One of the oldest beef noodle soups, which was created by the Hui people of northwest China during the Tang dynasty. the recipe is named after Lanzhou city, which was a stop on the ancient Silk Road. The Hui Muslim population developed a variation of beef noodle soup noodle that is compatible with their Muslim diet.
The Japanese word "ramen" is a borrowing of the Chinese word “lamian” (拉麵).
