These were made using this recipe.
The results are a rich, intensely chocolate-y, not overly-sweet brownie that's not to be lightly gobbled down. This one isn't merely "fudgy": it's halfway to fudge. (ETA for those interested: the chocolate used in this was Green & Black’s 85% Cacao Bar: the cocoa was Valrhona (because, as they say, “I’d sooner be in Valrhona than Valhalla”). 😏
Conversion to metric:
140g butter
100g cocoa
300g soft brown sugar
120g flour
4g salt
5 ml vanilla extract
90g chopped chocolate
and 3 eggs each massing 60g or better (For clarity's sake: I weighed these in the shell. There's likely to be a significant difference in egg sizes between North America and Europe, and "large / medium / whatever" is way too vague.)
...Give these a shot. They’re worth it.

Fun fact. I like chocolate chip cookie dough, but I don’t like there being chocolate chips in there.
This weekend is my moms second annual Christmas cookie exchange and last year I made apple cider cookies. This year I wanted to make chocolate chip LESS cookies and Brian Bakery on Tik tok made it look easy.

I made those brown butter brownies from Broma Bakery.
They are absolutely fucking divine. Super fudgy, silky batter, and guaranteed to put you in a food coma. Mine aren't very pretty because I didn't tuck the parchment paper neatly into the edges of the pan, but who cares when they're this good.
Takes a bit longer than normal brownies to make because you have to stand there and watch the butter so it doesn't burn. Like, take it off the heat the second it starts browning. And you will know when it does. Other thing was that they took about 35 or so minutes in my oven, rather than the 25 stated in the recipe, so just check 'em with a toothpick and watch the time as needed.
They don't need frosting. They are perfect as is.

made the broma bakery blondie recipe without chocolate chips (i have chocolate cookies as well) and i’m pleased i did so i could better taste the blondie itself. i do also sometimes think the chocolate inclusion makes them a little too sweet. this one has a very nice burnt sugar flavor. weird color and i’m still a little put off by the underbaked center (sally’s recipe is intense for this) but i get it and these might be my go-to now
