papers certainly seems to believe so...though I have to ask, how is Oliver? With the Chronicle announcing him as the primary focus...

La Reine Arabella: Oh, you know how he can be. When Gaspard and I sat him down and informed him it was time for him to marry he seemed…unphased. 
Duchesse de Clèrisseau: I’m sure it comes as no surprise to you or I the reason behind that. 
La Reine Arabella: [Laughs] Oh, oui. Those two have been quite devoted to one another since they were children. I only wonder if there may be another who has the ability to sway his resolve...though he’s always been so determined, so set in his decisions…oui...I think Oliver will be fine. It’s Adelaide I worry for. 
Duchesse de Clèrisseau: Oh? I assumed Adelaide would be thrilled about the prospect of la saison. 
La Reine Arabella: She was.
Duchesse de Clèrisseau: Was? 
La Reine Arabella: Gaspard informed her she must wait to be presented next year. Honestly, Charlotte, she took the news harder than either of us anticipated. Spent the next few days locked in her room...I’ve never seen her so upset.

Duchesse de Clèrisseau: I can only imagine what it’s like for the pair of them,  having the crown dictate so much of their lives. She must feel so resentful of Oliver.
La Reine Arabella: I do not believe her to be bitter toward Oliver, but she has been acting rather strange…
Duchesse de Clèrisseau: I wouldn’t fret. I’m sure it’s nothing more than a little disappointment. Adelaide will be fine with time.
La Reine Arabella: I’m sure you’re right....speaking of, I do wonder where they all have run off to. They’ve missed tea. 
Duchesse de Clèrisseau: [Laughs] I would have assumed where they are as fairly obvious, wouldn’t you?
